For anyone who needs it: ½ cup buttermilk ½ cup cold coffee 1 tbsp less than ½ cup of oil 2 small eggs Just combine 7/8 cup sugar Little less than 1 cup of flour 1/2 tsp Bicarbonate of Soda 1/4 tsp Salt 1/3 cup cocoa And choc chips Put dry into wet and mix Line tray and bake at 160 c and bake for 22 mins To check to see if they are ready, see if they are springy

I made this last night and the cake turnt out SUPER MOIST. I love it. In order to make it kids friendly, I replaced the coffee liquid with chocolate milk so it was 250ml of milk in total. Thankyou. Love from Indonesia.

I tried these cupcakes as a small gift to my dad on Father's Day. He loved it so much, I changed the recipe a bit, I used the oreo cream instead of a double cream for the filling. It turned out super amazing 😋❤

I made oreo cupcakes yesterday using this recipe and they are so good. Few notes, I used regular cocoa powder (not dutch processed/alkalized). Regular as far as i know is ligter in color because we need that acid factor in cocoa to react with the baking soda (idk if the acid in buttermilk and coffee are enough).. And I made swiss buttercream + crushed oreo cookies (also from cupcake jemma) because american buttercream is too sweet. Just sharing 😊

Made these last night! I used Van Houten black cocoa and the cakes were BLACK, not dark brown, completely black. Slightly strange looking and not what I'm used to but whatever the taste matters more. The cake is really nice, moist, and spongey almost squidgy actually. I didn't use the chocolate chips in the cake batter as I didn't fancy it. They are abit oily though, the oil was seeping out through the cupcake case so if I were to make these again I may reduce the oil. The whipped cream filling just completely dissolved into the cake lol. I don't know if it's because my cake wasn't completely cool but I suspect that is the reason. I put the insides of the oreo into the whipped cream also and added vanilla extract. It tasted really lovely it's just a shame it didn't stay that way inside the came. Overall though they turned out super nice moist and really similar in taste to an oreo. Thanks for sharing the recipe! :D

Just made these & it’s the first time a chocolate cupcake recipe has worked for me!!! They are so easy to make and even more delicious. The coffee adds a beautiful richness to the chocolate, I even found a dark cocoa. Wish I could add a picture!

I made these and they were so yummy! I used the smaller side of a melon baller to get the hole in my cupcakes! Just a little tip... Thank you Sally for your wonderful tutorials! You guys have brought my baking mojo back! My husband loves it, but is telling me to slow down😂 Another tip about the buttermilk is I was able to get my hands on a powder buttermilk mix. All you have to do is add water to it. Sounds “unnatural “ but I assure you that it is all natural 😉

Hi Lisa I struggle with converting the grams so my measurements are always off. Do you know how to convert the grams to cups or oz?

Phatgirl9703 I do, but I guarantee you will get much better results in grams than cups. Scales to me, were very intimidating at first. Now I cannot live without them. I have always been a methodical baker and loved the process of measuring out each ingredient so it is ready to go into the recipe. It might make extra steps, but you will thank yourself later, for example if you make an Italian buttercream or caramel. Boiling sugar is not to be neglected by measuring ingredients after it reaches the correct temp. Just trust me on this! If you do decide not to use grams, you can google a conversation from grams to cups. Good luck and I hope this helps ❤️

I love the C&D bakes, but they're much too sweet for my liking, especially the buttercream. But I'm worried about just leaving out 1/3 or 1/2 of the sugar...??

Well I make buttercream, I taste it as I’m adding the sugar. I find that it will be much less sweet , make it to your own taste

In my experience, what’s best to do is add the sugar little by little until you get the perfect consistency and forget the milk completely. You may also want to try adding a pinch of salt to offset the sweetness!

That's exactly what my question was! When we need milk to loosen it up, doesn't this mean we could use less sugar so get the same consistency that we would get after the milk is added? 1/2 less sugar is too much IMO. It tastes like sweet butter that way. I'd start with 1/3 less, and maybe add some more later to make it 1/4 less.

My go to is always swiss meringue buttercream, a lot less sweet than other buttercreams and still tastes SO yumyy! When I make it I use 2 eggs whites , 150 g of sugar and 200 g butter, vanilla, salt. Comes out perfect every time and not too sweet at all ;)

i just made this and here is my review: The sponge is absolutely insanely good. like the best cupcake sponge i have ever made, and ive made a lot. the filling on the inside is also great, but a bit bland, so i added another teaspoon of powdered sugar and a splash of vanilla extract. The oreo buttercream was absolutely awful. the amount of sugar put in is sickening, so i had to add some vanilla and cream cheese and melted white chocolate to make it edible. i would recommend the oreo mousse lifeloveandsugar's ultimate oreo cheesecake recipe, its not as sweet and a lot better. but the sponge is to die for! i baked mine for 23 mins and it was perfect and moist.

You can put your piping bag in a cup or tall container while you fill it, just bend tip up so nothing goes through. one way you can eat a cupcake without frosting mess, take out of liner rip in half and put the bottom ontop. I wonder how this would turn out using biscoff cookies

I'm gonna sound stupud but I would've assumed all modern ovens were fan assisted? I can't see what the advantage of having an oven with uneven temperstures would be? I'll probably ponder this more whilst making/eating this delicious recipe
