As an Indian, I absolutely love Biryani, specifically Chicken Briyani. There's something magical combining rice, spices, eggs, meat or vegetables and having it cook inside a pot. It's a truly special dish that represents family coming together and being able to enjoy it together.

I've made this recipe a couple of times. The first time, I made it to the letter. The second time, I added a touch more honey and subbed out paprika for about half of the deghi merch. It didn't affect the flavor that much, but brought the heat down to my wife's desired level. It was one of those recipes that intimidated me at the beginning, but once I got in was actually MUCH simpler than I expected. One of the first dishes I've made (complete novice home cook) that tasted "restaurant quality!" Love your channel, love your videos, thanks so much!

Good you experimented and added paprika. You must try Indian dishes but also you must be open to adapting it to your preferences. There is no shame on it and no mistake either. Always remember, unlike French cuisine, every mom and grandmom in India has her own recipe and all of them are correct. So do adopt, as long as you enjoy. 😊😊

I haven’t cooked any Indian dishes myself, being an amateur chef, but I’ve tried a few different Indian restaurants now and I remembered your previous reaction to his recipe and decided to order the butter chicken. It was absolutely DELICIOUS. The spices were superb and the heat was perfectly balanced out by the cream. I don’t always get a chance to know how some of the dishes taste, but knowing how this one tastes really makes me wish I got some more! 😋

For the people here who can't afford or understand all the ingredients - I make this at home quite often without giving the smokiness and without using kewra water. Even the coriander leaves in the end are just visually pleasing, not mandatory. It's just as good 😊 just make sure you have the dry and whole spices they mentioned in the beginning. If you can get something called "Kashmiri chilli powder" it's much more mild and gives a lovely redness to it. Restaurants tend to dump a bunch of sugar in the gravy and thicken it with cashew paste - those are optional too, but cashew paste gives you the Mughalai northern Indian authentic taste. Vegetarians can substitute chicken for roasted paneer pieces. It's heavenly.

I've lost count of how many times I've made this recipe at home. This is the absolute best recipe out of all the ones I've tried to make, however I do add cashews to the gravy during the first stage and blend them prior to sieving. The cashews absolutely take this dish to a slightly more elevated level.

As a Indian my favourite Indian dishes are:- 1. Thalassery Chicken Biryani from Kerala(We have multiple versions of this Biryani from multiple parts of India and I have tried almost every version, among them I prefer this one) 2. As an American expat who currently lives in India (for the last 8 years) ... this video is almost spot-on. :) The only thing I would say is that all butter chicken dishes are chicken tikka ... but not all chicken tikka dishes are butter chicken. Tikka (at least to my understanding based on the local population here in Pune) simply means "small pieces" ... regardless of how you prepare them or whatever spices you add to them, etc. :) Regardless, great video, please do continue the fantastic work! :)

Great video, James. The fact that you were able to recreate chef Ranveer's recipe from his video, shows that the dish has not been "manufactured" and it is within the capabilities of every home cook. I remember the days when American Idol started out and they used to feature brilliant singers but also awful singers for comic relief, and that was a nightmare to sit through. I love Uncle Roger, love watching him roast bad dishes, especially when western cooks massacre Asian dishes, but I wouldn't want anyone to *repeat* that mistake.

My favorite Indian recipe is this rustic pork curry from a south Indian region, Coorg. It's called "pandi curry". Goes great with steamed rice or even flatbread/roti. BTW, Coorg is pretty well known for it's coffee as well.

I tried out Ranveers winter milk daal to the T... And maaannn... It was so good. Just simple dal boiled with milk and then the tadka... But god! My friends still beg me to make it again. I'll make it again, when winter green veggies are in season. Maybe multiple times. His recipes are so helpful.. And when followed exactly they are out of this world!

Nice to see a perfectly recreated recipe without extra jam flavours. Goes perfectly well with normal bread/naan/white rice/boiled rice/rotis. You can use kashmiri chilly to give more colour and less heat. Goes pretty well with fried rice in case you don't have any side dishes

This was so enjoyable. His voice still calm and melodic compared to some of those you review (u know who😮) Thanks for explaining some of the tips. As far as other favs, I cut back on meat so now love Chana Masala, Saag Paneer, Bateka Nu Shaak, and Gulab Jamun which I don't make cause it's too hard to make small amounts. I love these shows, I learn so much from the original and then your POV.

Butter chicken, Tikka masala, samosa's, etc are some of recipes which are made / bought like once or twice a month. We in North, west, east india normally eat Daal, Chapati, Rice, 1-2 Daily life vegetable dishes. That's our regular meal. In south india, their is totally different type of dishes, More of a Vegan style dishes like Dosa, Idli, Rice, Sambhar etc which are eaten on regular basis

I tried this a few times since you posted the original translation. IMO it's the best butter chicken recipe out there. Fellow westerners: try it. It's actually very simple. It is probably just a lot of ingredients you don't have, but it's worth it. Not a difficult recipe. For my western tastebuds, it was just a touch spicy, but not too bad. I added a touch more cream but that was it. Also, one time i did not strain the curry, because I am lazy and didn't want to wash another two dishes. It had a totally different texture (obviously) but it was seemingly less spicy (?) and I kind of preferred it. I'm curious what chefs from India would say about that.

(I don't know If it's Important but I am an Indian 🙋) If you like it that way then that's good also the straining process generally is optional in these blended Indian gravies... I personally like it as velvety smooth as possible... Butter chicken is a sweet tasting dish (Tomato Sugar and Cooked Onions) so I guess the smokey and spicy flavours are important to balance out the sweetness. Some restaurants serve it with sliced onions (do wash them once or twice to wash out some of the onion-ey flavours) for some freshness from all the fat in it...

I am not a chef but I like to cook and I am Indian.... When you boil whole spices the spiciness and a lot of aroma gets out into the sauce. So when you don't strain it, you just increase the volume but the amount of spices remains the same. It's totally ok not to strain, even I don't strain it when I make it. Think of it like 2 versions, one where the gravy is smooth like butter and one where the texture is rough, I like both.

Great recreation, I love that you got all the uncommon ingredients and tried it all. One thing I've learned from living in a similar apartment, you can light charcoal on the gas burner or on an electric burner the same way you did the wood chips. Turning the hood fan to max will minimize the smoke in the air but keep the window open and be ready to silence your smoke detector. Adding the ghee or oil to that and then covering it adds a different flavor from smoking wood chips and you can do it for a lot of different dishes. I particularly love doing it to biriyani and to eggplant dishes.

Great video as always chef. Also, it's amazing to see you reach 200k subs, you've been putting in lots of effort (I started following you at 40k I think, seeing the growth makes my heart fill up with joy) it has finally started to pay off. You know what time it is now. All the spices r ready, you even have Kewra. The ingredients are basically SCREAMING at you to make Biryani 🕺.

There are hundreds of Indian chicken recipes which are tastier than Butter chicken. What makes Butter chicken more popular globally (esp. outside India) is because it is far milder than other preparations & easy for people who can't handle spicy food. Also because it is far easier to make.

Also, Indian scripts are phonetic and usually spelt as they are pronounced (sometimes mistakenly spelled in English). But you would normally say a name as it's written. There are almost no silent letters or other plot twists unlike English or Welsh or French etc. So in Ranveer/Ranvir, the last 'r' is not silent. It's pronounced run-veer.

chef ranveer's recipes always come out amazing, I get the exact same look when I taste it. I like so many indian food and there is such variety I honestly try a different recipe every week. I like dals, egg masala, aloo tikki and hara bhara kebabs.

7:07 my personal favourites would be paneer bhapa (a paneer curry based on mustard seeds) and chingri malai curry (prawn dish made with coconut milk) with the side of basanti polau (slightly sweet short grain rice)

Sambhar with idli might be my favorite food. Bengali shukta is also remarkable. Both very healthy dishes, and very delicious... and khadi pakora... and dahi vada... Can't forget those. So many good dishes in India that we rarely see in the United States restaurants.

I personally love bharta\bhorta and I feel it is really underrated. Now I'm from Bangladesh and this bhorta is available in India as well. Since ours is a mostly agricultural country we love our rice. People eat rice a lot in general here, especially the people who work in the fields, farms, construction sites etc mostly people who are engaged in strenuous jobs like manual labour have to have a plate of rice with whatever the side dishes are available to them which mainly consists of daal, maach(any fish curry or fried fish), mangsho(meat of either chicken\lamb\goat\cow etc as curry ), dim(egg either boiled or fried)etc it depends on whatever you can afford to buy. Thers this dish called Panta Bhat. It is a rice-based dish prepared by soaking rice, generally leftover, in water overnight. Traditionally served in the morning with salt, onion, chilli and any kind of Bhorta or without it as well which is famous here as we eat Panta Bhat in Pohela Boishakh( Bengalee New Year) with Ilish which is our national Fish. It's kind of like the go-to food for people who can't afford much. Now bhorta is made by grounding spices which over here is made by a sil batta\shil pata which is basically a traditional appliance of grounding spices on a stone slab and a grinding stone which works by crushing the garlic, onion, black cumin seeds, mustard seeds, red chilli, green chilli, Kamranga\ Bomabay \Naga morich(The Naga Morich is the local name of the Naga pepper. It is cultivated in Bangladesh and Northeast India. It is known for being closely related to another well-known pepper, the Bhut Joloka, aka "Ghost Pepper", which is one of the original superhot chili peppers.) or any other ingredients between the flat stone and the grinding stone. There are countless types of bhortas which are made this way aside from the mainstream Alu bhorta (Mashed Potatoes), Begun bhorta(Mashed Brinjal\Eggplant\aubergine whatever you wanna call it), Tomato bhorta(Mashed tomatoes) etc. I also found this one-of-a-kind restaurant in my friend's hometown where they made 70 different types of bhortas and I have to say it was finger-licking good. The Rice history was needed because bhorta and rice go hand in hand. Unlike any of the Asian or Indian subcontinental countries or India itself the amount of rice we consume is a whole lot different which is 70-75 per cent of our diet which is unhealthy. But rice grows so abundantly here Alhamdullilah(Praise be to God) that it is integrated into our culture so deeply. It is our staple food here. Without any side dishes, one can eat one small amount of bhorta with salt on the side and devour 3 plates of rice in one sitting and yes I've seen it happen. My mom always makes a few bhortas with Dried fish and if u haven't tried them they are great. Not all bhortas are made mashed some are grounded some are stir-fried as well. This one mashed potatoes my mom has where she'll prepare the mashed potatoes with spices like normal and then stir fry it a bit and it's the best version of mashed potatoes that I like and finish a plate of rice in one go with it.

Another great video. Thanks James. I have a request: one of my favourite TV chefs growing up was Keith Floyd. I've worked in a few restaurants and asked chefs their favourite, and they often bring up Keith Floyd. I'm surprised to find no one has done a reaction (or anything really) on him. I wondered if you knew him and could perhaps cover him in a video?

One of my comfort foods is prawn curry- rice with shallow fried semolina coated prawns on the side. Prawn and fish curries are really easy to make and quick too. But the best part is they taste even better the next day and can be kept for almost a week in a refrigerator.

For me my fav indian is what I feel like making that day. I will mix sometimes up to 20 spices, sometimes just 3 or 4. I vary the amounts and variety all the time, each time I can get a lovely new dish that feels like indian curry and has a unique background taste to it. I really do like the curry variants that are more floral and tangy, with increased green cardamon and corriander seed. Sometimes you want a more smokey flavour and black cardamon is great for that.

I tried out a butter chicken recipe before but i will try out this one for sure! I always like trying out authentic recipes! I live in belgium and i dont wanna use the first butter chicken recipe i find on the internet. I always do a bit of research for some authentic recipes and this one looks tasty!!
