Hi Jeffrey! I’m a long time viewer, cookbook purchaser, but first time commentator. I’ve had a lot of fun with this one! I wanted to share a little secret weapon of mine (to return the favor) in that I added a dash of Asian chili oil at the very end. Wow! It created a subtle back end heat. Also, since this yielded great leftovers, here is what I did: I reheated a bowl and topped with a runny fried egg (so heavenly) and I wrapped the rest with shredded cheese into burritos and froze them for a future meal. I was looking for a crockpot or pressure cooker beans and rice recipe and found yours. I had to improvise a little with ingredients I had on hand, but it turned out perfectly. This was my first time ever making beans and rice. I used 2 - 12 oz beef kielbasa (left out about a quarter of one), canned dark red kidney beans, and white rice. I didn’t have any ham or pork broth, so I used chicken broth. I didn’t have Italian seasoning so I used freeze dried thyme, oregano, sage, & chives. I didn’t have any celery, so I used celery seed. I had a tube of garlic paste, the creole seasoning, an onion and a green bell pepper. I forgot and automatically stirred in the rice, but still cooked it, like you said, and it turned out great. My Instant Pot settings are a little different too so I cooked it on the rice setting. I had 2 guests over for dinner and they loved it. For some reason it seemed just a little salty to me even though I didn’t add salt and used light creole seasoning that has less salt but it was just right in the spicy taste. One of my friends said he would have liked hot sauce like your video shows but we were out. I even had some leftover to send a bowl of it home to my other friend’s husband because she said he would love it too, so I had no leftovers for later. Thank you for your recipe. It was delicious. Adding the bean juice really sold me! I could never understand those recipe's where they dump out the bean juice and wash the beans even! I just bought a 25 lb. bag of brown rice and it takes about 45 min to cook on a stove top. I'll try that 15min @ high pressure, THX.

I do it the easy way for red beans and rice. Open box, dump in instant pot, add required water, put on lid, hit rice button. Lol I love beans and rice. Black beans or red beans. It's very popular in slovak families. It can be my whole dinner. Sometimes, I add some kielbasa cut at diagonal or into small cubes. I'll try your recipe, too. It's good to have on those days I don't have the mix. And fresh is always better anyway. You should get a kickback for the Better Than Boullion. Because of you, I now have each flavor in my refrigerator. Huge difference in flavor! I also got my family hooked on it. Looking forward to your next book shipping out. I use many of your recipes. All yummy! FYI- I toss in my dry beans with my rice at the rice setting and don't have any issues. I use dry red or black beans. I'm not sure if that makes a difference.

I Love your videos, recipes, cookbooks and Y'all. I've lived in New Orleans for about seven decades. • Red Beans are served EVERY Monday in New Orleans. The reason for that is ... typically, laundry was done on Mondays. So you put on a pot of beans to cook, while you did your laundry. The seasonings were right on! Onion, celery, bell pepper (mirepoix) or 'The Trinity.' when you add garlic, we call garlic 'The Pope.' 😂 I also add a couple of Bay Leaves and a tiny pickled Tabasco Pepper to my beans. My son adds Andouille to his Red Beans Sometimes I add sausage, mainly I cook my Red Beans with Pickled Pork. But, like that sausage you mentioned ? that you can only find in the North ... my friends who no longer live in Louisiana, tell me they can't find pickled pork. Secret Tip: Add 1/4 stick butter at the end of the cooking time to make the beans nice and creamy. We do cook our rice separately from the Red Beans. No one I know adds Italian seasoning to Red Beans. But, I love Italian Seasonings so, I'm gonna give your recipe a try! 💓 We garnish with parsley and serve with Yellow Mustard, for that zing! Some crusty French Bread is always good! Like we say, "Hey, You Do You." 🥰 • YES, Mardi Gras did begin in Mobile AL. I really hope y'all get to experience Mardi Gras at least once in your lifetime. Or, twice - do a comparison Mobile vs New Orleans LA (NOLA.) Start making plans: • Tuesday, Feb 13, 2024 - Mardi Gras is always on a Tuesday. It depends on the equinox of the Moon - long story. The parades and parties (in New Orleans) REALLY kick off the Thursday before Mardi Gras and are Non-Stop. The key is to 'pace thyself'. 😁 Like we say in New Orleans, "Laissez les bons temps rouler" = translated means "Let the Good Times Roll!" 💜💛💚 Love Y'all! 👑

I'm originally from Ohio and lived most of my adult life in the Washington DC area. I don't think I've ever had red beans and rice. I figured out how to make red beans and rice about 2 years ago after using tips I got from your channel. I do it with dry beans though, cooking the rice separately like they do in the south (I lived in Louisiana for 9 years). I moved to Colorado 2 years ago and cook red beans and rice for the people at work all the time- they prefer it to the local Cajun place. This looks does look delicious though!

@@thewilliams7 Canned beans aren't awful. It only takes about 30 mins. for the beans to become more tender and if you season your beans properly, you won't find that "canned" after taste prominent at all. thanks for replying!

@@PressureLuck I finally got the chance to make this and I absolutely loved it! I think next time I might substitute the andouille for extra beans and then add some chopped rotisserie chicken from the store in after the rice cooks. I keep remembering from experience that I'm just not big on sausage but I always give it another try just in case. I think substituting the chicken would be better to my personal taste, but the recipe was fantastic! Thanks for all the inspiration! I've definitely become more adventurous with the Instant Pot since I started watching your videos!

I'm so glad that you've finally done this recipe Jeffrey. I've looked for other recipes for red beans and rice in the Instant Pot and there really aren't a lot out there. And with Richard being from the South it's always surprised me that you hadn't covered this yet. I think your idea at the end of adding a ham hock to cooking cycle would really add some good smoke flavor to the dish.

My only diff was I used a standard mirepoix instead of the trinity. Thank you for the video and the recipe. One question though - I've always thought you really needed to cook beans at least a little under high pressure to reduce the danger of the Lectins. Even with canned kidney beans and black beans, I have exposed them to 10 to 15 minutes of high pressure when making things like chili, just to be safe. Your thoughts?

Oh, whoops, you didn't use dry beans. Well, at least I know how much garlic and spices to use in my dry beans. The beans are supposed to be a little mushy, I put a stick blender in mine to mush up some of them.

If you can get it where you are, Slap Ya Mama (I kid you not, that's the weird name of the stuff) is another good southern seasoning. Just don't get the hottest one, unless you have an iron mouth! We learned of this from a cab driver in Miami, and we think he's right, best southern (NOT Mexican) spice mix.

I like my sausage browned, I think I would brown the sausage, then add oil and the veggies to cook then deglaze with broth adding sausage back then do the rest like you did. All the Red beans and Rice I have had the sausage was cooked separate and well browned

This is ok if you are wanting to make something quick and for someone who doesn't know better or never had. However, this would NEVER be approved in Louisiana....esp. in New Orleans. You are also missing key ingredients (take if from a southerner). If you want to improve this recipe, you MUST use black pepper, bay leaves and some sort of smoked meat like ham hock or pork neck bones. A ham bone would be a plus. If you don't like pork, you can use smoked turkey. Either way, you can't omit those ingredients. Finally, it's your preference, but down south you need more beans than rice and serve up some cornbread to go with it. If you use dry beans, New Orleans own Camilla brand is best! As my fellow Louisiana family would say, "ya heard me?!?!?" LOL! Thanks for your content....It's usually on point.

Agree. I just made this and browned the sausage first, removed it, then cooked the trinity in the sausage oil. I also added a few dashes or Worcestershire sauce to deglaze the pan before adding the broth. Turned out really well.
