I have a theory about the name"Princess Sandwich". It's an accidental name. Someone probably a parent needed to make lunch for a child. And pulled together left over ingredients to make a sandwich. Then when putting the sandwich in front of the kid said " Hear you go a sandwich fit for a Princess." And the name just stuck.

You're right, it's not haute cuisine. It's not fancy or elegant. It's comfort food on a cold wet night. Onions, potato, cabbage, carrot, and a good bit of sausage. Sounds good to me

There is no shame in admitting that the cookery of lots of northern EU is more comfort food than cuisine. There is a good reason Chicken Tikka Masala is the UK national dish, and why spices were imported into Europe for thousands of years. Dang, now I'm hungry and want a curry for breakfast
