The locking mechanism loosened on mine after the 1st use, and I didn't realize it till me and my daughter were canning. I didn't know what to do so it came up to pressure and stayed there the whole 90 mins. The whole time steam was coming out of the lock. When time was up we waited for a while and when the steam was all gone, we took out our jars, they sealed, we washed them, and put them up. Then the next time I realized that the lock had to be screwed tighter. I am still hoping that the food is good inside the jars. All this was just to say, that no one has ever mentioned that the lock needs to be screwed in tight before use. Loved your video. I was so excited when mine arrived, but I was only able to find the 16 quart, which is good enough for me. Have a Wonderful & Blessed Day!

I know I'm a little late but I am so thankful for this review. I am looking at pressure canners and I was really wanting to get the Presto 23 Quart canner. I looked at the measurements of the canner and it said 17" so I didn't think I would be able to use. Then you showed the bottom of the canner and showed the actual setting surface and said it was under the 12" diameter of your burner. I had just measured my burner and it was 12" as well. So glad I thought to look this up on KZbin and found your channel.

I found this after all my research but glad you posted it. I, like you, called the manufacturers of both the stove and Presto and finally chose the 16qt due to the restriction of height of my microwave over the stove. The 23qt is 15.25" per Presto. I actually think the 16qt will more than suit my needs anyway.

Very helpful! You'd think that Presto would give the actual setting surface diameter measurements and that they would explain that there is a difference between the entire diameter of the canner bottom and the diameter of the setting surface. How can you know this if you don't actually own one? I was wondering how anyone with a glass top stove could use a Presto canner, since nobody has 15 inch heating elements on their stove and since I have a glass top stove, I'd pretty much abandoned the idea of buying a pressure canner before I watched this video. I've searched a lot on internet and you're the only one who I've found who thought of explaining this. Great job! :)

I love pressure canning my own chicken boy it saves time in the kitchen for getting food on the table and getting it done fast. Yes it has its limitations on what you're going to make with it but for the most part I find having a good supply of pressure canned chicken a wonderful addition to my pantry. I am one that chooses to par cook my chicken because I do not like how ugly it looks when you do a raw pack I know that's clearly for Aesthetics but to be honest you eat with your eyes before you eat with your taste buds and your stomach so if something looks unappealing you will not want to eat it

After much research I bought a 16 qt Presto and finally unboxed it and wow, it is big! I freaked out a bit because of the diameter of the canner, but saw the flat bottom is only a little over 7” - genius design! I started with water bath canning crushed tomatoes. I was ready to go with the Ball persevering book and the Presto manual and read that pint jars are the largest size for water bath in the 16 qt canner - back the store for more jars! But, I know the 23 qt is too tall for my stove/hood. I may look for a taller stockpot for water bathing quarts and enjoy the Presto for canning.

Be sure to google and check out the-- PRESTO 50332 3-Piece Pressure Regulator -- I bought one for each of my Presto canners (an old one from back in the 1970's and a newer one from the 1990's). Well worth the investment for several reasons. No more sitting at the stove and watching the pressure gauge! The burner, on my gas stove that I use for canning, can't be turned down low enough to maintain 10 lb pressure. So, I have to sit and watch and actually turn off the flame for a few moments, from time to time to keep the pressure from creeping up. This was a real hassle when canning anything that took an hour and a half! With this adjustable regulator, I only have to be within sight/sound of my canner, after it reaches desired pressure. Using the weighted gauge directions, it will maintain 11 lbs pressure for the duration by gradually releasing steam, as needed. I've checked it numerous times by glancing at the dial gauge. That brings up another reason for using it. If your dial is off, you'll know exactly how much. Setting the weight for 10 lbs means it will move when pressure reaches 11 lbs. Compare your dial reading to 11 lbs to know if your gauge is off and by how much. I no longer need to have my gauge checked annually. Our county extension office doesn't do it anymore. Now, I can sit in my den, at this computer and see/hear the pressure regulator on those long canning processes. Used to have to pull up a chair and sit within sight of that dial gauge. Yes, it is well worth the investment. Check out the reviews of it, for yourself. Hope this helps in your canning journey.

Thanks, Lee - my stove does alright with it, but I did grab one when I bought this canner, just in case. I still need to practice using it, too. I like having had to learn to watch and adjust so that I understood the processes, but it will be nice to near and listen than jumping up and down all the time :)
@Shelby28804 жыл бұрын
Oldtimer Lee it is recommended that you have your pressure gauge calibrated for accuracy once a year. Call your local county extension office. Someone there can do it for you. My county agent can do it remotely so I just have to call her and arrange a meet up since the office isn’t hear, but she is frequently in town. You can mail it to Presto and they will do it, but that’s a pain.

According to the manual on my Presto 23-qt., you can stack jars without a second rack. You need to get the pressure gauge tested and calibrated once per year and even before using for the first time. Your County Extension office can do this for you, or you can mail it to Presto. My county agent is mobile and met me to do the test on the spot.
@oldtimerlee88204 жыл бұрын

You'll just have to keep fidgeting and you'll finally learn where the sweet spot is for yours. The important thing is to find that spot and not let it flucuate a lot because that can cause siphoning. And if you find that it just doesn't work with your stovetop, which sometimes is just doesn't, you can purchase a burner from Cadco to can on.

I see the bottom of the canner has two levels (for lack of a better way to say it). Do you only use the burner that will heat the inner portion (where the ridge is)? Or do you the largest burner setting? My biggest concern has been the controls for my cooktop. They are electronic, not a dial. My cooktop will error code if it has been on a setting for a long length of time without being changed.

We have used a butane stove to water bath can. It is a fuel that can be used inside without doors open. I haven't used it for pressure canning yet, but have a glass top stove, so I may try it to see if it will maintain the pressure.

Darcy can i use my 925 All American canner on my glass top stove?
@ThePurposefulPantry4 жыл бұрын
They are not recommended because of their weight.

2 questions. Isn't that an aluminium canner? So you can use aluminium on your glass top? Hmmm! I saw French on the box and paperwork, you came to Canada to get your canner?
@ThePurposefulPantry3 жыл бұрын
Yes, I use it on my glasstop stove as per suggestion of the manufacturer, and nope.

I just bought one..it says pressure cooker..not canner. There's a difference?
@ThePurposefulPantry4 жыл бұрын
Yes - a pressure cooker does only that - cook. A pressure canner is needed for preserving foods in jars.

Darcy, I have in my Amazon cart to order tomorrow the book you suggest. BUT I have some mushrooms I need to can quickly. I don't know how long it will take to get the book. Do you have a video on canning mushrooms. I sware I have watched it but can't find now 😣😣
@debbieanklam20993 жыл бұрын
Darcy, I don't mean canning I want to dehydrate the mushrooms. I was listening to the video and writing and well that's what happens. Do you have a video on dehydrating mushrooms????

Thank you 😊😘

I don't have a video on it, yet. I have to wait for a good sale because i'll have to buy a ton of them. Just slice them, dry at 125F, and they'll be done within 18 hours most of the time.

@@ThePurposefulPantry are they really crispy or plyable when they are done. That is what I have such a problem with. I don't know what they are supposed to be like when they are done. I ordered the book you suggested that has all the pictures. I want to dry some fruit too but I'll wait for the book. I want some snacks!!!!!!! 😀😁😊

I knew that you can pressure cook with a pressure canner but you cannot pressure can with a pressure cooker. But, when I saw your insta pot I thought OMG! Could it be?! Nope. No it can't. Lol
@ThePurposefulPantry4 жыл бұрын
Unfortunately, nope, not by the safest standards.

Instantpot has a model for canning, would be great if people could distinguish the difference between that model and the others which are not for canning, instead of lumping them all together.
@ThePurposefulPantry2 жыл бұрын
None of them are recommended by the NCHFP at all.
@unnamed27372 жыл бұрын
@@ThePurposefulPantry they didn’t even look at this model and have said they will no longer make new recommendations anyway. So if you are waiting on them you’ll be waiting forever. Meanwhile there has been plenty of independent testing and approval fro a Canadian source. I myself use it and it’s been the most wonderful tool in my belt for quick small batch processing that I don’t have to babysit.

My glass top stove is old and I CAN NOT can on it! So I am going to another option!

From my Mom:. You talk about writing notes in your canning book but only sell an ecopy of your cookbook. I want a hard copy of all your books. What if grid goes down? I will buy all your printed materials, not e versions.
@ThePurposefulPantry Жыл бұрын
I don't have a canning book at all. I have a dehydrating book, and it is available in both ebook and print format. And any book that you have from anyone in ebook format can be printed off easily, either by you at home (and only print off the pages you need) or take it to a local printer/office supply that can do it for you). When I said your canning book in this message - it's whatever journal you use to keep track of your projects.

You better watch the weight. If you have the 21 to 23 quart size you may not be able to double stack it. I watched one ladies stove completely cave in from the weight of it. I have the 23 quart and do not double stack it. Only single stack and have had no problem.
