This video is about how I prepare the rub, season the pork roast, cook it and pressure can it. Recipe below.
If you wanted a smoke flavor you could add a few drops of bottled liquid smoke.
A half pint jar of pulled pork will make 3 good size sandwiches or 2 whopper size sandwiches.
If you are canning in half pints, as I am, I suggest you take a look at my video on: Pressure Canner - How Much Water (OAG 2015) AT: • PRESSURE CANNER - HOW ...
RECIPE FOR THE RUB:
2 Tbsp salt
2 Tbsp sugar
2 Tbsp brown sugar
2 Tbsp ground cumin
2 Tbsp chili powder
1 Tbsp black pepper (more if you like)
1/2 tsp ground cayenne pepper (more if you like it hot)
1/4 cup paprika
Mix it all together and cover the roast with all of it.

Just bought some sirloin pork roast. Think I should have cooked it longer--maybe. Don't think I'll purchase that particular cut again--lol. Anyway, thanks for some tremendous tips on doing this a better way than what I did. Should have checked you first but just dove in and did it...had other plates spinning at the time. Love how you marinated in the rub, foil and bags. Very neat and handy way to get so much flavor in. Good idea on the half pint jars also. Jesus bless.

For making Pulled or chopped pork, as a sandwich or on a plate, I think Boston Butt Roasts are the best. True, it isn't inexpensive, but it is good.

Going to have to try this. I have pork in the freezer. I now make my own barbecue sauce. Got the recipe from Noreen from her channel " Noreen's Kitchen". Really easy to make without the high fructose corn syrup that's in the commercial sauce. Good video. Thanks for the info. Vida

Hi Vida, you are right on getting away from the high fructose corn syrup (HFCS). HFCS destroys one's brain. I also make my own BBQ sauce, but happen to have that bottle of sauce left over from a luncheon we attended. Thanks for commenting!

Thanks, OAG. We'll be giving this a try. This will make for some easy, quick meals this winter. I'm not a fan of vinegary BBQ sauces and we've tried a variety of brands. We keep coming back to Sweet Baby Ray. Second choice would be KC Masterpiece. Thanks. Karl

I like to coat the pork in yellow mustard before I add the rub. I'm in the process of teaching myself to smoke stuff, it's my second summer doing it. Eastern Carolina-style is my ultimate goal, I'm crazy about that vinegar sauce. Once we move I'll try canning it- my canning pot is HUGE and we only have an electric range right now and I just don't think it gets hot enough for my giant canner.

I have not tried smoking meat. I have smoked fish before. Yes, I like the Carolina style sauce, they call it a "finishing sauce". Where are you moving to? OAG

love your vids. I made pulled pork once similar to this but it was a pork loin roast. 😣 it was terrible! dry, pasty ..awful. dumped 11 jars. I'm assuming it was because of the cut. was yours overcooked?

No, mine wasn't over cooked. It was nice and tender. If you use pork loin roast, it doesn't have as much fat in the meat and it can become dry and not much flavor. The best roast to use is a Boston butt. Pork fat is good for you and for your brain. OAG

Hi Bob, No, no water added to the crock pot. The liquid that you see is what cooked out of the pork. You could also use a leaner cut of pork if you wanted to get away from some of the fat.

Will these keep for 3-4 years and do you need to add something for acidity for storing ?

That looks great. Is the 1/2 pint enough for 2 sandwiches? I like a little bar-b-que sauce, some dill pickle slices, and a couple of jalapeno pepper slices. Yummy!

Hi Teresa, I thought that the half pint was very generous for 2 sandwiches. I believe you could make 3 good sandwiches. And yes, the other things are also good. I like a layer of cole slaw on my pork sandwich. And some what is called "finishing sauce".

Thank you so much for this video. I'm just getting ready to can some smoked pork for the first time. 😊 I hope canned pork tastes good. But I thought meat at 1000 ft or lower was canned at 15 pounds of pressure. I'll have to check my book again.

1000 feet and below is 10psi for 75 minutes in pints and 90 minutes in quarts.

Would this rub work for a beef toast also? My husband has been diagnosed with gluten intolerance, so now likes roast that dies not cook down in gravy, like i used to do with canned cream of mushroom soup and onion soupmix.. i have a hard time now getting enough flavor into a "plain" roast that can stand on it's own without gravy. Do you have a rub recipe for beef roast?

I will make this with my Mom's potato salad recipe which is awesome, and her baked beans. It will compliment your bbq pulled pork. I will also add a few drops of Wright's liquid smoke since I love smoked foods but can't do real wood or charcoal BBQ anymore. Many thanks for posting it, I loved watching your instructional video! Having the BBQ pork in a jar, as I do, makes it easy to add some other fixings and in no time you have a good tasting meal on the table. A few drops of smoke is a nice addition. I did subscribe but I am not seeing a bell shaped icon anywhere.

Hi Lori and thanks for subscribing. The "bell" shape Icon should be just to the right side of the "Subscribe" button, close to where it shows my total number of subscribers (11,541). What clicking on the bell shape icon supposed to do for you, is it notifies you when I upload a video. But I am not sure if it works on all devises such as smart phones or iPads. OAG
