I forgot to add in the final tally - right now I'm at 521 jars with just a few things left to can. The end is in sight! 521 jars is amazing for a family of your size! I have been guesstimating a preparedness goal of one quart of food per person per day per year for storage, outside of stored grains/beans/flours. So you're at like 1.5 persons by my calculations! This means you are super clear on exactly how much you need of what, and making the most of your root cellar, stored squashes, dried grains/beans/flours. Or else it means that I need to downgrade my guesstimate. That is most likely. Or else we are just all gluttons! My other comment is that I agree with you about wide-mouth jars. So much better. That is a very good point about scalability for the smaller-mouth size, and it makes sense considering surface tension. However, I notice that I can fit more regular-mouth jars in my canner, or sometimes, a combination of wide- and regular-mouthed jars allows me to fit more. For example, today I canned up two chickens and their broth (so, not including the backs and wings which were used to make the broth) by putting the broth in 4 regular-mouth quart jars, and in each of 4 wide-mouth pint-and-a-half jars, one bone-in drumstick, one bone-in thigh, and one cut up breast. I normally cannot fit 8 quart jars in my All-American 921 canner, but I can get all 8 of those jars in, so, effectively, I can get 2 chickens in there in 8 jars, plus have leftover shredded meat from the carcasses, plus about about a cup of rendered chicken fat from the skins. So, mixing things up helps quite a bit. Also, regular-mouth jars are considered best for pickles, because they have "shoulders" to help keep the contents below the liquid once they are opened and in the fridge. We don't eat that many canned pickles (my cousin has a raw-fermented pickle and sauerkraut company), but that is also a consideration. I mostly use the regular-sized lids for jams and condiments, since the smaller the surface area of the opening, the less mold you'll get once you open it and store it in the fridge. Nice video, thanks so much for posting all that! A freezer video would be a bonus, but not as interesting as the jars and the root cellar, and maybe less interesting than say, a video about how you use your stores in your kitchen from day to day. I really love your channel, it really helps keep my morale up when I see that you've posted! Yay! Sorry about the US size references! I am actually in the midst of slowly converting to German Weck Jars, trying to figure out which shapes and sizes are most likely to conform to USDA/NCFHFP guidelines about canning (those Weck Deco shapes probably don't allow for the best heat penetration, for example), so I do think about these things. I suspect that Canadians will probably be on the front lines for testing long before Americans are, simply because of the ease of metric conversions. What I love about Weck is that there is no plastic lining involved (just glass and natural rubber). What I love about the Jardin (Ball, Kerr, Bernardin companies) is how much research has gone into food safety. Weck just changes their instructions (and branding, and marketing) to fit whatever the guidelines are for whatever country they're trying to sell to, which, if you think about it, is kind of pathetic and irresponsible. There are many inconsistencies in their marketing and instructions from company to company. Anyhoo. Thanks so much!

Great comment! Thanks for taking the time to write. I leant a lot from you guys here in the comments. I’m going to do a full breakdown off my food storages and explain a bit about what and why I do it this way. One thing right off the get go is to keep in kind we have milk, meat and eggs readily available year around which provides a huge number of out necessary calorie needs, so our food storage is different than a lot of the ones you’ll see.

You dont know how lucky you are to have so much storage space. Especially in-ground. All my neighbors have the in-ground old-fashioned storage place. They dont use it though as they dont know what is coming. Being able to provide for yourself other than by the Just-In-Time method is not popular anymore. Its awesome. You did a good job. Awesome. You can also spray peppermint oil in your engine compartment of your vehicles to help keep rodents from chewing the wires. It works. At least it did for me. Love your videos. Hugs!

Yay!!! Pressure canning!!!! I can feel your pride and love. I know this feeling. I'm sending so much love back, because this kind of video fills may heart to overflowing. We just finished the last of the statewide blackouts because if the fires in my state, for now anyway. I didn't have to run to the store and panic and battle for food and supplies, it was all here in my home, in beautiful glass jars. Easy, healthy meals ❤️❤️❤️❤️

With you Jennifer, I'm in Marin County, California. My preps were a big help. We also have a solar battery backup, that helped a lot, and we were able to help our neighbors and extended family, but if we had needed to, we could have eaten straight out of our jars.

Wonderful! Not just theory but a lot of day in and day out hard work and knowledge. Labels on the shelves is a real good management tool to avoid orphan jars that are out of place and just get kind of lost. I've had that problem from time to time. Also like the tongue and groove shelf boards much better than two by four and ply wood. Saves space, better visibility and is easier to clean. I will use them in the future. Only two things I would suggest are a stop on the front of the shelf to keep jars in place and attachments to the floor and wall or ceiling to keep the shelves in place. If there ever is an earthquake you want to protect your work. It's heart breaking to see broken jars on the floor. I am also a new subscriber.

if you take suggestions I have a few. Be sure to debubble your jars so that you don't have spaces of liquid between your products in the jar. And I see that some of your jars have siphoned and product is missing liquid on top. The unliquid covered food might turn brown, but it's still okay to eat. Proud of you for learning to pressure can . Thanks for sharing this video.

Thank you for a great tour! I was so empathetic when you were holding that set mouse trap. I would have done the same. Plus I sure don't like balloons or those jack-in-the-box toys. Too unpredictable! Ha.

You do look quite a bit like comedian and nutritionist Lauren Eisman. After years of gardening, the one vegetable I tell new gardeners to make their first crop is....butternut squash. It can grow on patios and small spaces easily as long as they provide vertical growing space. It usually makes it through without pest or disease if they don't water then rough up the vines while still wet. It makes a huge crop per square foot. Then after harvest keeps well without any fuss of freezing or canning. All they have to do is bring it inside. It is very flexible as an ingredient. Roasted, soups, omelets, tacos, etc. They can grow succession planting of it and have it year round in almost any zone. It makes a huge dent in the food budget. Small baked halves can have eggs dropped into the center and rebaked. I have not found any other crop which is capable of making first time gardeners feel hugely successful. I suggest plain old Waltham.

This is an amazing space! Congrats on your pressure canning! The vinegar tip is something ive used as well, just be ready for your rings to rust a bit. I always have extras so i just toss them if they are really bad. 💗 thanks for sharing!

So glad I watched this video because when I watched your recent tomato canning video, I saw the jars with labels on them and was confused/worried about you using those for canning. Cool that certain brands of store products use canning-quality jars so you can reuse them!

#goals 🙌🏻. Your pantry looks fabulous! I was also scared of the pressure canner but after a year of water bathing jams and fruit I decided to give it a try.... now I have two pressure canners and am constantly learning new foods to preserve 😁. Can’t wait to see the other pantries and root cellar 💕.

What a great tip! We tried our hand at canning for the first time this year and got some of that white scale on our jars. Problem solved! I'm also relieved to see that the liquid doesn't alway cover everything in your jars. I was worried that anything uncovered in ours might be bad. Yeah, I'm a total rookie. Thanks for the tour! I love manuka honey also, one of my favourite eating honeys as well along with native bush honey. We are blessed in NZ to have amazing flowers on our native trees. Such a beautiful flavour and as you pointed out so many wonderful uses!!

I live in town and have hard water. Not too bad but whenever I water bath can I do have some of the white scale so I love the idea of the vinegar. I'm going to be restocking all of my canned jams this summer and am looking forward to clear jars now! I'll have to file away the idea of spraying down the shelves with peppermint oil to help keep mice out for when I do eventually have a cold room. Thank you for teaching me new things. I also appreciate watching a channel that is from the same gardening zone as me. Keep up the good work.

Chelsea, I enjoy pressure canning as well. I believe my biggest fear was with operating my pressure canner. Once I was over it everything was great. Nice pantry!!!

Can you have an indoor complete House Tour, I would love to see that, along with a picture of the front house outside. Thanks. Izzy, the Canadian living on a small Portuguese Homestead. -About your pumpkin cubes in Portugal there is a dish you can make. In a big pot add water then put in pumpkin cubes, potatoe cubes some kidney beans -not too many and a hard boiled egg for each person. After everything is cooked you put it over some cubed corn bread (a little bit of the broth from the pumpkin is used to soften the corn bread) and add olive oil and a little vinegar. Stir well and it is ready to eat. You can add pepper and salt to your liking. I prefer to mash everything together and stir on my plate.

My cold room stays pretty clean because it has a door I keep closed, my other pantry... let’s just say, if I walk through it without stepping on something or tripping it’s nothing short of a miracle. 😂

I also canned meat for the first time this year. I made ready-made meals like beef stew etc. It's so fun and satisfying knowing you have those meals ready to go if need be. Your canned food looks great.

I just watched your video while doing a late night canning... lol. When I saw your onions, I was envious! Oh man, I live in Texas so our humidity is harsh... I like to take my onions and rough chop them and put them into jars, then I pour bread and butter pickle juice recipe over top with red bell peppers too and can them for about 15 minutes. My family loves these onions on hotdogs and hamburgers. I have a family cookbook I wrote with close to 1000 pages and my grownup children wanted me to make sure I put this recipe in the book. Anyways, I am so happy I found your channel here on KZbin. God bless you.

Wow! How awesome! There are only four of us in our home...so I am only at roughly 350 canned items this year....so I can totally appreciate that you are over 500+ jars and counting. I am sooo proud of you learning to pressure can! I just love the array of colors you have in squash and pumpkins! I wanted to share I just learned that my electric roasters are 18 quart in size and I have three. I just went to get a fourth and I don’t know if I just never noticed or if it’s a new size but it is a 22 quart size. What a wonderful good size difference!! Just in case yours is the 18 quart size a 22 qt could yield so much more for your large family. I just loved seeing your pantry so full and smiled to see you canning dry beans now!! Did I say I’m really proud of you??!!

Suggestion: I also use vinegar when I can. I am recommending that you also wash your jars once they are processed with soap and water. Why? Evacuation can occur during the canning process and leave broth etc. on the outside of the jars which will attract bugs and rodents.

Beautiful squash and pumpkins! I recently purchased some land and a tiny house.I think i'm going to have to have another building for some storage.My canning supplies and canned goods would take up half my living space lol

Thanks for showing your pantry!! We have a small 9x10 pantry (old bedroom) Love it!! Then we got a mouse...we have 2 inside cats, 2 dogs and an outside cat that comes in to hang out and eat. It took a months to get rid of it!!!! Peppermint oil, mouse traps glue traps, nothing worked. We lost a lot. Bought a bag of flour and didn't put it up right away...wasn't thinking....the mouse got into the flour..it died. Who knew.

We had mice coming from the toilet in our previous house. My husbands grandmother said that we should have leave some stucco for them to eat. Then when they drink water they die. We preferred to move instead of trying it.

I had mice in my house after I removed a tenant. Tired everything then I went and got electronic high frequency units. Plug into any outlet and forget. The mice all left in a day! Just make sure you get enough as they only cover a set square footage area.

Yay, you've done so well learning to pressure can and now doing meat!!! Well done :) If you are okay with moth balls, you could soak them in water and spritz the water around the outside of the house (or just throw balls out there). The water is safer with kids around. Moth balls also keep snakes away.

Just subscribed. I'm from NZ, Manuka honey tastes beautiful! I guess it's a taste thing ir the fact that I've grown up eating it. It's antiseptic properties are amazing aren't they. Our hospitals even use it if necessary. I love watching blogs such as yours. Keep up the great work.

Nice storage space! Thanks for sharing 🙂. You have a lot of squash it would be great to see some of the dishes that you make with all that squash. Sometimes I get squash and then I get tired of making the same old roasting with butter and herbs on top LOL. Anxious to try your spaghetti squash with the tomato sauce and cheese on top sounds delicious.

Hi Chelsea, great video. I only started canning last year, but I bought my Mirro pressure canner via Amazon. I have been canning meat, vegetables and soups, but I still freeze fish. Where I live in Scotland we get regular power cuts that last longer than a few hours. My house is too warm so my jars are in the shed inside a closed shelved cupboard. I does not get too cold, but I do have a bit of condensation. I learned the trick of vinegar before I sorted. I forgot once, so the inside of my canner is not nice anymore. Have you tried the plastic Tattler lids that you can reuse? I have first bought a small amount, but I am pleased with them so I bought more. Canning material is very expensive in the Uk, so be able to reuse the lids is great. I am on my own so I use mainly half pint and pint jars. I have 3 small freezers as you still have some products you can’t can. Freezer tour would be great. The European Kilner jars with the ring and connected lid are more available here but I don’t know if you can use them the same way as you proces the Mason jars. Eveline in Scotland

Little Mountain Ranch I am using the original Tattler lids sold on EBay by Simplyplaincountry. They are the only official seller that Tattler uses. Other sellers could be fakes. I tried first some jars with water. You only tighten the lids a touch, until they start spinning on a smooth surface, but when you take them out of the canner you really need to tighten them. I have not needed to reprocess them. For safety I have not used them for meat yet. Beside the Ball canning book I also use the Amish canning book. She uses them too and gave me good tips.

Very impressive . . . what you have stored, how much you have stored, and the fact that you have four different locations for storage. Also, very impressed with the knowledge you passed on in this video. Word has it we are in for a difficult winter, i.e. longer and colder than average, so it's good that you have such food "insurance." Take care and God bless! @@LittleMountainRanch Yes, food prices will go up dramatically and this will happen quickly when it does start to happen. Food shortages will parallel this. Grow as much as you possibly can. And preserve and store as much as you can. You might want to think about how you would defend what is yours if it comes down to that.

Yes! Do videos with soap berries. They are on my seeds to by list, so I am going to be growing some bushes if I can. I need to get a pressure canner and learn for the same reason. I don't like the risk of a power outage and food thawing. Also, because I am single, canning soups, meats, etc. would make it much easier for me to have a healthy diet.

You could can 'convenience' foods like soups, stews etc. That doesn't really work for me, but for you it would be perfect!

Amazing pantry! Don't you just LOVE your pressure canner? Learning how to pressure can has changed my life... I live in an old house, and every fall I fight the mouse problem. I have found that peppermint spray keeps them out of my kitchen drawers and off of my pantry shelves. Whenever I find holes or cracks that they can use to invade my house, I stuff them with fine steel wool- it works really well. And then there's my 'trap line'- several Snap traps that I set in places where I see evidence of mice. It's an ongoing battle, for sure. Thank you for this tour! I look forward to the next one

I have been watching a bunch of your videos and in one of them you made egg salad and fresh bread for sandwiches!!!! I would like to have your bread recipe! I tried to scan through your videos to see if you had already posted it, but I cannot find it! I see in one of your comment you've canned over 500 jars of food!!! That is AWESOME!!!! I just love your channel!!! I am the opposite from you, I prefer the wide mouth jars. I do find that I use the small mouth jars for liquids - sauces, broths etc. I like to can my meats and fruits in wide mouth jars. I used to can in quarts and now find I use more pints as the family has shrunk from 7 to 4. Thank you for all you do! Keep up the good work!!

after the overnight sitting period for your canning when you remove the rings if you wash your canned good jars in hot soapy water and dip in rinse water , dry them and put them away you don't have to waste vinegar in the pressure or water bath canner. Washing the jars of food is also to remove any food particle or smells so bugs etc, don't go near them
