Want to spice up your lunch time meal prep? Try this Princes Spicy Tuna Sriracha Mayo Poke Bowl!
Serves: 2

Cook Time: 20 mins
Ingredients:
7 tbsp rice vinegar
5 tbsp water
1 tsp honey
½ tsp sesame seeds, plus more for serving
½ cucumber, peeled and cut into circular slices
150g sushi rice, cooked as per packet instructions
1 large carrot, cut into julienne strips
4 radishes, cut into thin circles
50g red cabbage, thinly sliced
2 tins of Princes Tuna Chunks in Spring Water, drained
2 tbsp Hellmann’s mayonnaise
1 tbsp Sriracha sauce
1 avocado, cut into slices
2 salad onions, finely chopped
Sriracha Mayonnaise for serving
Preparations:
1. In a small bowl add 6 tbsp of rice vinegar, water, sesame seeds and honey and mix together well then add the cucumber slices and set aside to pickle while you make the rest of the bowl.
2. In a separate bowl, add the tuna, Mayonnaise and sriracha and mix together well until fully combined then set aside.
3. Add the cooked sushi rice to a bowl or container then add the carrot strips, tuna, avocado, sliced radish, red cabbage and pickled cucumbers then squirt a generous amount of sriracha mayonnaise over the top and finish by sprinkling some sliced salad onions and more sesame seeds over the top then enjoy!
