I’m the pastie queen in my family. Pie crust used to terrify me. Every fall my mom and I would get together on a weekend and make pasties for the winter. She would do the crust (pie crust) I would do the filling. We made a great team until 2004. She was diagnosed with lung cancer and was on oxygen. She still wanted to do our pastie weekend. She could on,y walk me through it. Little did I know she would be giving me the greatest gift. I was thrown into crust making. The first few were a disaster. But by the end of the weekend I was hooked. Now I love making pies. Up until last weekend I had never made a lemon meringue pie in my life. Like when mom showed me the first one was a disaster…it was soup. Second one was a little better…but I had hives and cold sores…apparently I’m a little allergic….but that didn’t stop me. Four days later, armed with Benadryl, my third lemon meringue pie was near perfection. But now I want different crusts. I like your butter vodka crust. My pastie crusts have vinegar in the which makes them flakey. For this last lemon meringue pie I put lemon extract in the crust. But I wonder how great it would be if you replaced the vodka in the crust with Italian lemon cello? I’m going to make one for Mother’s Day and share it with my favorite aunt who is Italian (she married into our family which is mostly German…but we love her cooking), I will let you know. When I was working in a bakery we used to "paint" our dessert pie shells with hot, strained apricot jam, or current jelly depending on the filling and letting it cool before filling. Needless to say, this trick was only for filled pies, not for baked fruit pies. It acts as a barrier and helps keep your crust nice and crisp.

I find that if you dry mix the sugar and cornstarch first, it helps with having no lumps of cornstarch.

Dry mixing the sugar and cornstarch is best. Second best (if you forget and add the lemon juice to the sugar before adding the cornstarch) is adding a small amount of the lemon juice to the cornstarch in a small bowl first. This will allow you to dissolve the cornstarch without having to search for lumps. Then add it into the pot.

Looks delic! My mom's fav. When she was going through chemo, she lost her tastebuds but for some reason she could taste lemon meringue. It was the one thing that made her day and we made sure she had it every day. FYI-shes been in remission for a very long time but still LOVES this pie!

Here are a few tips if you guys wanna make dis If you don’t have a food processor, you can totally use a kitchen aid stand mixer, works fine Don’t have vodka? Use some more water/butter Don’t have that pie crust bowl? I used a cupcake tray to make mini pies and they turned out just fine DO NOT put the amount of sugar that John puts in the meringue. It will make it WAY TOO SWEET (if u like it it very sweet then sure use that much but if it’s too sweet just remember it was ur fault) Use about 3/4 of a cup in the meringue because you will add another cup later in with the syrup. If u don’t have a thermometer then don’t worry! Just keep it on the heat for about 1-2minutes after it starts boiling and the bubbles are as big as Johns

I'd like to thank you for showing how to make the lemon filling, something I have not been successful at. It's why I always used canned filling, which is very good by the way. I heat the filling in the microwave before adding to the cooked shell. I'll be trying this method to make the filling now that I've seen the video. Thank you for making the vid!

Made the lemon part yesterday and the meringue today. I used a store bought Graham cracker crust so it's a small pie but the meringue made so much it's literally 4 times taller than the lemon part 😂😂😂 I sampled the filling and meringue while making it and both were delicious. It came out delicious. The lemon curd at its perfect thickness.I used lemons from our own garden, the intense aroma was beautiful The dough came up to be alittle scarce for my " molde" but I spread it a little more. We added some Italian meringue made with the two egg whites that were not used. Thank you from Buenos Aires.

Hi, i just made this this afternoon! It worked really well, this is my 2nd time making lemon meringue but your recipe is much better than the one i used before. Can i ask, how would you tone down the lemonyness in the curd? My mum has sensitive teeth so she doesnt like how potent it turned out. Would i add more water/ less lemon juice? To make a meringue pie, always make sure your filling is very hot. To do this, heat the filling it in a bowl in the microwave to get it hot. Make sure your meringue is ready when you pour the hot filling in the cooked shell. The hot filling will prevent the meringue from weeping and turning to water beneath it. Spread the meringue all the way to the edges. Make sure it touches the edges or you will end up with a hockey puck in the center of your pie. In an oven set to 325, place the pie and watch it. Shoot for 20 minutes to brown your meringue and COOK it! I'm 70 years old now, and this is how my mother taught me to make a meringue pie. I guess this goes back maybe 100 years, and it always ends in success.

John, it's always a pleasure to learn and be entertained all at the same time!! Recipe came out great!! As always! Thank you so much :) If I may share a tip, from a clumsy/messy baker to another ... When it's one of those days, I crack my egg in a third bowl without even bothering to separate it with the shell. That's usually the step where I break the yolk if I'm especially "thumbsy" that day :) Then I just pick up the yolk with my hands, dump it in it's bowl and do the same with the white. Remember that International Pi Day is 22nd of July! You gotta do a special pie for that day!

i just learned what this day was. to pass it on: this is Pi approximation day, because the fraction 22/7 is a close approximation to Pi that was commonly used.

@@90sbabe47 ah, but March 14 is National Pi Day, because most of the world writes the date dd/mm, very few countries write it mm/dd like we do here in the states. I point it out because a) he's been making an effort to be more international with his measurements and b) my birthday is July 22nd.

I just stumbled on John's video for Pavlova and l became addicted l love his videos. I was also making a cake and l made the homemade cake strip with wet paper towels and foil, what a game changer l will never bake a cake without them . I am definitely a big fan keep the videos coming!!

Is the lemon filling tangy and sour instead of just sweet, bc that would pair really well with the sweet meringue

Hence ...the ...recipe.....lemon.....tart and sweet and lemony and the meringue lightly sweet clouds gently napping atop the thick smooth yellow sweet tart citrus curd....lemon zest with lemon oils and a nice tid bit bite ...nomnom.

Every time John uses a knife on something he is holding my worry level spikes. If he's talking at the same time it rises off the chart. It's not that I think he is clumsy...let's just say there are an awful lot of oops moments in his delightful videos.

Did this last night for Easter dessert today, but was sooo frustrated because the cornstarch just didn’t work for me, and the mixture would not thicken as I was whisking for so long. I think I did something wrong or something but I decided to add in some flour and it thickened perfectly. Of course, tiny little lumps of the cornstarch but I’m still happy with it and it was my first time doing this. I’ve done so many different pies but never attempted lemon meringue, and loveee John’s recipes, the cornstarch just didn’t agree with the mixture, but flour turned out okay and the butter did make it super silky smooth! I zested three lemons, it had great flavor, just a little too sweet to me, so I’ll also lesson the sugar amount just a tad, but overall good pie. Even zested some on top of my toasted meringue. Family loved it. 🍋 🥰
