Potato dumplings are one of the recipes that must be eaten once in a lifetime.
It is a typical Italian recipe that grandmas cook for Sunday lunch and that makes everybody happy.
Gnocchi or dumplings can be accompanied by different types of sauce: cream and Gorgonzola, "ragù" which is minced meat with tomato sauce, or, as in this case, tomato sauce and Mozzarella cheese.
To make sure your dumplings are soft and not hard, mix the smashed potatoes with the flour while they are still hot and don't take too long to do it.

Doses for 4 people
For the dumplings:
- 1 kg of potatoes
- 1 egg
- 300 g of flour
- salt to taste
For the sauce:
- 750 ml of tomato sauce
- olive oil
- Mozzarella cheese (at least 400 g)
- Parmigiano cheese (to taste)
- 1 or 2 garlic cloves
