Quintessential goan balchao! I recently saw a program on Epic, where chef Rego cooked a great soup( the name escapes my memory), a prawn dish and my fave chicken cafreal. Chef Ranveer Brar was the host anchor. I could gauge how much chef Rego is held in high esteem. Even at this advanced age, chef Rego hasn't lost his magical touch.

I've eaten at restaurants world over. Restaurants by Wolfgang, Wolfgang puck, Marco Pierre White, etc. Nobody, I repeat, nobody can beat this absolute gentleman at the game. Chef Rego, you have forever been my favorite, and will continue to be. Not just the best chef in the country, he's the best in the world. His story is inspiring, and his hand, magical.

I've been looking for the authentic Goan prawns balchao recipe everywhere and finally came across it. I remember my granny used to make it using the dried shrimp powder. Thank you sir. Cant wait to try it. You are a humble soul. God bless

Thanks Chef. Today we tried out your recipe of prawns Balchou. It came out really good. Both of us love your channel. Have got good memories of Taj Fort Aguada. First time both of us stayed there was during our honeymoon 30 yrs ago in June 1990, since then maybe 5-6 times we stayed there. Maybe have seen you there and tasted your delicacies. Ah ha! So there is a link between Goan Balchao and Malaysian Belacan!! I suspected there might be but I couldn't find much info about it. There must have been a lot of ships going back and forth between Goa and Malaka during the Portuguese occupation of both regions. I'm sure lots of food travelled back and forth as well.

Is Mangalorean Balchao the same as Goan Balchao? I will try your recipe for the first time. I hope it comes out. I have never attempted to make this dish. If it comes out tasty then I will refer to your recipes all the time. Thank you very much Chef Rego. The tree behind you is that a mango tree?
