I absolutely love this channel. I watch some others, but only consult with Jessica on all things homesteading. She makes it so easy for me to understand because she explains things calmly, simply and right to the point. No stress. So glad you were successful this season!!!!

Gosh, you're such a hard worker!! You should be so proud of all your accomplishments...and you do it with 8 kid's...and homeschooling!! I get overwhelmed by how you manage all your different hat's. One day when the kid's grow up and you are older you will look back on these day's and wonder how you ever did all that. It's those moments you realize how God carried you through and made you able to accomplish so much. I hope you have a wonderful day and thank you for inspiring us to preserve even the smallest things. Every little bit counts.

You're right donnacochran3335. I was never the hard worker Jessica is. Nor did I have the number of children or homeschooling that she does, but I did do the gardening, canning and freezing. Now, at 76, I canned 5 quarts of tomatoes last week and it took all day. In my younger years I'd do 20-30 quarts in a morning and move on to something else in the afternoon. Each season of life is good Jessica, so enjoy them all as you go through them.

When we were canning for the whole family, we kept an inventory list on the fridge door when we took our canned goods to the cellar. We marked them off as we used them. Sure, we forgot sometimes, but it saved trips down stairs to see what we had when planning our meals. God bless you all!

Good idea. We have inventory sheets on our deep freezers so I don’t go diving in there getting frostbite looking for something that’s in another freezer or gone.

My garden burnt up in July so I haven't been participating in the every bit counts challenge, but I still really enjoy watching you. Just found out I'm 5 weeks pregnant with baby #4 (which will make it 4 under 4) so I turned the every bit counts challenge into a "get as much food prepped and into the freezer before morning sickness hits" challenge 😂. You've really been an inspiration!

I remember those days! It's a beautiful chaos, looking back. In the moment it can be difficult. Your children will be great friends as they get older. I get a text sometimes say all three we out together and they had a great time. They are 28, 27 and 24. Two boys and a girl. So, savor these moments. They are over too quickly. Also, take all the pictures and videos you can. You think you will remember more but time is a thief...as you age your memory isn't as sharp as it once was. However, show someone a picture of themselves or a child, an event, most of the time they can describe that moment in vivid detail. I worked with memory care patients for 30 years and it never fails to amaze me. Pictures are a gift to you and the recipient. Congratulations!!! Ginger a thin slice under your tongue is good for morning sickness. Also ginger ale and apricot nectar... about the only thing I could keep down for the first five months of the pregnancy with my daughter. Maybe this pregnancy will be the one that you don't have morning sickness 🙏

Omg…you should see my kitchen and dining room. These two rooms are connected, so I’ve flow right out to dining room! I have canners pots & pans, ball books all over the place, measuring cups, and tomatoes and peppers on my dining room table. It’s all clean, but man…am I busy! Putting away these things is more work than just living with the “mess” (to me it’s not a mess). I’m water bathing, pressure canning and dehydrating daily. It is a blessing!!

When you said you would “shop” your canning shelves for meals, I remembered as a little kid Mom sending me to our cellar for the home canned goods and stored vegetables for our meals. That was a sweet memory to have pop into my mind! Our meals were home grown, home canned foods that Mom labored long and hard to have prepared for her family of 6 kids. I watch your videos and think of my Mom. You are giving your family a healthy life. 👍

Wow, your cellar is coming along fabulously!! You have been rocking your way through all of the produce! Great job. You have me feeling like I need to step up my game. Today is beets, leeks, sweet potatoes in the freeze dryer. Sweet pickle relish, pickled peppers and onions, and roasted tomato sauce. Fingers crossed 🤞., I will get it all done. I used mouse pellets to keep mice out of my mylar stored in totes, I put a small container in the corner out of the way.

Mice also don't like light, open spaces, I have observed, keeping doors open, lights on frequently moving things around really seems to help. There are heavy duty black, and yellow storage totes that mice " won't" chew through at Lowes etc. They are SUPER nice and stack really well! If I started again I would buy smaller totes, so I can unstack/ move them around easier.

They also carry the heavy duty, black and yellow totes at Costco. I’m not sure, but Sam’s Club may have them as well. They go on sale a couple of times a year at Costco, also.

We use the same totes in our camper! All food except in Tupperware and all blankets, bedding and towels go into the totes in between trips. Saved us several times

What a lovely space for food storage. The cold storage room is perfect! You guys are doing good work. Thanks for sharing the inspiration! My food preservation was a bust this year due to first trimester woes. I expanded my garden to 5000 sq/ft. I was not expecting to get pregnant right in the middle of harvest season. Such is life!

Good morning my dear friend, easy to see how all the food preservation can become overwhelming, but you are pushing through, you go girl!! The cellar is coming along nicely, so happy for you for the extra space. Recently read an article about mice, they don't like the smell of peppermint essential oil, messes with their senses, dilute with a little water and spray around the cellar. See you on Sunday!

My goodness! I feel s o proud of myself when I pressure can one batch (7 quarts) of soups, meats, or other meals. Just the prep, processing, and clean up take the whole day. I’m 73, so no kids at home , and I’m working in an air conditioned kitchen. How on earth do you do all this??? By the way, I also use my vacuum sealer with a special attachment to seal Mason jars full of dehydrated fruits and veggies with the canning lids and rings. This extends the shelf life and the jars can easily be resealed if you open it for a portion of the contents. I use the same process to keep other purchased pantry items fresher. You are an amazing woman and such an inspiration.

The basement storage looks great. Now you’ll have more room for food preservation and more kitchen space. Maybe a weekly list of the items that need to be used will help since the food items are not in sight. You can then do your meal prep from that list.

You make me feel so lazy but inspired me to garden this year for the first time and I enjoyed it so much more than I thought. And now you’ve convinced me to get over my fears and try my hand at canning next year. Making my own salsa and pasta sauce was so satisfying and better than anything I’ve bought from a store and so now I want to do even more. So a canner is on my Christmas list . Thank you for all you do,you are inspiring so many people not just homesteaders and people already living that lifestyle.

Amen on the cellar being far enough along to start using it- a beautiful blessing indeed! I pray that the overwhelming feeling lessens for you. I'm in the thick of it myself, so I can relate. I remind myself that this too shall pass. And I remember to thank the Lord for my blessings, even when I'm grumbling about the tasks. I'm very thankful that I can still preserve my hard work- that the good Lord allowed to grow. God is good- all the time! God bless each of you!

I love hearing how you dealt with the overwhelm, learning how to prioritise and what minimal things to do, in order to still preserve or 'save for later preserving' that you did. I completely feel that overwhelm. It usually hits around mid September for me. My garden tends to have one last big hurrah and everything becomes ripe during that time. That being said, I bought two bushels of peaches last weekend and only had time to get through one of them so I've been canning after work every evening. I told everyone at the office that office time is my vacation from myself! :) Your new pantry is looking glorious! I just know the extra space will serve you well!

These videos are so therapeutic! I wish I could just come be your friend hanging out with you in your kitchen as you go through these processes and pick your brain for extra tips. Since I can't, I'll settle for these videos😂 I recently canned some spiced peaches to serve over our oatmeal or icecream. I did blanch and pull the skins. I dehydrated the skins and pukverized them into a powder then mixed in some sugar. We will sprinkle it on top of icecream, oatmeal, or use in our tea.

Added another batch of green beans and a batch of pickles so far this week. Also dehydrated apples and tomatoes.

The timing of this video is perfect. I was avoiding pie filling because I didn’t want to peel peaches. I don’t peel them for butters but I wasn’t sure about pie filling. Thank you. Now I have the confidence to make it with the peels on.

I got a great deal on the last few bushels of 2nds peaches and a bushel of plums and we just harvested several bushels of pears so I’m currently making peach hutter and spiced plum jam. The cellar is such a blessing. I’m very happy for you.

I used Cardamom,fresh ginger, clove, cinnamon, allspice and added a few pink peppercorns for a spicy floral note. A chai spice blend would be great for that combo. Fig and plum sounds yummy!@@shannonnewman9202

The cellar is starting to look good! Having a cellar for food storage is great, that's one of the reasons we love our house so much. The only problem for us is that it's also storage for a lot of other things right now. We really need to declutter it.

My mom used to make us kids 'snap' the beans after harvesting them from the garden. We always complained. When my mom came to live with us the last two years of her life, she complained about having to 'snap' the beans for me. We both laughed when I reminded her that I spent most of my childhood helping her pressure can beans. 😂

Your challenge got me collecting the lovage seed heads (first time ever! They work like celery seeds). I dried leek greens & ground it & have a jar of leek powder, made tomato powder with dry tomato powder. I still have Brussels sprouts, mint jelly, and beer greens if I decide to can them. My. Kitchen looked like yours until I couldn't take it and moved the jars to the bed in the guest room. Worked great until someone opened the bedroom door. And "what on earth!" Totally about chewing through thos plastic bins. At the preschool where I work mice chewed through the bins in our "bunker ". Not food bins just art supplies and toys.

I am like you, I have all my canning in my basement, which is actually better because it stays cooler and of course, dark. I know what I have, just everyone else does not know what I have, lol. I really like putting all my dried foods in jars, they keep so much better and if I do have mice, they can not get to it. I so enjoy watching your videos. I am 61 years old and have been canning since I was 20, and I am still learning about new foods to can or freeze. Thank You!

Your downstairs looks great. With this heat I have been concerned for you and your family. Ever since chemo I can not stand the heat. I am hot all the time seems like. Jessica, I love your basement / storage room, I so wish I was blessed with one also. As for your plastic tubs with mylar bags, You could raise them about 6 inches off the floor. That's what is required in food storage in restaurants. You could use the plastic totes that stores get the 2 liters sodas in, they are about 6 inches.

When i was in an area which i had to leave for months at a time, i covered a big box with chicken wire. The bush rats snd mice never got into it. Perhaps you could have the area with the plastic bibs and milar bags with chicken wire on the walls? I bet you look forward to winter when its a bit quieter in the garden🌻

Hi Jessica! Your such a blessing to so many. Thank you for your content and Godly wisdom. Another way to use up your pits and peels (for any fruit) is syrup! We brew our own kombucha so we make peach syrup and can in quarts. Same recipe as jelly but omit the gelatin. I just allow my peels and pits to steep in water and lemon juice and then I boil, strain and add sugar. For it to get really thick you need double the sugar of syrup (in cups.) however I know y’all use lower sugar recipes so you can use however much you like, just know it won’t thicken up as much. I water bath can that for 20 minutes! Pear vanilla syrup is delicious and sort of taste like cream soda! Maybe you can try fruit syrups for your next pits and peels project! It makes such a great easy kombucha flavoring for second ferment! I brew a gallon a week and I put about 1/2 C of this syrup into 1/2 gallon mason jar, add kombucha and allow to second ferment before moving to the fridge!

Wow! Great job! The cellar is looking so good! When we converted our workshop under the house into a cellar, we added crushed rock as the floor base. It’s nice and clean and allows for any moisture to pass through, also keeps dust at bay. We don’t peel our peaches either. We just scrub to get rid of the fuzz. There’s so much good nutrition in the skins!

I was watching the Mennonite mom and she puts one zinc tablet in with her green beans when canning. She said it helps them retain the nutrients and stay green. I have no idea if that is true but I had never heard of it so thought I would share.

I used those dry good containers in our barn for feed for our animals. Squirrels can chew through them. I did get the metal barrels as you mentioned for the large bags. We also just try to live trap and relocate the squirrels. Mice as well.

Bay leaves will help with mice & bugs. We keep our canned goods, food storage in our basement as well and I was told by an elder to put dried bay leaves in all our totes and misc around the area. I did and we haven’t had any issues. We live in the country in an older home. Maybe this can ease some of your worries…it’s easy enough to do. Love your canning & preservatives success!!!

Jessica, you are doing a fantastic job. I live in Louisiana and we can't have basements here so it is a challenge to store the large amount of food I can or buy in bulk. We turned an extra bedroom into a "home grocery store". I am just about at full capacity! I have the last big order for the year coming from Azure in a few weeks. I am canning venison chili today. Over the weekend or next week I am canning pinto beans. Lastly I will can some apple butter. I am exhausted from weeks and weeks and weeks of food preservation but it is all worth it.

A tip: The black storage containers with heavy yellow lids that you buy from hardware stores are pretty mouse proof if you prefer the shape of plastic containers. Not see-through.

You will love the cellar, everything keeps its color better in the dark cool space. Get bags of lime, I just get the carpenters kind and make bags from old sheets to control the moisture. It will take a bit to get to a controlled temp due to the cement but it will. 😊

Looks fantastic!!! My peaches are small cling peaches, and even when they are blanched, they are sooo time consuming to peel, so I also leave my skins. I actually like the texture, and no one in my family complains.

Walmart bakery dept icing buckets might be an option for you to store your freeze dried goods. Those containers are stackable and heavier than plastic totes and they’re food grade plastic. They’re only about three gallon’s and are rectangular shape.

I’m so happy for you Jessica. You’ll love your pantry. I know you know…just label what’s in those buckets and containers. Your right about out of sight, out of mind. But with your size family I don’t see that happening. You guys have worked hard to get that set up, congratulations dear..❤

We had mice really bad this spring in our high tunnel. I put two dozen traps in there and caught a large number in the first week or two. Now I get one maybe every few weeks, but I leave those traps set up to keep my plants safe. This would work in your basement too I would think. Just have to check the traps often, especially in the beginning. ETA I really love the new space. I think once you get used to "shopping" in there, you are going to love having all that room to organize your food in a way that works well for you.

I hope your garden fared better than mine did in last night's storm. This is my first year gardening here in Ada and I have to say, I'm close to giving up. My garden has been struggling with disease ever since the hail storm earlier in the season and now my corn and squash literally look like they got hit by a tornado. Ik corn isn't something you grow in your garden but any advice would be greatly appreciated. And thank you for all that you've taught me so far....I absolutely love your videos😊

You are one busy momma! You accomplish more in one day, than i do in a month. I am 68 almost 69, my canning hasnt quite started yet, but it will soon. Congrats on your cellar! I would love to have one. I have a large shelving set up in my garage. I have several freezers, but in the winter its my deck lol. I live in Alaska.

Jessica what you might want to think about on your freeze dried goods? Metal trash cans with tight fitting lids maybe you could figure out how to build a wooden bench to set one on the floor and another on top of the bench to "stack" I have 3 in my basement that I use for flour, sugar and oats I put in freezer bags then in to the metal trash cans. A determined rat could still chew through but it's a cheap alternative and better than the storage tubs. I got mine at Home Depot about $30 I think for the larger ones? Anna In Ohio

Thank you so much for showing us what you're doing with your basement! That will be such a blessing! I don't have the option of a dumbwaiter,, so I keep a few plastic bags, baskets, and mesh bags to bring what I need up. I have also been concerned about my plastic totes! The only other option I can think of is to use metal trash cans. When I was rearranging my storage this past winter, I discovered a peanut butter jar that had been eaten into! Broke out into a cold sweat!!

Want to thank you for tuning me in to your "old time" food strainer. I had a Victorio that leaked all over the place every time I used it and left a lot of pulp on the tomatoes. I tried the pan food mill and did not care for that either. The simple design of the old-fashioned strainer is by far the best! I can whip through a vat of tomatoes in no time with very little waste or mess.

I had a basement years back, and was clueless as to water seeping into the floor. After very heavy rains my basement flooded. I contacted the builder many times until I dragged his workers out to see it. They dug up the drainage pipes and extended them out 20 feet or so. And later I sealed the basement floors. Anyone new to home ownership really should do this task .as basements have valuable space. I can't can* , but a put stuff in the vac-seal and it works great. Always learning here 👍
