Almost every day I make something similar for breakfast, at around 10:00 you mentioned it. At the end I add just a touch of mild wing sauce and mix it in, not a lot just enough to notice a difference in the potato colour. I usually top it with cheddar cheese

i bet if you changed up the ratio of meat to veggies you could make a very tasty lower calorie version too. heavy on some big slices and chunks of peppers and onions, with just a bit of the meat for flavouring and a dusting of cheese. potatoes are almost always diet friendly tho . looks good homie. very inspiring
