எங்க தஞ்சை பகுதியில் குறிப்பிட்ட சில சமூகத்தில் மட்டுமே காய்கள், சின்ன வெங்காயம் சேர்த்து அடை செய்வார்கள். அதே போல எதாவது ஒரு காய் மட்டுமே ஒரு நேரத்தில் உதாரணம் சுரைக்காய் சேர்ப்பது வழக்கம். பால் பிஞ்சு என்ற பக்குவத்தில் மஞ்சள் பூசணி நறுக்கி சேர்ப்பது பிரபலம். இன்னும் முருங்கைக்கீரை சேர்த்தும் செய்வார்கள்.

Thanks for bringing the recipes from all over Tamil Nadu. For Madras people they woukd not be used to Kadapa or This Thanjavur Adai. I normally make a simple multi grain dosa,mixing Rice,dhals in equal quantities and grinding them.Then make dosa. This Thanjavur dosa has வாழைப்பூ which is difficult to get in US or UK. May be there people can use raddish or courgette or carrot. Please bring such wonderful Tamil dishes.

ஒரிஜினல் தஞ்சாவூர் ஒரப்படையில், துவரம் பருப்பும், பச்சைஅரிசியும் மட்டும்தான் இருக்கும். சைவப் பிள்ளைமார் வீடுகளில் சோம்பு கூட போட மாட்டார்கள், பட்டை மிளகாய் தான் போடுவோம், சின்ன வெங்காயம் தான் அதிகமாக கலக்கும் பூண்டு சிறு பற்களாக வெட்டி, சைடிஸ் ஆக பிடித்த வெல்லமும், மிகவும் உரைப்பாக இருப்பதால் வெண்ணையும், இருக்கும். எழுவது வருடங்களுக்கு முன்பு பிள்ளைமார் வீட்டில் சுரக்காய் சமைக்க மாட்டார்கள். பிற்காலத்தில் சுரைக்காய் சேர்த்தால் சுரைக்காய் உரப்படை, என்றும், மரவள்ளிக்கிழங்கு சேர்த்தால் மரவள்ளி உரைப்படை என்றும் புழக்கத்தில் வந்தது. உருண்டை குழம்பு, உரப்படைக்கு தஞ்சையில் துவரம் பருப்பு மட்டும்தான் சேர்ப்பார்கள், அந்த சுவைக்கும் மனத்திற்கும் ஈடு மற்றவை கலந்தால் வராது. நான் இன்று வரை அவ்வழியில் தான் செய்து கொண்டு வருகிறேன் தற்பொழுது பெருஞ்சீரகம் இஞ்சிசேர்க்கிறோம். சேர்க்கிறோம்
