I am surprised to find a recipe similar to what my grand aunts have taught my mother when she got married into a Cantonese family. 100 percent similar especially the way the ginger n vinegar was prepared a day ahead n eggs added in to soak in the vinegar soup. This makes the eggs have a nice hardened effect which Cantonese call it 'aged eggs' or 'old eggs'. Never expected this recipe to appear. Thank you for a revival of real traditional cuisine.

Halli Top Chef. Reciou bagus tetapi bahan yg kamu miss out.. Cuja masam 350 ml, Cuja manis 350 ml, ginger 200 gn, 100 gm goreng dengan Sesame Oil,, yg balance 100 bubuh dalam kuah Pork.. Gula batu campur gula melaka 40 gm, Air Filter 500 ml.. Telur ayam rebus cucujk dengan jarum harus satu round, baru turun ke kuah Pork Nuckles.. Ok. Gd job. !
Sata ingat kuah kamu ada bubuh kicap hitam, jika tidak mengapah telur ayam kamu jadi colour hitan.. Sebenar reciou ini, kicap hitam 2 sudu dan kicap air 2 sudu.. Ok.

Pork Nuckles kamu kena marinate dengan tepong ubi kayu dan garam 3.sudu ,cuci bersih 3.kali di air pancur, baru mula memasak..!
