Loved this canning video! ❤ Newbie here. I tried to pressure can 5 yrs. ago, but I failed. I had jiggler canner w/ out a dial. I never got the jiggler to jiggle. I gave up & threw all the beef stew in the garbage. Now, I bought an electric Nesco canner. I have pressure canned chicken broth. Also, canned carrots 🥕. Finally, I’m successful ❤! Hooked on canning!!!

Thank you so much for the lesson. I have used a water bath canner for our tomatoes, but I just got my first pressure canner. I felt a little nervous, but felt that if I followed the steps, I'd be OK. I processed 7 quart jars of chili. Only one didn't seal. I think I may have gone over the 1" head space on that jar. Watching your video gives me a little more confidence. My canner is the All American. It's a little different. It doesn't have a rubber seal. That added a little more stress to my first processing; I just have to make sure my lid and canner have a light coating of Vaseline on the surface where they touch. Everything else is the same. Thanks again!!!
@AtHomewithMrsJoan9 ай бұрын
The canner you have is the cadillac of canners! Awesome! The way I heat the lids makes me feel it loosens the rubber a little and helps with the sealing process. Thanks for writing me!

I just watched your video on purple hull peas & you filled the pint jar up all the way and canned them for 40 minutes. Yet these pinto beans you filled up the pint jar with 1/2 cup of beans & canned them for 75 minutes. what is the difference?? Do I can my dry beans 40 mins. or 75 minutes? BTW, I absolutely LOVE your videos.
@AtHomewithMrsJoan9 күн бұрын
@@donnastevens7716 That's a good question. The main difference in the two is that the purple hull peas were fresh out of the garden, not a "dried bean." All dried beans pressure can 75 min for a pint, 90 for a quart. Fresh peas are 40 for a pint, 50 for a quart. You can watch my Canning Dry Beans video where I canned 5 different kinds. Because dry beans swell and soak up the water is why we use 1/2 cup on pint of dry beans. Fresh peas don't swell is why I filled to the 1 inch headspace.
