A vegetarian twist on the traditional Kibbeh Nayyeh.
Kibbeh Nayyeh (see recipe here • Kibbeh Nayyeh ) is a meat dish eaten raw. It is really delicious but some people don't like the idea of eating meat or don't eat meat at all. This here is an alternative. The texture is different with the use of potato instead of meat, however the same delicious flavours of kibbe nayyeh are there.
Here's how to make it:
4 tbsp burghul (washed & soaked)
500g potato, boiled until soft
1 tbsp milk
1 tbsp butter, melted
1 1/2 tsp salt
1 tablespoon kamouneh spices
1 small birdseye chilli
1 small white onion
1 red capsicum
2 sprigs mint leaves
2 sprigs basil leaves
1 tbsp walnuts
Method:
In a large bowl, place your boiled potatoes. Add milk and melted butter. Mash potatoes until soft.
In a food processor, add onion, capsicum, chilli, mint & basil. Process until ingredients are cut up finely but not a paste. You can also chop finely by hand.
Add these ingredients mixture to the mashed potato with the burghul and all spices. Mix all ingredients until well combined.
Shape and serve immediately with olive oil.
