Thank you for this video. I made a large sheet cake for my friend’s birthday. I never made a cake that big & never delivered a cake before yesterday. We also get really hot in CA & she lives 2 hours away in the desert where its even hotter so I was definitely nervous. I followed your suggestion with the car A/C(I had to wear a sweatshirt lol) & the mats under the box…genius idea. I had to hit my brake a little harder than expected when I was cut off & the cake didn’t move! I successfully made the delivery so thank you & keep making these great videos

I live in an extremely hot & humid climate. The method you use can't be used in this heat. I transport cakes by putting them inside a tall, sturdy moving box that is the same size as the drum. I cut off top flaps so box stays open and cut down to of the sides to facilitate sliding cake into box. I roll up a large towel and put it in back lower area of front passenger seat, to level off area where cake will sit. I put box on seat and wrap seat belt around sturdy box. The cake box is now secure and sitting close enough to air conditioning so fondant or buttercream will not be affected by temp difference. Also, I tend to use sharpened wooden dowels going through cake and puncturing drum, to ensure cake tiers don't shift or move during transport. 😀

I enjoyed this video; really great tips for transporting cakes and they hold true whether the cake is buttercream or fondant! To avoid condensation, I make sure the cake is set in a cool refrigerator, not a cold refrigerator. I’m looking forward to your next video!

Is the plastic wrap touching the cake in anyway?? As long as the cake stays cold the plastic wrap won't mess up the icing?? Once you give the cake to someone have you ever heard that the cake icing was messed up from the plastic because it's hard to ensure they handle it right once we pass it over. I'm basing these questions on how it looks from here. This wrapping process seems really economical and I would love to try it. Hey girl, I use a crusting buttercream, so I never had issues with it sticking to the icing. The only times I've had issues is when I use marshmallows for spider webs or piping gel lettering. The plastic wrap will stick to them and pull it off the cake. (So annoying!!) Here's another way to wrap when you don't want it touching the cake. Hi, storage, and transport methods for my DIY white velvet cake with buttercream icing CAN NOT skip your advice. Well, I did and Yikes ,all it's icing belted resulting in a sweet pool from the bumps and heat of the car. FYI, I used 1:1 ratio of veg. oil : butter. We ate it anyway. 🤭 For better results , I thank you for Your advise . Did I miss your vlog on how to lightly freeze a buttercream cake? Oh no! At least you could still eat it though! 😂 I really don't freeze cakes once they are iced. To get the crust, I just wait about 5-10 minutes and it naturally forms on the icing. (You have to use a crusting icing like American Buttercream. If you use a meringue buttercream, those don't crust.)

I had the "condensation" problem when we had a regular air conditioner (evaporative cooler) until we switched to refrigerated air and never had that problem again fyi for anyone who has this problem when decorating at home

Is the cake pictured covered in fondant? If so, what's your chilling process there(to prevent sweating)?

The top tier is iced in buttercream. The bottom tier is decorated with fondant stripes. I refrigerate all of my cakes. I keep my house and car very cold so when I take it out of the fridge, it can gradually come to room temp. So just making sure it's in a cool room really does help prevent it from sweating too much. I generally charge a flat rate of $25 (American dollars), plus $2.25 per mile (one way), plus any tolls. So if it's 30 miles one way with a $5 toll, it will be $25 + $67.50 (which is 30 miles times 2.25) + $5 = $97.50. You can adjust that per mileage rate to your liking.

How far is the delivery? If it's warm out, I would definitely keep the air on blast. If the delivery is far, I would possibly add the chocolate balls to the cake once I got to the venue. Sometimes peace of mind is worth it!

I get them at Lowes / Home Depot! I like the 5/16" circumference dowels. I get the 48" long ones that are made of Poplar (much easier to cut) And I always rinse them before I use them in my cakes!

2 hours is a long ride. But if there are enough supports and you keep the car freezing, it should be ok. The non skid pad under the box really helps!

I love that headband! LOL! I never freeze decorated cakes. I keep them refrigerated and then deliver them right out of the fridge so the icing is solid while I'm driving with it. I guess I’ve always done it this way so that’s just how I continue to do it because it works for me! I feel like they are sturdy enough to help carry the cake. But they aren’t as stable as thicker cardboard boxes. I’ve never used taller boxes. Is that what you do?

How long do you have to travel with it? I would most likely put them on when I got there. That eliminates the possibility of them falling off and ruining the cake during transport. Just bring the icing in a bag.

Hi.. I made a fondant cake with chocolate ganache layers. It was hot sunny weather , so while traveling to the delivery location , the fondant melted, cracked and tore from the middle and my props dropped down. Basically , the cake was damaged. Please let me know if buttercream frosting works better in sunny weather or any other tips you have to stop the fondant layer from melting and breaking. Thank you

Hi! When it is hot out, you have to remember that chocolate and butter get soft pretty quickly. So you want to ice a cake in an icing that will hold its shape. I make an American Buttercream that has shortening in it. Shortening melts at a higher temperature so it holds up longer in the heat. I wouldn't ice a cake in an all butter icing or a cream cheese icing, especially in the warm months. What kind of fondant did you use?

Hi Odelia! You need to have air conditioning in your house if it is hot outside and you refrigerate your cakes. It's all about controlling the environment the cake is in. I LOVE deliveries from October - May! (Assuming you live in a cooler environment in those months.) When it's not hot and humid, I will take the cake out of the fridge and put it right into the car. If it's cool out (60 degrees F or less) I don't need the air conditioning. I usually tell people to let their cake come to room temperature for at least 2 hours. But with a naked cake, you'd probably only need an hour or so.

Thank you so much for this video! I have recently made two, two tier cakes and both times the top of the cake slid and the second time the cake slid off some from the bottom too some! I didn’t refrigerate it which I think was my first problem icing wasn’t cold enough. Second I put in a large Walmart box, had it on my seat and didn’t use nonslip mats so I see that was another issue! What other reasons would the top fall off

Hi Karolyn! I have to deliver a 2 teir cake on Saturday. I bought a cardboard cake carrier so I can put it in the fridge and all. It will have fondant decorations on it and I'm afraid it will get sticky. What do you suggest to do wrap the entire box with plastic wrap { there is no windows in it} while its in the fridge and traveling>? My husband isnt a real slow driver so Im worried the whole time. I will have a center dowel and support rods{wilton purple } and both are filled with either pb filling or raspberry? Do you have any suggestions on storing transporting and what to do at the venue which is a vfw? Please help Thank you

You have to gradually bring it to room temperature to reduce the chances of condensation. And the car has to have the air conditioning on blast. It may not be cold when you first get in there (make sure you start the car a few minutes early with the air on to give it time to cool down), but it will get colder as you're driving. You must drive with care when you have a cake in there or it could get messed up. And does the VFW have air conditioning? I would call them to make sure.

I live in Jamaica so its hot i have work on cake 1-5am in the early morning i do not have AC. My refrigerator broke so i only have my Deep freezer i Turn it off and keep my cake in a carton box in the freeze while working on it and deliver in the carton box too. As the deep freeze cool down so does my cake and in some case i delivery cake with soda bottle ice in box so it slowly cool down.i. only at fondant details when its about to be picked up or delivery. I can only do 2 cakes per order its a challenge but 90% of the time my cakes does not sweat

I love this!! So there's always a way to make it work, even without AC or a refrigerator! Bringing the cake to room temperature gradually is really the key!

@@KarolynsKakes yes but i can not start off the process with a cold cake. I have to bring my cake to room temp and frosting too(which is a must), then i start the carton box process.. I use to have sweating cake but i gradually learn to work with the heat..Some people put the carton box also in a black garbage bag which i have never tried.so you can share on your channel and test the process for yourself too

Is it okay not to put any ice pack or dry ice on the box of the cake on winter? When transporting the cake for about 1hour? Usually the outside temperature is 12degrees

I'm assuming you mean 12 degrees Celsius? So that would be around 54 degrees Fahrenheit. I have no problem transporting cakes at that temperature without the air conditioning on.

It is possible. However, I would recommend that the cake is prepared to ensure a successful delivery. I would recommend that it is covered in fondant as buttercream cakes can form hairline cracks when they are in the car for too long. And the fondant helps protect it from getting damaged. Also, I would make sure the air conditioning is on blast! And let the customer know that it is a little risky to drive with a cake for that long. Good luck with it!

It depends on the fridge. I had a venue refrigerate a cake after I dropped it off in the refrigerator was too humid and it ruined the cake. So you have to be careful with that!
