Hello! This is very exciting! I'm wondering about using the Siligel. I've had problems in the past with it throwing an off putting smell in the past. Is there another gelling emulsifier that you could recommend instead? What about Sepinov EMT 10?

I haven't found the smell off-putting; you could use Sepinov EMT-10 or any number of other gelling materials.
