I've been defrosting meat in hot water for decades. The trick is to replace water every 5 min and there's no time for anything to spoil or enough bacteria to grow in 15 to 20 min

my advice for thawing really quickly is to leave the tap on just slightly; this lets the cold water trickle out meaning that the frozen food will always be thawing instead of waiting for you to change the water. its even better if you let the water stream trickle onto the bag of food itself.

I can't recommend Adam Ragusea's method enough! Put it in a bag in a bowl/pot and fill with water, and let the water drip into the bowl until thawed. It doesn't use much water.

The best water method is actually running water so that the water in the bowl stays the same temperature. With room temperature water if I remember my OSHA class correctly. (I may not, its been years.)

For frozen steaks throw them in a freezer bag or 2 in some room temp water for 25 minutes, then pat dry w paper towels and another 20 minutes, then pat dry again, season, and sear

A pressure cooker will thaw and cook the meat evenly! I've been doing it for years with frozen chicken breasts: add your spices to the bottom of the pot, put just enough water to cover the spices, then put in that frozen chicken breast.

I wonder why using hot water is so bad. It gets the job done much faster. I just throw my frozen chicken parts in super hot tap and my chicken is ready to cook in about 35-45 minutes. I never let it sit around for hours after defrosting this way so where's the danger. It goes right it the oven or the frying pan .
