I was hoping I'd get to see someone else try the dish. I especially love when Chris Morocco tries other people's dishes. He always has these authentic, insightful things to say about them, and I just love listening to him talk. I remember when he complimented Brad's mustard and internally I was like "Go Brad! That's high praise."

This exactly, too many chefs treat recipes as sacred and don't let them evolve but everyone likes things a little different from each other, if it makes you happy - go with it. Food will never stop changing, India never used to have chilies (peppers) until South America was discovered but now it's almost blasphemy to not have at least 1 chillie pepper in Indian cuisine. No regional cuisine has stayed static, as we discovered different foods almost every culture incorporated that food in some way.

For example, gazpacho dates back to the Roman Empire, but the tomato-based form we typically think of when we imagine gazpacho ("red gazpacho") wasn't developed until centuries later, when tomatoes were brought over from the New World.

@@mikeox_is_small Indian food didn't use potatoes either until a few hundred years ago. Since potatoes were originally found in South America. It was only until Europeans went there that they were used everywhere. Now potatoes are probably one of biggest ingredients in Indian cooking now.

No thanks. I really don't want to watch a filthy person licking their fingers, wiping their nose and then going straight to the cutting board. How does this get no criticism from the comments? Every videos she's touching her hair, licking spoons and using them in the pot. Nobody like that should be allowed in a professional kitchen.

I mean she's not cooking to serve, she's cooking to demonstrate. It's totally fine in my opinion if she has small kitchen habits as long as she and the other BA staff are aware.

@@alvinlee2234 exactly. I'm a professional cook and am constantly wearing gloves, washing hands and taking every precaution to stay as hygienic as possible. At home on the other hand, that's a different story. This guys just a jerk and no fun at parties. Also the rest of these chefs do that too so maybe even add a pinch of racism! 😊

As a fellow South-Aisian I love watching Priya and Sohla making traditional dishes because I get to see how similar yet different our cultures are just within the subcontinent. I'm Punjabi and what Priya calls chhonk we call a tarka. We usually add really thinly sliced onions that get really nice and crispy in the oil.

Her and Sola not getting paid to do these videos doesn't make any sense whatsoever and is difficult to believe. Are you sure they weren't getting paid for these segments? I thought they just weren't getting paid for their contributions to others people's videos. I don't doubt they were treated unfairly, and it always seemed odd that none of the non-white chefs had their own series, while nearly all of the white chefs did.

I am way late to this video because I need a BA fix that I hadn’t seen, but why is she your 3rd favorite? She seems like a great person, but she can barely cook without her parents. I would rather watch her parents cook authentic food.

I use queso fresco btw works really well Also I take the blender container off and either onto the counter or sink and then transfer the food from the pan that’s easiest for me

@j mula Wow..... Way to pass judgment on a whole culture's cuisine! You do realize that dog comes up pretty much not at all to the usual Chinese chef? And that plenty of Chinese people are against shark fin soup? Check out Chef Wang and Chinese Cooking Demystified if you want to educate yourself :)

When I was a kid here in Texas, you could go to the corner store and buy wax paper wrapped squares of asafoetida about the size of Now and Later candies. It was used for medicinal purposes. The smell of that stuff was...unique.

Plantsmantx yep, it is a resin of plant and has medicinal uses. It is an anti flatulent. It has to added to food that produces flatulence, like protein rich daal has to have a tadka/chownk with ghee zeera garlic hari Mirch and heeng. Garlic is also medicinal( many uses) and is a mild anti flatulent, too. Onions on the other hand can cause flatulence. Indian cooking is about balancing flavors and medicinal properties.

@singh padda I hate it by itself but can't make an Indian dish without it - for me it's like truffles, you don't eat them as they are but you add them to dishes to go from 'pretty good' to 'I think I just came', but that said my taste buds don't invalidate your taste buds, eat how you want to eat, enjoy food how you enjoy it and don't let anyone tell you different!

Years ago this was made for me because I asked a woman , what one dish reminded her of her mom. She added roasted radishes to the top. This dish just makes you smile, inside and out! Thank you for bringing that memory back!

Super easy & super good. Huge amount of flavors. A great introduction into Indian food if you've never had any and a delightful twist on the traditional if you have. I'm with Priya here, the feta makes it better.

You can remove the blender jar from the base, then you can even place it in the sink so that it's low and any spillage goes into the sink!

I watched this whole video not because I would even remotely consider eating this dish but because Priya is so personable and sincere and because I like to learn about Indian recipes! I have always been a traditional Saag Paneer fan, but feta is my favorite cheese. I made this for dinner tonight and was so pleasantly surprised that the texture of the feta is perfect and nearly tricked my brain until that salty, briny goodness kicked in. Oh my what a winner! bought Priya's book for Kindle, THANK YOU for such a wonderful dish!

When I worked at a Chinese food/American food/fried chicken hybrid place, they always had instant coffee by a microwave on the side, and we would use the quart containers for making coffee, drinking it while we worked, then we’d wash the containers and use them again for coffee or for soup. Eh, sorta weird, but odds are if you ordered soup, it was in a container that at one point had coffee, because we went through coffee like it was nobody’s business. Me, the owner’s wife, and the other line cook, would probably go through a jar of instant coffee every week

I tried it and it's very good. I will do it again with powder forms of the seeds instead as blending in thermomix left many seeds whole and threw the smoothness of the spinach consistency off. Also I used a jalepeno as I didn't have chili. Flavor-wise and overall really really good.

You can make your own paneer for the recipe. Look it up on KZbin. making paneer is super easy and the only things you need are lemon juice and whole milk.

I live in Northern Virginia. Here, we are served Saag Queso Blanco. Queso Blanco is basically paneer from Mexico for cheap.

I just made this today. I'm in LOVE!!! it was INCREDIBLE! I ate it after I made it for lunch then ate it again for dinner. Hubby loved it too. To bad for him, those leftovers were mine! LOL I didn't have cumin seeds, just powder and I don't have hine. I'm remedying both and planning to try it with feta again, paneer and ricotta, all at different times of course. Thank you for such a great recipe!

I love paneer saag, its an absolute winter treat with hot makke ki roti (chapati made from fine cornmeal) with ghee melting over it and a chunk of gur (jaggery) on the side. I like the idea of substituting feta for paneer, but this dish is going to be damn expensive in India. My local dairy which gets quite lovely paneer keeps the price between Rs. 240-260/- per kg, while feta where I could find it is Rs. 2000/- per kg. So what i get is that every dish has it pros and cons depending on your environment. Thanks for showing us your way of preparing "paneer" saag. PS My mom says that good quality peanut oil can work as a substitute for ghee. It gives a similar flavour but isn't as rich as ghee.

Of course feta will be hard to find in India and expensive if you do. But obviously it's more easily found abroad than paneer is. I think most Indians have an idea about how saag is made so India is not really the target audience here

I really do appreciate Priya's take on saag and your viewpoint. Take chaunk or छौंक for example. For me its an integral part of the way I cook, but Priya makes me take a step back and really notice what a difference ghee, cumin or even a pinch of asaphoetida makes. Its something I already know, but don't necessarily appreciate each time I cook.

I've always loved Bon Appetit's videos and seeing Indian food here is so cool! Also saag in india is usually mustard greens, spinach with indian cheese is another dish called palak paneer, great video nevertheless!

I am going to make this with baked tofu and sprinkle with some feta to make it more diet friendly. I love that the sauce isn't packed with heavy cream or anything. It looks amazing!

Saag is actually mustard greens, while paalak is spinach, so that would be paalak feta. Good video!

this comment intrigued me, that's interesting to know I always thought they were interchangeable but apparently not; there doesn't seem to be an English spelling "Indian" word for Mustard Greens, I feel like Saag is the "dish" made of any greens but maybe that's just a poor wiki-lost-in-translation.

(not an expert) but i think palak curry is *only* spinach while saag can be made with other greens as well, including spinach.

In hindi (palak, paneer, etc. also hindi words), sarson is mustard. Saag is any dish of cooked greens, alone or in combination. Palak saag, sarson ka saag, methi (fenugreek) saag, lal (red amaranthus) saag.....

@@table4glasses Dosai, Idli, upma, uttapam, palappam, medhu vadai, masala vadai, just to name a few. These are just general names. For example, there are hundreds of dosai alone. They differ based on the type of flour used, toppings and condiments it is served with. I would suggest you to try either paper dosai or masala dosai as a first timer.

2:28, for clarified butter: melt the butter until it separates then chill it. The milk solids will float and you can remove them with a spoon to use in something else instead of wasting them. For ghee you brown your butter until you get that nutty smell then you do the same thing as the clarified butter. Toasting the milk solids is what gives you the nuttiness but it's also what burns when cooking with high heat. Why would you strain butter through cheese cloth just to waste some of the fat and the cloth?

@@bd80247 so you've never made clarified butter before I guess? If you use a metal container and a freezer for a stick it takes *maybe* 5-10 minutes. You aren't making vats of it at a time and unless you are pouring it into some insulated container I don't see how it would even take half an hour, much less several. Please either try things for yourself or do some research before making ill-informed comments.

Butter in a pan heated until it was liquid, then strained through cheesecloth so milk proteins are gone and all you have left is clarified butter. Please tell me more how I am wrong. Asafoetida is more of a " digestive " not msg - the epazote of Indian spices . Food is chemistry , let's just go with that . Cook them in clay pots , covered in steam - And the taste is heavenly .- I discovered the cooking in steam accidentally in clay pots - same spice , same technique . Th you

Taking the container off the blender base and putting it on the counter (so it's not so high up) will help too. Fill it, then put it back on the base and blend.
