Elk is my favorite, I just have a hard time finding it. Would buy more if I could find it local! Yes, the reverse sear method you showed works perfectly. I've done it. Easy peazy. Phenomenal results! IMO you over-spiced that rascal a bit. Just smear it once with garlic, shallots, salt, pepper, and a little rosemary. Done. The flavor is strong enough it doesn't need any more. Now answer me this... Reverse sear tends to keep all the juices perfectly inside the meat.... so how the heck do I make gravy?!?!?

Make a roux! In the pan you used to sear the elk, add butter (or a tallow) and that will add a really lovely flavor. From here you can use elk bone broth as your liquid to make your gravy!
