I just made this, I had no herbs only pepper, added a chunk of carrot and a dash of lemon juice and spring onions in the end and oh boy it is soooo delicious!!! Never knew a soup could be so easy to make and so satisfying! Thank you so much for this recipe!

I added margarine green onion and half and half I used green onion instead of onion and I used tarragon and rosemary. I added parsley like he did at the end. SO GOOD

I just made that potato soup and it was so easy! And when I say DELICIOUS! Only thing I did different was to use leeks instead of onion and I added carrots. It was so thick and creamy I poured it over toasted GF English muffins! Oh the YUM!

Just made it. I never had soups as part of the food I cook, which is mostly indian. I would have them as starters only at restaurants. But as I moved to The UK, it became really hard for me to cook indian daily (vegan that too). The idea of soup and bread is similar to consuming sabji (replaced by soup) and roti (replaced by variety of beards). And it's healthier and tbh, mostly tastier. Thanks you so much

I am not vegan. So, I added a small tub of creamed cheese. Other than than the cream cheese I did it like this and my wife and I both love it. About to make it again. I just use a potato masher to get the texture I want. I add the last bit of water After mashing up the potatoes. As soon as it starts to boil again, add the room temp creamed cheese, then turn off the heat and stir until the cheese is completely mixed in.

You can still add rice milk and vegan butter though, and some vegan cheese to top it off soooo good!!! thank you for this recipe. This is my go too for the next two months of winter :) maybe I'll some vegan sour cream if I can find a good brand

amiracle well the oil only seems to be there to saute the ingredients a bit. I've always sauted my veggies in water, you could do the same here instead of the oil. You'd just have to watch it for those first 5 minutes and then go onto the rest of the recipe. Unsweetened almond or soy milk works too, in general really.

Love this recipe and the idea of keeping it simple. I know in one incarnation it's Vichissoise (sp prob) but what my mum used to do was use leeks instead of onions, leave it slightly chunky, great soup for cold weather; humble ingredients, brilliant result. Really appreciate your videos.

Does this freeze? I know that when I put things in the freezer with chunks of potatoes the potatoes go weird. But I would think a smooth potato soup would freeze just fine! I would like to double the recipe and freeze half for meals on days my caregiver isn't here. I tend to bank meals whenever we cook.
