Hello there this is my first post !!! I have been following for a while a do almost all the meals you say....OMG did i just love these pancakes !!! I made them for dinner last night and substituted the egg with flaxseed as Luis Quintana said and when i finished cooking i put oil in the pan and crunched some pecans on the pan and browned these pecans Wow !!! The power punch with the flax seed, the oats the peanut butter, banana, the yummy taste of cinnamon. I added stevia instead of maple sugar and what a meal we were so full that we didn't even need dessert with the sweetness of the banana and the fullness of the pecans and oats what a treat !!! These pancakes are fantastic! I just make a triple batch for prep meals. I pit them in the freezer. Then take out for to have for lunch at with Greek yogurt & blueberries. The peanut butter is so good in this recipe.

Good idea... I've been taking my oats and protein separate, but this is a good way of combining both. I took the liberty of adding some natural dates to the mix instead of a sweetener and also added a handful of nuts to give it a bit more body. Thanks for posting. I tried this recipe with some modifications and I LOVED IT !!! I have been using 2 whole eggs instead of the 4 egg whites. I have also added about quarter cup of milk. I did not put banana nor any sugar syrup to control the calories but I have added 3 dates instead with little honey on the top of the pancake as a natural ingredient.

I make banana waffles that are similar to this and my favorite mix in is shredded zucchini. I'm not a huge zucchini fan, but I've found that shredding it with a cheese grater somehow makes it taste good in almost anything! I try to have some veggies with every meal, and now I have no excuse even when I'm eating pancakes.

Great recipe! The only ingredient I would swap out to make it even healthier would be to eliminate the egg whites and use flaxseed or chia seed mock "egg". (1 tsp flax seed or chia seed to 2-3 TBLS water) Can't wait to make this!

Ok so it's 318 cals and worth every single one! BTW I forgot to mention that I'm not a banana fan. I only put about 1/3 of a med banana. But it does have that roasted flavor and texture. Think bananas foster. Delish!

My recipe is similar, I just like everything blended. Sweet potato instead of banana, Spanish style cottage cheese (requeson which makes them all so fluffy) vanilla and a pinch of salt. No honey cause I pour it on top when ready to eat.

Instead of peanut butter you might as well use whole eggs since you basically substitute the nuts fat for yolk fat. If you are simply looking for the peanut butter flavor you can easily find the powder, like PB2, with reduced fats.

They are super hearty so they are great for the freezer! Just make sure to get all the air out of the bag or container and have them wrapped as tight as you can.

How do you store these and reheat if you are meal prepping? Looks amazing by the way:)

I store them in the fridge in an airtight container and then heat in the microwave for 45 seconds-1 minute (this will vary for each microwave). If you don't use the microwave you can also reheat in a 350 oven until warm (will take more like 8-10 minutes that way). Enjoy!!

Could you sub an almond flour or coconut flour? Doing a Whole30 can't do oats and I want to modify this... I can't use sweetener either, but the banana would do that.

I bet coconut flour would work but you would have to play with the measurements... start with 2 tablespoons and then add in as needed. Remember, coconut flour thickens as it absorbs, so give it a few seconds before deciding if its enough. And as for the sweetener, you wont even miss it but if you do, you can try a few drops of stevia (is that whole30 friendly?). Either way, enjoy it!!

This made a great pre-work breakfast, it carried me to lunch. I used 2 whole eggs and kept the syrup for the topping. Next time I'll add almond milk to thin it out, I don't think the 2 eggs I used equaled 1/2 cup of liquid. Or maybe I went overboard on the peanut butter :-)
