You should steam cook the japanese sweet potatos and those purple ones for the cooking method. They cook up in around 20 mins and the steaming process causes the texture of the sweet potatos to be really moist and soft. Gets rid of the dryness.

I like to bake them whole in a covered pan or wrapped in foil. Then cut into disks and pan fried in butter. Crispy buttery on the outside and sweet and jammy on the inside 😋

My process for massively speeding up yam cooking is: .Wash, scrub with veg brush .Stab it with a knife several times all over and deep .Wrap in moist paper towel large then put on a plate .Microwave for 8minutes or so now med high .Stab to test, microwave more if center is still firm .Remove from towel .Pat dry .rub with oil of choice .season outside with salt .finish in oven/toaster oven for 10 min or so, rotating at least once. Serve. Cuts down the time by about 1/4 or so, and ends up with an almost identical end product as roasting the whole time, sometimes superior actually.

@@wmluna381 Just boil purple sweet potatoes (only takes about 6 minutes), lightly mash and add butter, olive oil, cinnamon, nutmeg and lemon juice. Top with lemon slices. We served it at Thanksgiving. Grow like wildfire in Florida.

The purple ones seem starchier and heavier or fuller, like a well baked homemade bread. I love them. So filling. They mix very well in Mexican type dishes or curry dishes, believe it or not. They mix in very well with spices.

I bought some purple sweet potatoes at the oriental market and then rooted some slips and grew them all summer, they took over the garden and look beautiful. just dug up a few to see what they're like, I have no idea what variety they are, but they're very yummy. Not sure if it's stokes, or molokai. I have grown okinawan ones before as well. we love them in manapua (steamed buns). had them in Hawaii, and just absolutely love them.

Great review! I’ve had all of those varieties and your review is spot on. The last few years I’ve made candied “yams”:with Garnett, Japanese, the white flesh one (I already forgot the name) and the purple flesh one. It comes out so pretty and of course delicious. Too bad you missed the Okinawa sweet potato; it’s very delicious as well.

Oh yes the Okinawa sweet potatoes are the boom 💥, I love those! Where I come from we called the white flesh ones batata 🍠 and it’s by far my favorite of sweet potatoes. We make a coconut and batata dessert that’s to die for!

@@opidasdagoat I get purple skinned and purple flesh sweet potatoes at Whole Foods or organic markets. I usually get the whitish/grayish skinned with purple flesh ones in Chinese markets. The later is naturally sweeter than the former. There is also a Filipino variety I think called Ube. You can probably find those at a Filipino or South Asian market.

If you get the all purple sweet potato, steam it in the steamer basket in the Instant Pot, it comes out AMAZING and definitely does not take 2 hours!! Highly recommend this method for all sweet potatoes, actually!

I grate some into lard in cast iron, patted it down, browned both sides and served with salt and sour cream and it was incredible. If you boil them, save the water. It's inky dark purple.

I bought 4 purple Stokes from Kroger in April and thought I'd try my hand at growing SWPOs, regular potatoes, garlic, and different types of onions in 2022 survival garden form. I didn't even consider that the leaves are edible. And in worst case scenarios, they provide people and can be a component of pet food (dogs). It took longer than anticipated to get the Stokes to sprout out and produce slips. I put 3 in moist sandy dirt (laid horizontally on their sides &, barely covered). One was stuck in water with the toothpicks (mind the end positioning, the part that was attached to the plant should be the end sticking out of the water). 2 of the dirt ones rotted on a spot check. The stokes in water sprouted 1st. It seems that there's a lot of back and forth on whether soil or water slip propagation is better. Based on what I've experienced, it's likely the exposure to warmth that is the ticket. The Stokes in water was on a Southeast facing high window sill in an unheated room in April in Southeast MI. The cup it was in was also clear. The dirt Stokes was in the same room, but on a table 2 feet lower. It's more of a storage / grow room where I have a mini greenhouse with grow lights. However, the dirt Stokes wasn't specifically under any lights. It wasn't until I decided to prop / hover the dirt Stokes container over a small back heating pad that it finally did sprout some slips. It wasn't directly laying on the pad so I tried being half safe about it. I would still say give yourself about 30 days lead time to at least get slips sprouting if you have the Stokes. The one in water took about 3 weeks, give or take. After you clip off a slip (I wait until they are at least 6" long), you still have to root them out (get the roots growing out, that is) in water, so that will add extra time. They shouldn't be planted outside until the overnight temps are warm. Say, at least ~50 degrees to ensure the soil temps won't screw things up. So far here in late May, I have harvested about 17 slips. Most I am rooting out in water. I am trying a few others in dirt. Each Stokes provided 2 slip harvests and they are still at it. There should be a round 3 next week. I read where a lady said one SWPO she had going produced slips for *1 year* which I thought was wild. I look forward to seeing what kind of crop I will produce in a bag and guerrilla planting. I need to find out if Stokes are bush-type / determinate or indeterminate. The coming ones might be a problem out in the wild though. Regular potatoes are SO EASY to get going in bags. Wish I would have known that YEARS ago. I use regular grow bags and repurposed 20-40 lb. bird seed and cat food bags with the tops rolled down to btw 14-16". The tarp-like ones. I wouldn't use an actual tarp, there's a chemical leeching factor with those.

What you call an oriental sweet, we call kumara. It was brought to NZ by ancient Polynesians. It's the same kumara common in Korea. You are right about it having a drier flesh than the orange sweet potato. I like mixing them and mashing with butter.

Sweet Potato Pie was my favorite dessert as a kid, probably because my Grandmother won a Blue Ribbon for hers at the Mississippi State Fair! As an adult I am less fond of the intense sweetness, so sadly, Pumpkin Pie has taken Sweet Potato's place in my heart. I recently stumbled upon the White Sweet Potato by accident and boy was I happy I did. Watch out Pumpkin, Sweet Potato is coming back!!!!

Those purple ones are the best! I found them at a korean grocery store years ago and bought them on a whim. They taste nothing like other sweet potatoes! And, interestingly enough, it's flavor I'll sometimes just start randomly craving and odd times. Other sweet potatoes just taste bland to me since I've had those dark purple ones.

Let's talk more about why certain potatoes are good or less good for certain things. Being softest and sweetest, the Covington (spelling?) sounds like the best for sweet sweet-potato dishes and most of the orange sweet potatoes sound good for general use. Again, though, what are the kind of things where aspects of any one of these are clearly preferable? All the potatoes here could be used to make fries, but would one be able to fry them together, or are their fry times too different? When it comes to the less familiar non-orange sweet potatoes what are the kind of recipes where one would seek one of these out specifically and NOT the others? I love how many of the potatoes are covered here. Let's get deeper and make ourselve potato experts!

Sometimes I slice them and eat them raw! They are like a carrot but better! I think carrots and not that tasty... and too hard. No one else I know does this.... but I love raw corn on the cob too! It’s so much juicier and sweeter and people look at me like I’m nuts🙎🏼♀️

The sweet potatoes I buy from my local Walmart appear to be the Covington variety whereas the ones from my local farmer's market are generally smaller and have a reddish skin, though they taste almost the same. Can the Covington variety generally be stated to grow larger than the Garnet variety? Thanks.

Just had the Japanese Sweet Potato. Definitely on the much drier/dense side. Even when I steam them in coins, they are extremely dry. Still delicious but not as creamy as the Jewel or Covington. The Stokes I eat strictly for the antioxidants, but that one is also a very dense, hard, and dry sweet potato. Not as dry as the Japanese Oriental, but still very hard. I need to cut very thin coins in order to achieve a softness. Thank you again for this AMAZING video!!! ⭐⭐⭐⭐⭐⭐

Great informative vid! When I bought the purple ones a few years ago, I'm pretty sure they were marketed as a Japanese Purple sweet potato. As for cooking, I boil mines. About 18 mins is usually all that is required.

The second one should be roasted much longer because the insides show light or white spots. It should look more like the emoji🍠The Korean Yam (when it comes to the Asian sweets I've heard people call every single variety "Japanese" but I have been yelled at by my local produce vendor :) ) turns a caramelized yellow and gets sweeter as it's roasted -to the point you would think a normal sweet potato is overdone. They are great for breakfast as a meal. Just a roasted Korean Yam no butter, syrups or seasoning. THey make great pies as well. I will be posting a video soon on making sweet potato slips for all the varieties you have listed here.
