One thing I’ve learnt while doing a mobile coffee service to offices and factories is the importance of lid placement. All “to go” paper cups have a join up the side. To place a lid with the sipper side over or near that join has a likely result of leaking around that uneven join. This results in coffee dripping down the front of the customer’s chest / shirt etc. Always place the sipper side opposite to the join. I love your channel. Thanks.

I made more progress watching your videoes during 1 week than practicing making latte art for 3 weeks because I had absolutely no idea what I was doing. Hearts are starting to show up in my cappucino. Now I just need to become consistent.

Wishing you the best of luck! Tumblers have an even narrower cylinder, With that in mind you might find it very challenging to make designs. However stacks/hearts and variations of those are definitely doable :). Nothing like knowing there is a cute heart under the coffee lid when you walk out the door.

Probably! I love cortados! Also cortados are cylindrical too so they are also a (very tiny) bit limitings compared to a round cup of the same size! It's cool that you get better designs in them. A lot of people struggle in cortados. Great job!

Thank you! Loved the science bit and I can apply that usefully to when my customers give me all their different shaped keep cups. But my favourite part was when you ran out of milk xD The number of times I just have to wack the lid on quickly and hope the customer doesn’t want to add sugar to expose my failed attempts! Thank you for keeping it real ❤️

I didn't ask it, but I was getting there yes. Watching your other videos, hearing how helpful more space and wider cups are, there would be in the back of my mind, a wonder how those awesome baristas do it, especially these past few years, when most place HAD to--go onlyy. Sooo, noice 👍

I practice with instant coffee and I have a French press to froth the milk and make latteart, it would help a lot to make a video on how to properly froth milk in a French press, apparently I'm frothing too much.

I manage a coffee shop in Seattle and I've been so bummed that I can't teach my baristas more than just steaming and currently my shop only serves using to go cups. The latte pouring competitions over here are so sparse right now, so communal learning is inaccessible. Your videos have been so helpful! Thank you.

SO happy they are helpful! Seattle is a unique coffee city in that it loves coffee but has a weird lack of barista community. Someone should start a club!

So I’m new to the espressos milk coffee scene and I’m always making cappuccinos. The to go cup and steaming videos were very helpful. If you’re pouring cappuccinos, is it pretty similar rules with just less volume? The cups are more awkward but seem similar to the to go cup.

Great point about a larger base being stiffer. So… if my steamed milk was stretched a bit too long, I guess I could use a smaller base to help the thick foam move well. And if the stretch was a bit short and the milk is thin, I can pour a taller base to make the pour more stable. Is that right? Time to experiment!

Kinda! Definitely if you have thinner milk you’ll want to pour slower and integrate more. With thicker milk you can start sooner but the foam might be too thick and won’t glide at all. That’s just foam for ya. In that case I’d recommend pouring the milk into another pitcher on the side wall of the pitcher and swirl it a ton. This breaks up foam. Also important to note you should preheat that second pitcher. Also also using a large pitcher to pour a smaller drink, makes thick foam feel thinner since the width of the pitcher stretches the layer more.

I love the "look how much I can fit into my pockets" flex! It would fun to play with how much you can vary the width of the spout while pouring. I wonder if you could create a nice effect with it?

Pour less heavy and way slower! Genlt for small cups, heavy for large cups

How do you steam milk for an 8oz cappuccino? If you inject enough air there is no time to refine the milk before it gets to temp. Do you simply add more milk

Emilee I need u help, I have a championship soon, and we have to perform the art in to go cup, 16oz.. And it's not easy actually.. I know how to make a latte art.. That depends on how large or small you want the beverage! I think of milk and coffee, like chocolate. Less milk makes it taste more like dark chocolate, and more milk makes espresso drinks more like milk chocolate. The best ratio I enjoy for latte art (and taste but more specifically the visuals) I enjoy 6-9oz cups for a 38g shot.
