I find these short videos diving into just one spesific topic very entertaining and educational. This is a subject that would easily be forgotten if by me at least if it was just one small part of one of your longer latte art videos but not something you could dedicate a long video to without it getting redundant or off topic, this lengthy suited this type of video perfectly

@@LanceHedrick It's probably a little niche, in an already niche topic, but I'm really great you're doing videos like this. Videos like "THE TRUTH ABOUT CAPPUCCINO" might provide more entertainment and possibly reach a bigger audience, but tutorial-style videos where I'm learning something that I can try myself later are great too.

I like doing all sorts of videos, not really taking into account reach. This is a side thing, so I'm just making videos I'm interested in at the moment. Actually, Harest knows this better than anyone, my whacky brain (that's doc who commented above). I bounce all over in our discord! Haha

Super helpful. Have been really struggling getting it all to work for Cortados in a Picardie glass, which is pretty much all I drink/make. First time with an espresso machine and latte art, so hoping to at least nail the heart one day. With only 2-4 tries a day (2 people) it's slow going, and working on milk consistency too. Love your videos, very helpful, lots of skill!

Super helpful! My microfoam is getting to be consistent thanks to your 'halfway and a quarter' technique, but my pouring and art is still behind. will be using your advice about blasting the shot with foam - ive been pouring a small stream and its made for pretty weak contrast. and the rotating tip is much needed! hoping i can start pouring better gibraltars for my boss lol

Oh my goodness thank you so much. Now I have no excuses ! I have been grinding your milk foam and latte art pt.1 videos for exp. and was still having a hard time with my little cups. Flow rate is definitely the trickiest part, at least for me. This should help tremendously (as all your videos really)

@Lance Hedrick No, thank *you* ! They did ! Second attempt after seeing this video and I finally got a heart today --- it's a start ! Ok it was upsidedown because I didn't pay attention to the handle 🙄, BUT hey, I'll make an ace of spades next time I mess up ! 🤣 Actually there were a couple things that led to figuring things out and, from watching closely, I noticed things I was doing wrong and could correct them : namely dropping in too close to the cup's lip blocking the proper sinkhole effect to get going. I dropped in more centered and finally started getting correct shaping ! I have 6oz cappuccino cups (pear profile) and switching pitcher helped, the narrow spout Eddy helped me a lot to correct my biggest weakness which was flow since it's profile is really predictable; the motta was harder to work with, at least for me at my level with my "small" cups. That quick blast of foam really did magic today, I could clearly see it. And it's as you said, otherwise you need flow but then you fill up too quickly. So this video just stroke straight A's accross the board for me. Things got pieced together; now we practice ! (I'll have to get some decaf 😅) So thank you ! As far as video length, whatever you do is fine really. If you get the point across quickly, then that's fine, if you need to go into more detail, that's just as fine. You're the kind of teacher that could make a 3h class into 2, no breaks, and would keep the attention of everyone just as much as you could go over an extra hour and no one would mind. Anyway, regardless of what you do, follow your flow ! And on a side note, maybe it's just me, but there seemed to be a great attention to sound on this one, I liked the fades and the levels. Cheers !

Nice. I've definitely been having less luck with my pours in smaller cups, and I think it's as you say, treating it the same as in larger cups. Looking forward to sorting that out later and recaffeinating 😁

I love digging into your longer videos, but sometimes I don't have all that time. I do appreciate the short video focusing on one technique. I can keep that one thing simmering in the back of my mind while I do all of the other things and then I have you there with me when I have time to play with my espresso machine.

@@LanceHedrick do you do Skype or other type of classes? I do okay, but my artwork has actually degraded. I’d be interested, The thing I have the most difficulty with is the pull through? (Tried airplane and helicopter). It’s always crooked. I also have a wdt that may me wrong, got it off Amazon and it had little circles at the ends.

Beautiful. I just bought 3.5 oz porcelain cups and saucers, this is going to look so nice. I've been using them for Turkish coffee but a piccolo will do nicely.

Nice video and love my notneutral vero cups as well. I have smoke in espresso, amber for cortado and clear for caps. Mainly do the cortado though and getting good results with french press. was kicking around idea to get a bellman at some point. BTW did the flapper mod and getting the other parts for my forte bg based on your last video.

Have to say that I did pick up more than one tricks from u, I'm sure that many people like me that have been practicing latter art at home and failed constantly and didn't have clue about why, non of videos that out there remotely talking about land the base properly with flow, and for a learning it at home user, we often fail to recognize what mistakes were, me for instance, often neglect land the proper base before pouring the design and that leads to failure with good amount of "CHANCES", since I noticed that from this video and I have managed to pulling off and improved, ur credit again, ^_^.

Do you use a different sized pitcher to pour a cortado? I feel bad (and broke) wasting so much milk when I make them. Also, what pitcher do you use? Lastly, thanks so much for your videos. They’re super helpful-and your comedy is unmatched!

Great info here! For me I have had the hardest time pouring any form of art. But what I learned here is not only that I need the right amount of steamed milk BUT that I also have been holding the steaming pitcher too far away from the cup. It seems obvious now. By the way.. Your name is awesome.

Just have to pour the base REALLY QUICKLY and then pour the design immediately and quickly haha.

Thanks for the tips! I really enjoy pouring into the Vero cups because of their rounded bottoms for easier milk control. Do you have any tips for the traditional glasses where they are flat bottom? I run into a problem where the milk flows up from the bottom of the cup fairly often and smushes the base making it really thin. Can only get one good pour out of every so often.

Loved this video, even if it's short.💛 Ever think of a similar video for the tall and skinny to go cups ever so common now due to COVID-19? Somehow it seems like I have to do the very fast pour as well or else the foam is too stiff by the time I start. I've tried explaining what works for me, but im still only doing simple designs in these cups. Would love an expert opinion on these cups.

You're doing it correctly. Simply fast AF fill and then pour the design immediately, and quickly.

I've been having some issues with that blowout your show in the first example! I've had no idea why, or what changed that that was happening. I'm going to go make another latte and pour faster to set the base better, I'm certain that's what I've been doing wrong now! Thanks for sharing your wisdom as always 🙌

@@LanceHedrick So after a couple of weeks of focusing on pouring the best base I can, I'm finally consistently happy with my winged bases! I definitely needed to pour more agressively as I wasn't getting enough foam for it to set properly, which kept blowing out the winged bases most of the time! I really appreciate all of your videos and instruction! I''ve gone from using a pressurized basket and pre-ground coffee and making terrible foam, to using freshly ground specialty coffee, knowing how to dial in espresso in a variety of ways on my Flair58, and pouring a variety of latte art styles (hearts, tulips, winged bases, still working on Rosetta).

Love the vid! Curious. I've heard the rule of thumb that you want a Pinky's width of foam on a cortado which makes art even more difficult. The best designs I've had on cortados have been with thin foam more like a latte but it feels wrong because I've been under the impression that you need that thicker top cap of foam

Yeah! Pinky is fine. You can get some basic designs with that. I personally prefer a little less because it allows the milk to be more homogenized with the espresso. But, if you let my milk separate, you'd have roughly a pinky width

Hey Lance great video! Sorry to comment on an old video. But I want to start getting into drinking Cortados as I feel lattes have become too much for me. Been going with a smaller ratio lately. Mainly been drinking espresso. Just bought the nonNeutral Vero glasses and I love them. My question being how much milk do I put into my pitcher when I steam? I usually go with a 36g shot of espresso for reference if that helps

Really cool. I don't think anybody else did a video on cortado art, at least not as good as this one. You really have to work on your "mistake" pours. Maybe ask the cameraman to the show off the mistakes. It's nice to have a short video once in a while but don't get rid of the longer ones. Just surprise us, like a new video on a Tuesday. :)

these are good tips! however, the more i think about the techniques while pouring, the worse my pour gets. needs a lot of practice for it to almost become muscle memory.

For sure. Muscle memory is massive. Gotta work on flow rate control first and foremost. Can do this with just water and an empty cup

I like this ! I've always preferred the cortado with 1-2 finger widths of foam . Getting a thin textured drink to get more latte art took away from taste.

Interesting! I do NOT like 1-2 finger width of foam for the same reason you like it. I feel that much foam really obfuscates the flavor by making the beverage too milk centric. Yes, I know less foam means marginally more milk, widening the ratio, but I find that to be a better representation of a marriage between the two than thick foam. .BUT to each their own!

I steam right around 2.5oz of milk. So, I lose around .5oz! If you get a 10oz pitcher, you can steam and lose none!

Half and half is rough because the fat content wants to destroy the foam. You have to be super aggressive when stretching.

so if you put in 2oz of espresso then you add about 2oz of milk for a cortados? would you steam 4oz of milk? is there a minimum amount of milk you need to steam for it to get good foam?

It really depends, but I'd recommend as little milk as possible for your pitcher. Do, whatever volume your pitcher, a minimum of 30% capacity

I’m using only the cortado glasses from NotNeutral. But I’m using a small pitcher(300ml) because I have better control than using a “normal” pitcher (420ml) and yes it’s very tricky….

The machines we used were La Cimbali m3 superbar 2, fully automatic ones. 14 years ago so dont really remember the specifics quantity wise 😅 I guess what they called cortades really were macchiatos when there was so little milk ?

Cortados are the only milk based drinks I order, usually when I’m in Spain. I almost never had a bad coffee in Spain. At home I have a cafelat robot, so no good way to make good microfoam. Probably gonna try a nanofoamer someday, or is there anything better (without getting a whole new espresso machine)

Hi Lance, I enjoy watching your milk art videos and I'm trying to absorb the many tips embedded in each video. One thing I don't understand about your pours is, when you are laying down the base, that initial pour looks almost sloppy or hurried. Yet, all the other steps in your pour are done with purpose and precision, so what am I missing? I do understand from the 'ultimate guide' video that you are trying to get milk out quickly so foam is not left behind in the pitcher, so I can understand that you are trying to be quick with this step. But I wonder why there isn't some more symmetrical motion in this step, e.g., side-to-side or circular motion? Is it intentionally a random motion to ensure the espresso and milk are adequately mixed to create the brown-foam base? Thx.

If you've seen the ultimate, then you know the beginning doesn't have enough concretization to matter. You're just displacing foam as much as you can. Being surgical here doesn't matter

Thanks. I am still stuck on this step. I did several practice pours this weekend and when I tried to mimic what you show in the video (sort of quick/random motion) I disturb the canvas and get a lot of white, swirly issues mixed with the brown. In the past, that's why I was always tried to pour more slowly so I never disturb the initial brown espresso crema. (EDIT - just took a closer look at my empty cup (LINO double cap) and noticed, with the cup tilted, the plumb-line to the deepest part of the cup is actually much higher up toward my cup hand than I previously realized. So I adjusted the pitcher position to be more centered at the deep part, and the whole pour went much better. Will keep trying...)

You have to ensure you're using the right size pitcher for the proper drink size. If you have too little milk in a pitcher, it will fly out of control

@@LanceHedrick we have 1000ml to 150ml so I'm stumped, was leaning more towards technique but dosing is critical so thank you for hammering that home. my issue always happens after I've added volume so would you think I'm adding too much foam or starting with too much milk. thanks!

I was genuinely concerned that I would see a cortado with a heavy, separated layer of foam that completely negates the beauty of the drink: a lightly textured milk that cuts through the espresso, imparting sweetness to balance acidity, while giving it a smoother, more airy mouthfeel that still retains a lot of body. I would be absolutely thrilled to be served your cortados.
