he didn't say if you can take the breast meat off to eat before freezing, is that ok?

It is not advisable for the hunter to remove the breast meat before taking the trophy bird to the taxidermist. The taxidermists will need to make their own cut, from one point to the other, clean and straight with no tears to repair. In addition, the breast meat being left on the carcass helps with getting the proper size foam manikin put in the bird skin when mounting.
