I buy my molasses from the sugar factory here in Barbados. I love it. One teaspoon in hot water taste like coffee and it is good for anemia ( in my personal experience).

Molasses is a byproduct of the sugar-making process, and it comes from crushed sugar cane or sugar beets. First, manufacturers crush sugar cane or sugar beets to extract the juice. They then boil down the juice to form sugar crystals.

I just made these. Wow! Maybe the best cookie I've ever tried to make. I grew up in 'The South'...so there was always a jar of molasses on the table when buttermilk biscuits & melted butter were served. So I LOVE the taste of even a spoon full of just plain, ole molasses! I didn't have any ground ginger but I did have some beautiful candied ginger & I chopped about a half a cup & added to the mix. And I can NEVER have too many warm spices so I added allspice, nutmeg & cloves. I always loved lemon &/or orange sauce over warm gingerbread so I added some fresh (I have loads of citrus in the garden!) blood orange & Eureka lemon zest to the mix. WOW! Canada here. I use Cosby's Molasses. They have many recipes for using molasses. My husband loves carrot sticks sauteed with molasses and butter. So many recipes to use molasses. Yummm Oh btw, love the recipe for soft gingersnaps.

Love molasses! I grew up in Nova Scotia where the molasses jug was always on the table. After a meal a fresh slice of homemade bread topped with Molasses was the Norm... Molasses cookies regardless of time of the year were a staple in the pantry. It is so healthy source of iron, selenium, copper and calcium all good for bone health . 1 Tbsp.Blackstrap molasses contains 20% of the iron you each day. Yes and as stated below good for anemia...( personal experience as well)

You're obviously not southern. LOL!!! We love a hot biscuit slathered with sweet butter and covered with molasses. Good ol' Blackstrap Molasses! And, yes, we think it's very "tasty". I've been making these cookies for over 30 years. They are our favorite Christmas cookie. In fact, we call them "The Christmas Cookie". I make the cookie dough, roll it into balls, coat it with sugar, and freeze on parchment paper lined cookie sheets. I store the frozen dough balls in Ziploc bags so we can bake a few at a time as we want them. I have six dozen dough balls in the freezer right now that I made three nights ago. They don't last long so I make a double batch each time. They are good anytime, but they are especially good at Christmas. As a matter of fact, I think I'll go take a few out of the freezer right now and bake them for us to have as an afternoon snack with a glass of milk. Try a good hot homemade biscuit with some butter and molasses. You can thank me later.

Archway in the 90s made molasses cookies so good! They were soft, chewy and would stick to the paper. They literally don’t make them the same now they’re coated with sugar and even the soft version is hard relative to the previous version….💔💔💔

Guage number is how many scoops in a quart...so a 24 will give 24 scoops from a quart of dough. A 70 will be a smaller scoop....yielding 70 scoops from a quart.

I made these cookies today and they are chewy and delicious. Thank you. Only one problem-->they dont look like yours; no cracks. Maybe because l used no brown sugar but molasses and organic raw cane sugar. I wanted to make them as healthy as possible; even using a range-free egg. M L okay so I made it, but I kind of messed up the recipe 🤣 I pulled out the 1/3 measuring cup instead of 1/4. It called for 3/4 cup of sugar, accidentally did 1 cup 😳 and I added more spices. In total I did 1 1/2 teaspoons of cinnamon, only 1/2 teaspoon ginger, 1/4 teaspoon nutmeg, and 1/2 teaspoon cloves. Even though I kinda messed up, IT WAS THE BEST COOKIE EVER! It was perfectly spiced, and made big chewy/soft cookies. I baked for about 10 mins and other than the spices and the sugar, I followed the recipe EXACT.

I know this is a no chill dough recipe but due to how my dough came out there was no feasible way to form my cookies. I chilled my dough for just over an hour and it was so much easier to work with! The cookies came out great as well! If you have this issue, I suggest taking this extra step.

In case anyone is curious, the cookie scoop number is the number of cookies yielded by one quart of batter using that scoop. Use a #24 to get 2 dozen cookies from a quart of batter. Also, a cookie scoop is ill suited to scooping hard ice cream. You'll break the sweeper if you try.

I just made these without adding the brown sugar. (Operator error) but I'm telling you, while they are slightly less chewy, they are light and wonderful. I would decrease the stronger spices like ginger and clove just a hair, but then would totally give them to someone with diabetes or on a diet. They are spicy but so light

Hi there John & family! Happy holidays!🎉 Molasses comes from sugar cane. Once it's processed, it turns into sugar. In fact, brown sugar is granular sugar w/ molasses added to it. I'm Panamanian, and down here folks add it to coffee, lemonade (instead of regular sugar). One interesting fact, if one has an opened wound, one smears molasses several times a day & after a few days, voilà, the wound will be cured. The secret? Iron. Molasses is full of iron!
