I totally agree with you. Fried rice was originally intended as an easy meal made with leftover rice and any leftovers you have in the fridge plus some veggies for crunchiness and freshness. Just because you know basic Chemistry doesn't mean that everything applies to everything. Also, you're not too far off about how potatoes (and other starchy vegetables like corn) are low in glutamic acid, but they both *still* add to it and aren't the main source of it in the fried rice (it's the peas, which have around twice as much as potatoes by weight).

9:00 It's actually a very common dish in France xD During the week-end, if you're too lazy to cook you just buy roasted chiken and eat it cold with mayonnaise, some crisps and a salad on the side xD During summer we do that a lot!

Funnily enough, coke in rice isnt too far fetched. In Ecuador we have Arroz Con Cola or Camaron con Cola which is literally just rice or shrimp cooked in coca cola instead of water. It gives a different textures overall and leaves a crunchy bottom on the rice. Ita amazing

As a French-born asian-cooking-raised person, I can confirm every fake Chinese place here uses peas in egg fried rice And it's a tragedy But Alex' rice looks incredible

yeah every time i've ever had egg fried rice from a chinese restaurant, it always came with peas. which sucks because i like egg fried rice but hate peas

my friend's family owns a chinese restaurant back in Brazil. According to him the food kinda adopts an aspect of the local cousine, so it becomes more approachable . In his case the dished were made to have more sauce, since the local regional cousine is known for stews and such. So it is rather common for restaurants to adopt some of the local ingredients and styles.

I have to admit, among all the egg fried rice I had seen so far, including Uncle Roger's, I think Alex came up as the WINNER. His egg fried rice looks yummy. Makes me want to try it. P/s: Soy sauce contain MSG lar... Also, the rotisserie chicken already contain tonnes of umami flavour. MSG gonna overkill it. Jamie, please learn from Alex the real technique to egg fried rice. Haiyahhh....
