Going to send this recipe to my sons girlfriends to make for our Father’s Day dinner. We are still social distancing , max. 10 for family dinners. This is SUCH a great recipe! The best I've ever made cupcakes. Cake was moist & buttercream was light & fluffy. My variation was instead of putting the chopped cookies into the batter, I put one whole cookie at the bottom before scooping the batter. Everyone loved that extra crunch & cookie surprise. I would use regular oreos instead of double stuffed for obvious reasons. I can't wait to make these again!

TIP: Add a couple of drops of purple gel food coloring to counteract the yellow in your buttercream. My sister is a hair colorist and you do the same with blonde hair. I do this with my icings all the time and it works great. Hope this helps someone!
