I'd love to see a video explaining your grocery store runs and how you decide what to buy and how much to buy. What sort of pantry staples do you keep? What sort of veggies and proteins do you keep on hand? What are some good ways to substitute ingredients based on what's available in the store? I tend to find that unless I have a specific recipe I'm shopping for its hard to go shopping, so it'd be great to see your thought process for shopping days.

hey, I relate a lot to the last sentence, so lemme try to say what was helpful for me. I think when I begun cooking it was a lot of going to shop for the ingredients of a specific recipe and it's kinda stressful (the checking the list all the time, not finding something and figuring out what to replace, taking a long time, etc). But the main thing imo is that, after you find a couple of combinations that you like you're comfortable w/ then and then just can buy whatever. I feel like nowadays getting the vegs+meat I use a lot is a no brainer, I don't even think when going to the market. Then I usually get whatever meat is on sale or whatever veg I see that don't use much and just put it in whatever meal to see how it goes. They say this a couple of times in the video and I 100% agree: the technique is what matters. The whole worrying about exact ingredients and exact measurements and whatnot goes away eventually.

I love the use of thinly sliced brussels sprouts as abase for salads. I am not a big salad eater because I don't really care for lettuce, so when I do make a salad Brussels sprouts are generally my base green. All of these recipes look delicious and easy to make!

I think Josh was way better suited for teaching the really amateur stuff. I still credit one of his videos specifically as what really set me on the path to cooking for myself when I knew nothing at all. Now that I somewhat know what I'm doing and have a decent base to work from this channel is great for improving, but he's the one who convinced me to get that far. Maybe it's just because he always seemed so baked that he made it look impossible to screw up ...

@@sadezem991 months late but just in the service of anyone else passing by- this channel was originally run by Mike but also his brother Josh. "Brothers Green Eat", iirc? Got viral a few times with videos like recreating Wendy's menu at home etc. Eventually they decided to separate the channel, IIRC Josh wanted to do other stuff than cooking videos, this channel got rebranded as Pro Home Cooks, and it's been Mike's show since. If you go back a few years in the catalogue you should be able to both find the video where Mike explains this and probably even the old videos from before the rebrand.

I love salads. So much so that I have a "chunky" salad everyday for lunch. Like Ethan, I will take every raw vegetable in my fridge or garden and toss it in. I always add chick peas and beets. If I don't have those I will add cannelloni beans or whatever is in my cupboard. And if I'm not feeling lazy I will make chicken or steak to add a little protein. The Brussels sprout version is a great idea. And I'm always looking for alternate salad dressings or versions of a salad. I love my fresh, crunchy greens. 💚💚💚

This was great guys. And while steamed broccoli is fine, my life has been changed ever since I started rough-chopping broccoli, tossing it in garlic and oil, then roasting it in the oven until it's just crispy. Roasting changed vegetables forever for me - effing amazing.

Been making that sausage pasta at least once a week for probably 6 months now. Truly is the best quick meal I know of, and it's fairly cheap. I do it in a skillet and use a handful of frozen broccoli florets that I steam on the side and throw in a couple of chicken bouillon cubes while boiling the pasta

Mike, something I've learnt from my Italian hubby, is to carve out some of the bun shell, especially the top half. to improve the ratio between bun and filling, for burgers and panini etc. Looks awesome! thanks Ethan for the technique tips

This totally helped me tonight! I had leftover salsa especial-the kind that's not on the menu at your fav Mexican restaurant-and a red bell pepper. So I didn't need to make the salsa, but broiled the red bell w mozz, sautéed it, and then added some leftover fish I had in the fridge. Doused it with the especial (which featured avocado, jalapeño and roasted poblano) and my dull leftover meal was like a brand new meal I had slaved over! In 10 minutes! Thanks!

For the first recipe it’s much easier to just get a separate pot and boil the water and pasta while you’re making the sausage and spinach, Then skip the pasta in, and then add any starchy pasta water that you need to bring it up to the sauce consistency that you like.

Great episode. I've made Ethan's brussel salad many times, it is fantastic. I also make a 30 minute version of the pasta dish (from a Chef John recipe) that cooks the pasta slower like risotto using no-sodium chicken stock (plenty of salt in the sausage, and easy to add more); it's a great dish. But as much as i love Broccoli Rabe, try it some time with turnip greens. Insanely good. Also, I've never wanted a turkey burger... until now.

Two of my favorite KZbin cooks in the same video! Also, I love my Misen carbon steel pans! You REALLY need to get a thin, metal spatula to use with them though. Those plastic spatulas are terrible! I use the metal spatula to scrape the pan clean. A plastic spatula can’t scrape as close to the metal, and plastic spatulas will actually melt when used at those 400+ degree temperatures that carbon steel is so good at handling.

I would suggest roasting veggies. Many people are turned off by the "raw" flavor or texture, so a simple roasting of the veggies softens them and intensifies their flavors. You can roast any veggies. Tomatoes, peppers, onions, sweet potatoes, broccoli, brussels sprouts. The key is to make sure the pieces are all roughly similar in size, use just a small drizzle of olive oil, sprinkle with salt and into a hot oven (400-425) and just check on them after 10-15 minutes or so, and then every 4 or 5 minutes until they have a bit of color on them.

You don’t need to eat ridiculous amounts of veggies to loose weight….many veggies are high in sugar and starch and they won’t help weight loss. It’s more about what you don’t eat. So focus on the protein first, then the natural fats (butter, lard, tallow, avocado and olive oil) and then green veggies only if you feel you need something (broccoli, spinach, Brussels sprouts-sautéed with cream, garlic and bacon, green beans, cabbage (“Crack Slaw”), cauliflower are all you need. Avoid peppers, tomatoes, sweet peppers, onions, corn, peas, carrots.

@@sophiegoarin2903 unfortunately, if you are overweight, you are insulin resistant, and so should avoid all grains, starchy and sweet veggies and fruits. Doesn’t matter about the season, it matters about reducing your body’s need for insulin. Healthy weight people have more wiggle room, though many people are insulin resistant before they become very overweight. Steak doesn’t increase your insulin, so it’s a great option to eat-just avoid the potatoes and bread.

I have to say, as a pro home cook, that this pan SUCKS and the onion failure was magically gone from the video. He obviously tried those recipes on a nonstick pan and then had to cook on the sponsored one and insisted on not oiling it. If you want to make something with no oil, non stick is the way to go no way around it.

Non stick pans are terrible for your health. Are you aware that a huge chunk of human population on Earth have little particles of those non stick coating in our blood by now? Even if it's fairly recently invented? Go watch the Dark Waters (2019) movie to get more into it. You'll find out about the story behind this. It's much better for the health of you and your family to drop shitty non stick pans and go for steel ones. Even if you fail from time to time before you learn how to use them and have them develop the non stick layers. Even if it sticks occasionally, you can always deglass it with some brandy and use it to make a delicious sauce.

This burger is pretty amazing. I used venison so I added some egg, milk, bread crumbs and spices to the meat. Simple technique, loved the onion method. The sauce definitely topped it off. Used less mustard and added BBQ sauce to fit our taste and we scrapped the bowl clean! Will definitely make this again! Even with 2 toddlers lunch was on in less than 20 min.

Made the poblano cheese tacos and they were so amazing. That’s salsa is dangerously too good. We made it with Mexican rice and loved stuffing the rice mixture in the taco for a bit more bulk. Well done!!!

I utilised the taco sauce shown in the video today. I added some garlic to it too and it took it to a whole new level! 🤤 I made some guac to go with it and fried some halloum cheese in taco seasoning. Thanks for the idea! I'd never roasted veggies in the oven before so I'm glad I learned a new skill

I love the salt on the power salad technique. I did something similar to shaved fennel using lemon juice and peel before tossing in to a hefty winter salad. I am the one in the family always tasked to bring the salad. Usually wing it but I never would remake a salad I didn't love. So thanks. Looks so Yum 😍
