Potato curry soup
Well, you asked for it. Another curry dish, but this time more like a soup, or is it a complete meal?
If you need something that is thick and a meal that can fill you up in a hurry, this recipe is just the thing. Make sure to make some extra, for it will disappear fast.

Ingredients
2 cups - Potatoes, peeled and diced
2 cups - Sweet potatoes, peeled and diced
1/ 1/2 - Broccoli, cut into bite-size pieces
2 tbsp. - Tomato paste
2 tbsp. - Olive oil
1 sm. - Onion, chopped
3 cloves - Garlic, chopped
1 tbsp. - Fresh ginger, chopped
3 stalks - Celery, sliced
1 tsp. - Rosemary, dried
1 sm. - Hot red pepper
1 can - Chopped skinless tomatoes
1 can - Coconut milk
2 tbsp. - Lime juice
1/4 cup - Fresh parsley, chopped
Curry spices
1 tsp. - Coriander, grounded
1 tsp. - Cumin, grounded
1 tsp. - Turmeric, grounded
1/2 tsp. - Cinnamon, grounded
1/2 tsp. - Pepper, grounded
Salt to taste
