How do you guys bleed/kill your porgies. I always have trouble ethically un-Aliving them.

Quick scissor cut to both sides of the gills. Generally takes a minute or two to get most of the blood out, then straight on ice. You could take it to another level with the Ike Jime method and brain spike them and kill them immediately, but that will take some practice. I've forgotten to bleed a porgy or two and the meat is still tasty!

What is the bait for porgy? What is the size of hook?

Just buy a porgy rig and a two ounce sinker, then let it rest on the bottom or a little above. I find clam works best
