the food presentation looks so aesthetic. all of the small Japanese restaurants prepare their food with care, but the overall presentation of the final combination and plates is really nice. especially the sushi platters look very lovely.
You can see the care and respect for the work, people, and food. Consider that it’s not easy to perform at this level day after day; yet, they do it. 👍🏾

Love how rhis kitchen staff are so efficient. Why bevause preparation us the key and you can do freshly cooked foods in no time at all ... Fantastic work flow ..creadit to the workers .👏🏻👏🏻😃🇦🇺

I love this. Hardly a word spoken, but the sights and sounds took me back to my days as a Chef. The cooks are pros, and just by watching their technique, even after decades cooking, I learned from them, understanding why they were doing the things they did. Even without giving measurements, I could identify the ingredients. I was really impressed with their method of making Dashi, using real katsuobushi, wrapping it in cloth making it easier to make a clear dashi which can be saved for the next batch. I'm going to use that at home! Their fish cutting technique is something that I had always struggled with, and they made it look so easy! Their fryer setup, I envy, I could have used something like that for superior results. I hope to someday visit this restaurant, now that I'm long retired, confident in knowledge that this is a quality restaurant with quality cooks. I've also discovered a source for Binchotan here in the US, can't wait to try it out!
