Is there a way to edit the auto discovery settings once it has been created?

You can edit the device templates you create with a text editor tool (like Notepad ++) on your Core Server in C:\Program Files (x86)\PRTG Network Monitor\devicetemplates. More info is here - kb.paessler.com/en/topic/5833-how-to-edit-device-templates-that-i-create
