Hamburger Helper was actually REALLY popular in the 70s because inflation was out of control and things were REALLY expensive and this was a way of stretching a relatively inexpensive meat into a meal for the whole family. It was promoted as being economical.

Avocados have existed in the americas for than tens of thousands of years. They were spread through the americas by the giant sloths before the last ice age. When there was no longer giant herbivores big enough to "spread" the large seeds, avocados were almost lost until human cultivation started thousands of years ago.

In the 1950s in the midwest, my mother used tomato aspic (homemade not Jello) cut out into shapes as a garnish for a vegetable salad. She was of Scandivarian origin, but made a dessert we would recognize as tiramsu. Fancy frosted cupcakes were our go-to birthday party cakes. We also had avacado toast quite frequently for breakfast or lunch. 1950s.

In Germany a classic 70s party food is, frighteningly, a mett hedgehog. Mett is seasoned raw pork and you shape it into a hedgehog and stick onion slices or pretzel sticks into it as spikes. Then you smear it on a bread roll. It’s kinda disgusting but it would definitely eat it.

Quiche is one- still love a good quiche. We did hamburger helper when we went camping in a camper on the back of a pickup truck. how about Fondu- you would find those pots all over garage sales and thrift stores. Frozen yogurt seemed trendy in the eighties. Those little sandwiches were had two pcs of white bread and a filling - you would place one pc in the mold cup- then the filling - then the 2nd pc of bread, and you would close the mold and then toast it on a burner or over a fire. made like little pocket sandwiches circles because the crust would be shopped off and the edges pressed together.

Aspic is good as a condiment, you have that with meat pie or meat during the holidays especially. It’s actually not bad at all, it’s super refreshing when you’re having a super heavy meal. Super easy to make. I don’t think Americans eat meat pies, it’s basically ground beef with some spices in a pie. Instead of the mini puff disgusting hot dogs, I know one big thing here is mini sausages rapped in bacon. It’s so greasy, toxic, but very good once a year:-)

The Bon Appetit crew comes across as food snobs in some parts of this. Some of these foods were not really "trends," but things you ate to make ends meet when the bills came due. Hamburger Helper is a good example -- how to turn a pound of ground beef into dinner and leftovers when you make just enough to pay rent and keep the lights on. I lived on stuff like that in college (before Brad was born).
