Hey I don’t know if anyone will read this but as a 15 year old who rarely has time for anything other than school wrestling chores and some occasional gaming this channel is so insanely cool I’ve made cream brûlée using this guy’s recipe and it turned out great next I will definitely be making some carrot cake

You sound like a very impressive 15 yr. old and I agree with you. I have become so much better in the kitchen, thanks to John. My mom told me, “better warn your significant other, you’re a box, bag, or can, cook!” She is literally eating those words now! I’ve even made his pita bread! I made these rolls today to try the recipe before the holiday. I put in a tad extra milk and I didn’t have instant yeast. So I bloomed the yeast then followed the recipe. The extra milk problem was solved using what I learned watching the video before baking. I kept testing the dough with my finger tip until it moved from sticky to tacky! That worked perfectly and the rolls were delicious pillows of perfection! The videos are so interesting and informative. Love this channel.

I (American living in Germany) made your pancake recipe for my international friends recently and they were Amazing. I couldn't remember my standard recipe but when I saw you had one I knew it was going to be good. It's definitely my new standard pancake recipe. I made these twice and the first time they were amazing but the second time was even better because I divided the dought into 21 rolls instead of 15. Changed the texture for the better!!

Thank you for this recipe John ! I made the overnight version with whole wheat flour for Thanksgiving and had many compliments. I did have to bake them for about 12 minutes longer than the recipe suggests, probably because my house is so cold. Next time I will let them sit out for more than an hour before baking. And, yes, they were "pillowy soft" ! I hope you and your family had a wonderful Thanksgiving.

You made a good point. People want that ball to form right away and that’s not the way it works. I’m glad you pointed that out. They think that if it’s too sticky they have to add more flour instead of waiting.

I tried out this recipe today but used active dry yeast. I let it bloom in the milk and some of the sugar. It was a hit with the family. There are only three left now and they will not last to tomorrow. 😁 Gotta make another batch tomorrow since it is one of the only things my sick family member can stomach right now.

I processed the dough into balls, let rise again, then backed and OH MY GOODNESS - these were soooooo good. Will be absolutely my new go to roll recipe.

Hey there John. You have been reinspiring my inner baker. In many of your videos you encourage viewers to experiment with flavors and ingredients to make the recipe our own. I have been researching a lot about what the ingredients do and how they interact with each other, how ever I think Im researching as my Virgo self (over analytical and making this more confusing with too much information), but my Libra self just wants facts, comparisons, ways to maintain ingredient balance, and logic to understand the science behind baking (born on a cusp). You are really amazing at explaining dos and donts, fixes, substitutions, and giving recommendations. Can you create a post (or classes) that explain the science of baking. For example, I have a hard time figuring out substitutions for liquids such as water vs melted butter (considering fat/oil isnt in water), and if I wanted to add sour cream to a recipe, do I reduce milk or water? If so is it a 1:1? I have other questions such as what is a good substitute for cooking oil in a cake and is that an equal substitution. I dont want to learn to bake from scratch by copying other baker's recipes, I want to understand how to best use the ingredients so I can experiment and create something different or new. Thats what has me excited about not using cake mix from the store. If this isnt something that would work with your schedule, are there any books you would recommend for me to read that simplify baking science concepts other than Baking for Dummies 😁? Is this information in your cook book? Thanks a bunch, Takeya.

Yanno what I've been doing, for proofing....I get a smallish sauce pan of water and heat it to boiling, then set it in my cold oven. I do that first, and just let it sit in the oven. By the time I'm ready to proof my dough, poof! The oven is ready, I just set my bowl of dough (I cover the bowl with a dry flour sack towel) inside. In MY situation, this has worked perfectly for years (note: keep an eye on it, because the dough might rise faster than 45 mins; I've learned to take the pan of water out or leave it in depending on the ambient temp in my kitchen). (PS I have an electric range, so bear that in mind.)

i'm going to make these on thanksgiving as well. If you look at this recipe on John's website, he gives instructions on how to make them ahead of time. You have to use active dry yeast instead of instant 😁
