When you oversize an air conditioner, the supply Air temperature never gets below the desired dew point or the sensible heat ratio line that it needs to in order to maintain conditions properly.

I have a 3-bedroom, 2200sq/ft house, and the 2.5-ton R22 central air unit circa 1997 died. A totally new R-454B install was going to be around $8K. Instead, I bought two 8000 BTU window units and two 5000 BTU units for two of the used bedrooms for around $850. With the minor inconvenience of blocking four windows (two of which were next to useless as in a view anyway), I am perfectly happy at around 11% the cost of a new central air unit.

Variable speed units should have programmable settings for target and min/max leaving air temperature or maybe refrigerant evaporation temperature/pressure.
