Ramen by nature is creative because originally in Japan the recipes were determined by what ingredients the chef could get easily from the local area. So there’s nothing wrong at all with French ramen. Good stuff.

Mike, to be honest this is the first video of yours I've watched since the split. I really enjoy this type of content, I feel that the commentary between you and Alex brings a new level of connection with the kitchen to your channel. It makes it much more organic and reminds me a lot more of cooking with my dad and learning those little tips and tricks about the food while learning about who I was cooking with. Keep it up brother

This was such a sweet collaboration. The French guy was so kind, knowledgeable likable and such a natural teacher, I made packaged ramen with a brusselsprout omelette along side. no where near what you guys did but I felt the confidence and inspiration, great way to start my day 🙏🏾

I love what that french guy said. To all so-called youtubers out there, please understand your niche. Niche content is incredibly underrated, it is much more personal, informative and exactly what I go to youtube for. Make it so that it is as entertaining as a netflix series and yet as informative as a research or thesis paper.

I think that showing your mistakes is very important, not just for the story and not just to be relatable, but also because mistakes are invaluable information. Knowing what not to do is just as important as know what to do.

I believe Vietnamese Pho was one of the earliest form of Frenchified .... ramen/asian noodles? Beef broth based soup, with flavours of caramelised onions, ginger, East/south Asian flavours from spices. Simple complimentary sides (picked garlic, onions etc.) and even the town it’s origin is alleged to come from, was one of the first places the French arrived to.great show as always!

I like Alex showing his mistakes because he figures out what went wrong, and then explains it in a way that's understandable to the home cook. He shows us the mistakes that a person naturally makes when learning something new, and how to avoid them, which makes learning how to do something right easier. If we don't see the mistakes and errors, then we have to make those mistakes and errors ourselves in order to find out where the tricky spots are and then figure out how to avoid them ourselves.

Alex’s genius and artistry always comes through. His advantage is thinking and tasting in French and verbalizing what he’s thinking in English. I loved teaching total immersion French. The beauty of being French is that Alex has one hundred percent of his roots. His love, creative nature, math,palette and remembrance of his grandmother blends to make his genius profoundly distinct.

Alex! I just finished making (mass producing) a supply of instant ramen following your series of instructions. It's perfect. It's so good I can't even say! I made three oils, two tare sauces, and 16 servings of noodles. I made this for three households in my extended family since every one of us likes ramen so much. Your recipes and instructions were brilliant and spot on! I'm a huge fan.

Being French, watching an interesting American cooking channel and discovering a French dude ridig the cooking vibe I can relate to... life is so strange and funny. Watch those men play with food like two kids play with clay. A clay designed by another kid, a japanese one who is not "there", is very inspiring. Long life to this channel. This video was especially relevant for me because recently I wanted to make some ramen and needed noodles, but the shop I went to didn't have ramen noodles and I didn't have time to go somewhere else. So I bought pho noodles and a small piece of eye of round (I had all the other ingredients I wanted) and made a ramen/pho fusion which was pretty damn good. Shrimp and thin sliced eye of round, sliced radish, scallions, soft boiled egg. A little sriracha in the broth and I was in hot soup heaven.

This was a Master Class in all things KZbin and the love of cooking. My first Alex video was when the world was shut down from the Coronavirus...I loved being able to see Paris and Alex go on the hunt for the perfect croissant. The video was filmed beautifully and the authenticity in the way Alex tells a story was just what I needed during that time. The first video I watched of Mike's was the Philly Cheese Steak episode. I saw it while still under quarantine...but going along for the ride, hearing stories of how something as simple as a sandwich was connecting people from all over the world was very comforting. What you both do extremely well is share your personalities and the way you tell stories draws us in. This mistakes are fun and interesting but the way you show your appreciation of your efforts and respect for the origins of your dishes is brilliant.

What's critical is seeing not only the failure, but how to respond with a failure. Not only do you know it happens, but then what to do or try! Another element I appreciate is seeing/feeling the ACTUAL TIME it takes to make some of these. Love it! Thanks guys!

French ramen was a cool idea! This show is awesome too. I really think you have something here. As someone else mentioned, this is like a podcast but with cooking! I feel podcasts aren't that entertaining or can get stale, if it's just talking. I find they get more engagin/fun when you have games/themes, in this case cooking along with someone or for someone based on their foods/cuisines they enjoy is something really unique and interesting. I could suggest having other KZbin food personalities as your guests and eventually other KZbin people. Then when you get crazy famous, get Joe Rogan types on for more diverse discussions.

Mike, being honest, being constructive, you need to work on your active listening. There are way too many points in this video where you are stepping on your guest's train of thought. Or, put more simply where Alex has a lot more to say and you cut him off. Watch some Sean Evans, you'll see a few key things to do: Nod along, let the person finish their train of thought, and only speak when it will accent the interview or if you have pacing needs then rebound off of their statement rather than just cutting in and starting a new train of thought. You as the host are Sriracha, you need to be applied in small doses when it will amp up an already delicious [conversation]. I assume you're doing it due to time constraints, the video has to be under an hour or whatever, then I'd suggest using a musical cue so you're not slicing off a good conversation----or think about maybe cutting it down rather than having it live. Shoot an hour and a half long video and cut it down to 38 minutes.

Totally agree. The purpose of bringing in a guest like Alex is to let him become the teacher and share his opinions. I'd prefer at minimum 75% of the conversation be Alex talking. This felt closer to 50% or less. If I want to hear Mike's thoughts, I'll watch a video with just him. I do really like this format though and I'm curious to see how it evolves.

I kinda disagree with you buddy, it felt pretty natural to me. I've seen MUCH worse than that. It felt like Alex has the time he wanted & needed to develop his ideas & thoughts. Mike took time to listen and answered fairly to everything Alex said. Sorry if my english is approximative, french guy here. ^^ I didn't know Mike btw, he looks pretty chill & respectful with his guest.

@@sacha4253 Mike is definitely respectful but the OP has a point. Sean Evans has perhaps the best interview style at least on KZbin I've seen and Mike could take a few pointers too improve his connection. I was very intrigued by Alex and felt he had more to say in response than he got. No offense at all to Mike, who was considerate as hell, just that as an interviewer his skills could still improve. Very compicated while they are also cooking as well.

the thing I love the most is that Alex is all about the food, but also all about the entertainment. He keeps all of it in mind when editing the video's he creates. I love it. The French are all about the aesthetic... The guy who does Pro HOme Cooks, please forgive me for not recalling his name off the top of my head, I am alllll about that french accent.... *sigh* He is learning things that he can and maybe WILL apply to future videos... :D It's all about how good we can become, and not trying to hoard our own success. That i why I love Alex.

That was the most frank conversation about youtube content creation regardless of the actual topic of ramen. Much appreciated as I've followed you both for quite some time. I love alex.. hes such a great teacher and wise person.. he never thinks he knows it all and is willing to seek teachers to do certain foods. I love how he screws up.. because hes human.. but he also explains his thought and ration on doing it and by doing it he figured out its wrong. Its a story.. there is a start, journey, and an end. There is a book called how to fail forward. Awesome content by you too.

ramen is awesome and the great thing is, there are so many variations. In Tokyo alone there's over 6K ramen shops. Alex series on ramen is awesome. I'm a ramen nut, but even for non ramen nut loves the series. I stopped watching foodnetwork about the same time I turned off cable and cut the chord. For me, it's 1000% the journey!

Hey guys! So happy to see the studio up and running! Fantastic job on everything, it looks beautiful and functional. One critique of this video I hope you might take moving forward is I felt like this interview/cooking format seemed a bit awkward. It's so hard to ask/answer questions AND focus on the food and cooking process. I think having these two things happening simultaneously diluted the content a bit. I found myself distracted, worrying about keeping the onions moving etc. and not paying attention to the very well stated answers by Alex. I'd be interested in seeing the show broken up into two sections: perhaps first the dish and cooking techniques etc., and then an interview section (maybe on the couch lol). This, to me, would be more effective. I love PHC, thanks so much for all your content!!

I've never sat and watched a video that is slow, conversational, back and forth, or anything like this. I usually can't bring myself to watch that kind of content for long, but this I can't quit watching.

This is some very very good content. I'm subbed to both of you, but this format was something new from both of you. And after watching you basically "in character" in yours and Alex's videos, it is so interesting to see you just cook together and talk about youtube and cooking. You did a very good job as an interviewer, and Alex is so verbal and imaginative. Great stuff. I would love to also see youtubers from other niches come cook with you and THEY lead the cooking, while you lead the talk. It's great.

I feel like I have to give some perspective to youtuber's : I'm a huge youtube content consumer. When I decide to stick to a channel, it's rarely about the way the content is build, it's about how it's built. This "how" is directly connected to the creator's personality. For me, it is exactly like : "I really enjoyed what you showed me of you, take me by my hand and keep showing me what you are". What ever shift in a youtube channel, as long as I can see the personality of the creator, I'm fine with whatever I'm watching (if the subject is interesting for me, of course). That's why I love when creators show me their humor, their failures, their successes, their perspectives on the subjects that matters for THEM. That makes them like me. That create common ground. For me if I want to be friend with somebody, it always a good start to a durable relationship ^^. I know this is different since there is no real contact, but still, it's a kind of relationship I guess. One thing that can make me hesitate to watch a video is generally the length of it (1 hour is often too much for me) or the subject I might not be interested in at the moment. Well this is only a feeling, I know there are a lot to take into account when you create content on the internet. But hang in there guys, please know that your work is highly appreciated ;-)
