I think this is the first pro cooking video I've seen where the cook cut all the ingredients himself on the spot instead of having them chopped in bowls beforehand. Also appreciated the culinary explanations of why ingredients are being used.

At 23 " Not many people know that eggs and potatoes work incredibly well.'? I think a few million Brits who love eggs and chips and a few million Spaniards who love Spanish omelette might be surprised to hear this. Nice recipe. Thank you!

This dish is delicious, my family and I have had one of the best meals ever, I made this dish and his Dal Makhani with naan and basmati rice. He deserves his Star and much more!

having turned into a vegetarian [ eggs excused! ]after Coronavirus attacked the world ( judgment times are here), I really enjoyed yr presentation. We always had egg and potaroes in west African curries vegie or prawn or chicken or beef... but we had side dish toppings as well, diced banana fried and fresh, crushed groundnuts, chopped tomatoes, grated coconut roasted and fresh, chopped orange and grapefruit, anythimg you fancied etc etc.... and then a big dollop of mango chutney all on a bed of plain rice.. mostly curry with cumin ... absolute heaven !!!

And I used to mash together potato, yolk and egg whites and make a paste and eat it, it was yummy! My mom stopped making egg curry, as in her eyes I was making a mess - LOL.

Chef, I think it is much better in include the yolk inside the egg. Please put 4 slight incisions on the egg and blanch it mildly. That way, the curry will taste a lot better.

New Receipe : For dry potatoe only receipe. Summary:Fry potatoes with spices (onions optional) Prep: 1. Soft boil potatoes before use in cooking Cooking: 1. Pan +oil +cumin seeds +onions + fry (low heat till onions soft) 2. Add potatoes +mix well (cover potatoes with oil so spices will stick) 3. Add spices +mix well (cover potatoes) 1part (1/2tsp red chilli powder) + 2part(tumeric) +4part(coriander powder) + 1part(garam masala powder) 4. Season : salt (to taste) 5. Cover with lid, till potatoes soft fried and curried well. Eat with roti or rice or as side dish !! Thank Atul for idea.

Other than the internet, where can I find GARAM MASALA? I'm thinking, it could be within five miles from here. Is there a substitute for this great spice? What other spice would be a variant, in taste - even remotely🤞 These spices are great for the immune system! Mine needs the boost, without doubt! This went really well - delicious. But we added chicken instead of egg. Only change next time would be new potatoes, not the starchy ones at the end of season - I'm in UK in February - Old potatoes. Yogurt on the side also as quite hot. Lovely.! Thank You for a new curry recipe.

It's a very common ingredient of a well-known Surinam curry called roti (usually made with lamb or chicken).

Thanks for the video! Almost anybody who has loved egg curry made, and eaten at home will enjoy this recipie just as much. With of course potatoes _ any way, and garlic for some would also be appreciated. For dear friends who don't eat egg, garlic will be appreciated. For those who don't eat egg (or have run out of them), or garlic or onions, fresh dried mango powder added after tempering with oil would go nicely with this. Chopped dry coconut kernels are also a good idea.

So what? He added the spice powders (untoasted) on to the top of a layer of Onion & Potatoes, so that until he cuts and add his tomatoes the powders will not touch the hot surface of pan, rather stay on vegetables and get slow cooked by steam and conduction. Later he add tomatoes which cools down the pan and vegetables and make it ideal for the spice powders to get roasted in the oil which is bit cooled down. This way he doesn't burn the spice powders. Another method is making a paste of spice powder by adding water and add to the veggies being cooked. The water content in spice paste cools down the pan and make it ideal for slow roasting of spice powders.

Thanks Chef. Ingredients a little confusing as they came up here and there during the cooking process. Maybe a list of all additions with optional listed as such. You mentioned asafoetida and it never went into the curry. Just saying. Take care.

@@anitaendinand I doubt it, fresh always tastes better than dried, to my mind. You're not the first person I hear say that coriander tastes like soap to them. It really must be a question of individual taste buds, because it surely doesn't taste anything like soap to me - not that I would normally eat soap, you understand... :-)

Grew up on this dish - with the whole eggs cooked in. Difficult to watch as the metallic spoons scratching the pan & the pan scraping on the hob was an annoying distraction.

Not to that extent- u can use quieter materials- but he claims that he does not want to use wooden spoons etc - shame cos he has good recipes - but if u enjoy irritating sounds like nails on black boards & metal utensils screeching like a demented banshee during an electric storm - so be it...

Rice traditionally or some kind of Pita bread..flat bread. Its meant to be a thick sauce and you use the bread as a scooper. You can use pizza crust or cauliflower as a substitute. I've had this traditionally and with potatoes it is AMAZING.

A bit of waste created, considering the quantity of food cooked. Use a silicone spatula to scrape off from the bowls; chopped ginger left on the knife; egg yolks? Glad you didn't use a whisk, I'd've tensed up on that too... run a restaurant, do you!?

Why the hell does the camera keep moving so much, a lot of zoom in and out and different angles. Just focus on how he cuts everything and adds whatever in the pans. Keep the camera in one place. Silly cameraman!
