Layers of cinnamon and diced apples are nestled in between folds of the soft egg dough, so that each portion can be easily pulled away from the loaf.

• Recipe Information •
Makes one 9-x-5-inch (2 L) loaf
Yield: Serves 8
Prep Time: 30 minutes, plus rising
Cook Time: 45 minutes
Soft Egg Dough:
3¾ cups (560 g) all-purpose flour
2 Tbsp (25 g) granulated sugar
2¼ tsp (1 pkg) instant dry yeast
1 tsp fine salt
½ cup (125 mL) hot water (hot from the tap)
½ cup (125 mL) cold 1% or 2% milk
2 large eggs, room temperature
½ cup (115 g) unsalted butter, room temperature, cut in pieces
Apple Filling:
1 ½ cups (375 mL) peeled and diced apples, cut into ½-inch (12 mm) dice
2/3 cup (134 g) packed light brown sugar
2 Tbsp (30 g) unsalted butter, melted
2 tsp ground cinnamon
½ tsp ground nutmeg
1 recipe soft egg dough, risen on the counter for an hour
Glaze:
1 cup (130 g) icing sugar
2 Tbsp (30 mL) 1% or 2% milk
½ tsp vanilla extract
1. Combine the dry ingredients. Measure the flour, sugar, yeast and salt in the bowl of a stand mixer fitted with the hook attachment.
2. Add the liquids and mix. Stir the hot water and milk together (the hot water and cold milk should result in a liquid of about 115°F/46°C). Add the milk mixture and the eggs to the bowl and start the mixer on low, letting it go for a minute or two until the dough is almost combined. Add the butter, a few pieces at a time, while the mixer is on. Increase the speed one level and continue to mix until the dough looks smooth (it will be very soft), about 6 minutes.
2. Let the dough rise. Transfer the dough to an ungreased bowl, cover with plastic wrap and let sit on the counter for an hour, until doubled in size, about 90 minutes, or it can be chilled overnight.
3. Make the filling. Toss the apples with brown sugar, melted butter, cinnamon and nutmeg to coat well and set aside.
4. Grease a 9-x-5-inch loaf pan and line the tin with parchment so that the paper comes up and over the long sides of the pan.
5. Roll the dough. Tip the risen dough out onto a lightly floured surface and roll it out into a 15-inch (38 cm) square.
6. Fill & fold the dough. Spoon a third of apples to cover the middle third of the dough, in a strip. Fold one side over the apples to cover them and spoon a third of the apples on top of this piece of dough. Fold the opposing strip of dough over to cover the apples (you may have to stretch the dough a little) and top this with the remaining apples. You will now have a rectangle of 3 layers of dough with 3 layers of filling.
7. Trim the dough and fill the tin. Trim the dough on the long sides, so that the edges are all now open (and can pull apart once baked). Cut the loaf into 3 equal sections which will each by around a 5-inch (13 cm) square. Carefully lift each stack of dough & apples and place in the pan so that the dough pieces sit upright (like filing papers in a filing cabinet). Shape the dough trimming into a square and place this at the front of the loaf, covering the one short side with apples (this will prevent the apples from sticking to that side of the pan after baking). Cover the pan loosely and let it sit on the counter to rise for 30 minutes (add 30 minutes if using dough that chilled overnight).
8. Preheat the oven to 350°F (180°C). Uncover the pan and bake for about 45 minutes, until the bread turns a rich golden brown colour; you can check the doneness by gently pulling apart the bread at the centre. Cool the bread in its pan on a rack for at least 30 minutes before removing to glaze.
9. Make the glaze. Whisk the icing sugar, milk and vanilla together and drizzle this on top of the slightly cooled bread. Let this cool another 20 to 30 minutes before serving.
The bread is best served the day it’s made.

I tried out the recipe. Amaziiing. Very soft, juicy with apples. Easy to pull apart. I recommend it to everybody. I rested the dough in the fridge overnight, and it came out perfectly 😄

It is amazing to watch those random trimmed bits suddenly turned into a nice knot. I didn't know that Anna Olson can do magic :) In this recipe, butter is added right up front. This is different from most breads which require gluten to develop first before adding butter. May I ask why? Thanks so much!

I have always really enjoy your baking videos. Now my husband's is very susceptible to COVID because he is pre-diabetic. His doctor told him he needs to avoid anything made with white rice, all-purpose flour or refined sugar. The doctor says those foods are the primary cause of diabetes. The doctor recommended my husband eat foods made with brown rice, whole grain flour and honey or raw sugar. Any guidance you can offer on using these ingredients would greatly appreciated.

Another hit, I can't wait to try this one out. I like the new videos and kitchen, except one point. Are you using new cameras and editing? Images are sharper, but overall previous videos were much warmer I feel. I do love the bird's eye view to show technique.

Hello Chef. Thank you so much for your wonderful videos and recipes. In your earlier videos you have a small deck oven in your kitchen that is the perfect size for a home bakery. For the life of me, I can't find one that small. Could you share with us the manufacturer and model number? I'm going crazy trying to find which oven that is. Thank you and happy baking!

I have never made the dough then refrigerate it. It does look like it's more easy to handle that's for sure. Think I'll give it a try. There's a bread recipe I use that calls for 1/2 water 1/2 milk. I've been able to use evaporated milk with that recipe. Would I be able to do the same with yours Anna? I like the flexibility because sometimes I don't have milk in the house...

Anna, I'd like to know if you could substitute the dairy with something else, like oil perhaps? I don't like baking with dairy and I'd like to avoid it.

This is happening today! Right now I am being held down by my two kitties that are probably still turkey heavy from yesterday oh, they got a little bit spoiled. They even got a little bit of dessert with some plain pumpkin I set aside for them, tiny little spoon of whipped cream on top. They both got whipped cream on their nose and one somehow got it on the tip of one of their ears. So I'm being held down right now cuz they know I haven't taken my medication, they know my different alarms. Have permanent nerve and muscle damage as well as a whole list of other stuff but I used to be a chef , cake decorator and caterer, I miss it very much. I make yeasted apple fritters in a similar layering fashion but just ripped chunks off and put them in a small pile to rise, I end up baking my fritters and other things, after having my gallbladder out I don't do well with fried foods. But yes this is happening later I already wanted to make bread

That's pretty much an old wives tale. Now if you were to let them sit for a long time touching, it would slightly diminish the yeast.
