At the risk of sharing an unpopular opinion: I like that BA is attempting to make indian food accessible for people across all backgrounds and make it less intimidating. As an indian, I see nothing wrong with this. I've lived in areas where there was absolutely no access to traditional indian spices and food. The local temple even had to use tortillas because they couldn't find rotis. It was frustrating and I had to make do with what I could find. I am incredibly happy that BA is opting for inclusion of more cultural chefs and recipes. It is really great to see POC bringing their cuisines to this platform.

well that's true except the temple was run by American volunteers and did not have a dedicated cook. Unfortunately a lot of smaller towns do not have the same resources, money, dedicated staff, or access to ingredients @@idek3881

my mom always taught me indian food is about the cooking style and the way you prepare it. there's a lot of different indian twists and spins on the recipes, but if you want to call it by a different name because it's not authentic enough for you that's ok. pav bhaji is just mixed and curried veggies after all. I'm just happy people are talking about Indian food that isn't just tikka masala. too many good dishes out there to argue about what goes in pav bhaji. @@amymendoza3340

Additional tips for people who want to try this: 1) Use onions, bell pepper IN bhaji for "street cred". Add less potatoes as well. You can include any other meaty and "indiany" veggies too(just find stuff in your fridge and throw it in) 2) Browning onions after oil gives it some sweetness and all the bhajis I've had in my childhood had onions that were cooked in, as well as some freshly chopped onion garnish at the end. 3) It is generally customary to add ground spices AFTER onion, not directly into the oil(as is done here) since it is much less likely to get bitter by burning. Additionally, it will meld into the browning onions imparting some serious flavour. 4) Olive oil gives indian foods a whack flavour since it jars against the strong spices. I prefer neutral oils like sunflower. Edit: typoes

Yeah, same as what kevin said, those smashburgers are amazing and my new favorite burger. It's like an in-n-out burger on steroids. I don't remember if this sauce was a part of her recipe or not, but a burger sauce made from equal parts ketchup, mustard, mayo, relish, then equal parts turmeric, paprika, garlic powder, and onion powder is amazing with it.

People saying this isn't Pav Bhaji are missing the point of Bon Appetit and cooking in general. You see these comments everywhere on this channel. This is a test kitchen, these are individuals creating dishes they know and how they want to. You want your own Pav Bhaji or bacon or whatever? Make it yourself, otherwise learn something new and adapt your own recipe. That's what cooking is about.

Brit Indian here who lives to eat Pav Bhaji and yes this version wouldn't pass muster in our house, but I'm pretty sure the Italian/Thai/Chinese etc. dishes that I've made wouldn't go down to well with anyone who'd grown up cooking and eating these dishes either. I'm learning (always!) and am very grateful for recipes of this ilk that help us sample different cuisines in our own home, paring down the ingredients so that the cuisine is accessible to people without having to track down specialist ingredients which can be off-putting. Especially if you're on a budget. Also, as someone who grew up being shunned at school for 'smelling funny' (i.e. of Indian food). I'm thrilled that people would take interest enough to watch this video and try it out at home. Thanks Priya, I'm off to hunt down the rest of your videos to see if I can learn anything new. :)

Her whole segment is based on making Indian cuisine easy and accessible to someone who is not very used to the strong amount of spices and heat. Adding garam masala/pav bhaji masala or adding a lot of vegetables would make it pretty difficult to replicate what she created. A lot of people don't have the wide variety of spices that most Indians have stocked up always. Besides, though she is Indian, she grew up in the US and understands what people there have access to.

I am thrilled that Priya makes these recipes with a different take. As an Indian, I never compared Pav Bhaji with a sloppy joe, but it makes total sense. I tried her idea of chhonk on a pizza and for me, that elevated pizza to a new level! I mean pizza,... made better .... by chhonk! IMO, she represents a more fluid, experimental, multi-cultural generation that has a different interpretation of food and cooking methods than previous generations. I can’t wait to see what she comes up with next!

Lovely Priya should have her own series like Brad! I love her easy indian veggie recipes because at home we're not vegetarian but we are definitely trying to cut meat and fish consumption to an acceptable minimum (save the planet and all, you know). I love indian vegetarian cuisine but indian recipies are often a bit overwhelming for the average european Joe who grew up accostumed to the delicate and simple flavours of Mediterranean cuisine. Priya is great because I feel like she bridges the two culinary cultures using simple everyday ingredients that pack tons of indian spice and flavour. I have no concern trying out her recipes. Can't wait to see more of them. Seriously, Priya, start a show!

This is not Pav Bhaji, it's mashed up Aloo Gobi. The difference between the two are the spices. Altering the spices DOES make a big difference in Indian cooking and so you do end up with a totally different dish, which in this case, does not justify being called Pav Bhaji.

This is with nothing against Priya, I think it's great that she and BA are bringing Indian food to the forefront, but this recipe lacked research. And if it was perposely altered, that needed to be stated, since it has now become a completely different dish.

@@waytoofunkie No it doesn't lack research, it's literally how she makes it based on her experiences as an Indian woman who grew up i North America. That's why the recipe is in a book called Indian-ish. Like, she knows it's different.

@@Nocturne22 If you make a BLT with mustard or pickles, it is still a BLT with your own way of making it. But if you make a BLT with no bacon, it becomes a tomato and lettuce sandwich. And that is my point. She has missed the basic ingredients that make Pav Bhaji what it is - it is not just about her way of making it.

One thing I did, instead of topping the rolls and sprinkling red onions on top, dip some Calidad tortilla chips into the mix, like guac, it’s super delicious that way too ❤️

Thanks for saying something about raw onion. Back when I watched Chopped I remember Scott Conant getting all butt-hurt about someone using raw onions in a dish. Absolutely blew my mind that a judge in a cooking show was allowed to be a picky eater about such a common ingredient.

Hey Priya, not sure what source you have referred to before filming this video but looking at the end product in the first 20 seconds of the video I can tell you this is not how authentic Mumbai Pav Bhaji looks like (even in the sloppy joe form). I love the BA videos in general so just wanted to make sure that I point out the flaw here.

Pav Bhaji in Mumbai has a base of tomatoes. Potato based bhaji seems to go well with puris but that's just me!

no pav bhaji masala ? at least add garam masala in ... mumbaikars will give this a big thumbs down because of that saying it's not authentic pav bhaji well you can add bit of carrots to and stuff but that is simply a version but without garam masala or pav bhaji masala it's not pav bhaji
