We farm about 1500 acres of pinto beans a year and I can say as long as they are kept in a cool dry place away from pests they can last 20 plus years. 😊👍 great video Chelsey.

Chelsea, something I learned many years ago when I was eating Macrobiotic was to cook a small piece of Kombu (a sea vegetable) with the beans. It somehow reduces the oligosaccharides and makes for less digestive difficulties, flatulence in particular, and does not impart any flavor at all.

@Little Mountain Ranch It all started with a guy who came to sell honey in December ( it was like 4-5 Kg local ) then i started looking for it on KZbin to knnow more . I think though Europe/russia/ who do natural beeking but youtube has all american videos who are mostly starting but its in English so i understand . Since then youtube is recommending different things like homsteading/farming apart from bees . Hard work is inspiring so i am just enjoying . Btw i also checked out 2019 documentary Honeyland because of it lol . It's good , got 2 oscar nominations .

In Brazil we eat beans with Rice as a side dish almost every meal and we always make sure to cook them with a bay leaf because It helps with its digestibility.

Hi there! As a Brazilian, I eat beans every single day. Really, if a Brazilian doesn't have pinto (or black) beans, white rice and some sort of meat, it's not a lunch or dinner. It's a snack. The only exceptions are pasta and meat soup on extra cold nights and pasta on the Sunday lunch. We don't rely on red meat for iron - indeed I didn't even knew that red meat was such a font of it. I go through 2 or 3 kg of pinto beans every month (and there's just two of us). I keep them in their original package in my pantry and always have 1kg already cooked and frozen. Just keep them in small Tupperware and defrost as needed. Here's how I cook it: (here is too hot to let them soak overnight, they will start fermenting, and not in a good way). I pick any that has any defect (rotten spots, mostly) and let them soak for as long they need to double size (normally 1-2h). Throw this water away and I cook them for 30-45 min in a pressure cooker, on my stovetop. I put a little of vegetable oil, a pinch of black pepper and a tablespoon of salt. Beans are a little tough to season afterward the cooking process, if you don't put salt in the cooker, any seasoning will stay in the "shell". When is as soft as I like, I fry on a small pan 2 large garlic cloves (minced) and a little more salt. When it is all golden I pick a spoon of cooked beans, dump in the frying pan and mix it well. Then put it all back into the pressure cooker (so the oil won't spill and I won't get burned!). I let it boil without the lid for a few minutes, with few laurel leaves in it. It's amazing, the laurel gives an amazing flavor and helps to prevent any molding.

@@LittleMountainRanch not quite an expert, it's just something that is part of my everyday life! The first thing everyone around here learn to do in the kitchen is to how to properly cook rice. Then it's beans, how to fry an egg and some kind of steak. It's a set lol Well, we're a community, right? We are all trying to learn new things and pass on watch we already know. It's always a bliss (and a bless) to share!

I do a Mexican cornbread casserole with ground beef, black beans, I’ll add cooked rice if I’ve got it ( it’s good either way) and sautéed chopped onion and skillet fried fresh corn kernels. I mix it, season with taco seasoning, add maybe a little cornstarch to thicken the juice, a handful of shredded Mexican cheese, then spread it into a casserole dish and pour cornbread batter to cover and bake it until brown. This dish will stretch a pound of ground beef quite a long ways! Especially if you add rice. It has become a family favorite in our house..

Great recipe for bbq sauce, I like to make my own as my husband doesn't like it sweet. Never thought of doing bbq beans though. Here in UK, Baked beans in tomato sauce (Heinz is the most popular variety) are very common to buy, we eat them on toasted bread sometimes with shredded cheese on top, or a slice of cheese below, they're even nice as a topping for pizza with lots of shredded cheese. Great ideas Chelsea, thank you xx

You have such a lovely way of talking about scary or for some people somewhat controversial topics. I admire that quality in you greatly. On to the beans...my relationship with beans is not a healthy one. I desperately love them but they just don't love me back. I fact, I'm convinced that beans hate me (yes, I take it personally. hehe) I've tried soaking/rinsing them but I think they're out to get me and ruin any chance of me being out in public (if you know what I mean.) Granted I have a questionable gut on a good day. HOWEVER I shall try again and see what happens. Wish me luck! Or actually...wish everyone around me luck.

If you're just interested in the recipes themselves you can find them around the 4:00 minute mark. Thank you so much for watching and I'll see you again soon! ~Chelsea The price of beans on Amazon seems to have gone up since I last checked. You can still find them for around 40-60.00 for 25lbs if you look. Here are some easy links of places I have found that are still selling them for a reasonable price. I haven't purchased from these places before so can't attest to how good their products are. www.ifsbulk.com/wholesale-beans (good prices) www.bulkfoods.com/52-beans.html www.webstaurantstore.com/38111/dried-beans.html nuts.com/cookingbaking/beans/ www.edenfoods.com/store/bulk.html

Thank you for sharing. I also hope for the best for us all and to you as well. I have tons of beans in my pantry at all times and this is reassuring to know that I am not the only one who loves the versatility of beans. In culinary school, we fried them up for a Mexican dish with butter, because it was a French culinary school, lol. So everything tasted 100x richer and creamier because of the butter. And I gained a lot of weight because of it, lol. We use crushed cumin seed, a few pinches of oregano, a little bit of chopped onion and garlic and celery and added 1/4 of bell pepper, or half a jalapeno if you like. The pepper will be removed after cooking is done, it's just for flavoring the beans. And then you can make soup like that with a bit of whole/crush with your hand's tomatoes into the soup. Or drain the soup, and crush up the beans and make your refried beans with the butter. The rice, the same stuff, the cumin, oregano, onion and garlic, and celery, you can use powders too. And the pepper for flavor so leave it whole so you can fish it out later, and also add a good handful or two of the crushed tomatoes which give the Mexican rice it's orange coloring. I also like to use chicken stock instead of water for both of these recipes for that added flavor. My Mom also makes a chicken and rice dish like this and adds the chicken in to cook with the rice, and she also adds zucchini or yellow squash slices with a chicken gravy that you will mix in with the chicken and rice. Squash goes in last as you want it to cook less so it's not mushy. Or use corn, added in as well. I've even seen them add carrots to it at some point. So Mexican cuisine only has those few ingredients most of the time to add the Spanish flavorings we love in the restaurants. I will have to show you how to make the tortillas in the future too. Once you make your own with your rendered lard, you'll never buy storebought again. Lol. Take care and be safe.

Beans are a good source of protein, however to be a perfect protein they need to be served with a grain ie; rice, corn tortilla, corn bread etc. The problem I've had with older beans is taking them forever to cook and even then they may still be hard. Of course I wad raised to eat them anyway, there was no wasting food, ha!

If you add a strip of Kombu seaweed to your beans while cooking, the amino acids in the seaweed will make digesting beans much easier. It doesnt really have flavor, just remove when done cooking. You can buy it online or at an asian market. Just use a strip about 2" wide x 4" long.

Thanks for the tips, especially about cooking the in the Instant Pot. I used to use my slow cooker and presoak but cooked my first IP batch last week and followed a recipe that said to cook for 60 minutes. I thought they turned out soft because I used the thinner skinned Great Northern beans but I think cooking time was the culprit. Aside: did you re-redo the kitchen? Make seasonal curtains? Hi Chelsea I hope that the corona is not in Canada too much. I never liked baked beans, maybe because they are so sweet. I do have some tins with different beans stored in my pantry so I will try your recipes out. Eveline

I soak beans for 3 days before cooking makes it really digestible, and takes away the gas that people get when eating them.

I can imagine the longer you soak the better a although someone for Brazil mentioned it was too hot there to soak for more than a few hours without them fermenting. We’re fine up here to soak, at least in the winter.

@@LittleMountainRanch would it help to soak them in water but in the fridge for the 3 days? I also canned some beans this year after soaking them over night. My son who loves beans said that these canned beans don't give him the gas that usually happens from eating beans. I glad as the canner holds 16 pints so we have lots of beans! Will try your BBQ recipe! sounds delicious!

@@LittleMountainRanch You can always put them in the fridge while soaking and if you change the water at least 2 times a day it would prevent the fermenting stage from beginning

The most source you throw It away , it was the bean water, you can put beans 5 or 12 hours before cooking that water is good to throw it away, but that already cooked noo, never. But It's good vídeo.

Beans have such a bad rap. I love beans, always have. I like to make my barbecued baked beans in my grandmother's bean pot. They do cook in the sauce with a piece of fatty ham but they are so delicious. I am really going to try the sauce on the side way because sometimes I only want a little bit of baked beans and it's another way to use bacon which I do believe is quite honestly the best meat ever put on Earth! These are scary times but keeping a level head trusting the Lord and doing all you can do to just keep the virus away is about everything you can do. When it's my time to go it's my time to go! And there's not going to be a darn thing I can do to change that

So much good information in this video. One thing I am having a problem with is you said to rinse the beans after cooking. By doing this you would be losing the juice (liquid) made in the cooking process. This might be ok if the beans are being used in a recipe, but for just eating, the juice is generally as delicious as the beans themselves, especially if you are from the south and serve them with cornbread! Did I misunderstand the rinsing thing?

I rice the juice off because I find it makes them more digestible.

💖💖💖 Yummy! Love the tips & tricks. Thank you, Chelsea! I like the idea of using beans as more of a condiment than as a main dish. I always presoak and rinse several times. Even so, I've found I can only _comfortably_ eat pinto and black beans anymore - probably because I've eaten them all my life. I love the idea of many other bean dishes, but have trouble with them no matter how many times I rinse or how long I soak them. Lately, I'm even having trouble with lentils and dal. I'll try the ACV, though. That would be a wonderful save if it works for me. One of my favorite traditional Yucatan Mexican dishes is called Huevos Motuleños. It is super easy to make. I make mine with homemade corn tortillas (super easy and fast if you have masa harina) but premade tortillas or even pita bread is fine. Put a warm tortilla/pita on a plate. Spread a couple of tablespoons of beans on the tortilla - naturally, I use either black beans or refried beans, but use whatever you have. I use just enough to barely cover the tortilla. Plop a fried egg or two on top of that, and cover with a red or green sauce - enchilada sauce is great, or make your own Mexican style sauce. You can garnish with crumbly cheese, cilantro/coriander leaves, or whatever takes your fancy. Traditionally, they are served with thick fried plantain banana chips (maduros), but those are hard to come by this far north. You could substitute home fries, hash brown, or skip them altogether. I hope you are well! Happy Spring! (BTW - Are those new counter tops in you kitchen? They look great!)

Beans is not something I eat. So I would not buy them for a preparedness Pantry. However, Beans are something I can grow. So I will be growing them in my preparedness garden. That gets them in the pantry and I have to find a way to cook them that I like.

Quinoa is probably my favourite grain to use in the place of rice. You can also break cauliflower into tiny pieces and use that. I can only eat a small amount of rice and it has to be brown, so I feel you.

Great channel but on this it was a bit of a miss. I cringed when the broth was tossed. Broth is routinely prescribed by doctors in Latin American States to aid with iron deficiencies. Also, salt should not be added during the cooking process. However, it should be added around 20 minutes before cooking is completed or they won’t absorb the seasoning of the salt as well.
