I prefer the snake method. With 5 layers of charcoal and a stick in the center, I can get about 6 hours of a very solid 300F. My wife does not like pulled pork, but I did a beef pot roast. Using this method, it came out like a brisket. 5 1/2 hours. I have been meaning to do pork, but I have to plan out all the meat before starting.

Sometimes when I’m doing low and slow, I put a tumbleweed or wax cube directly into the charcoal and it lights a small area. I then close down my vents and it seems to do well that way too!

I do sometimes. I don’t think it makes a huge difference in the end but still worth doing if you have time. Especially on longer cooks!

Confused and smoking tomorrow. 6 years ago your How To Set Up A Charcoal Grill For Smoking video talked about using briquettes but you used lump charcoal, and the older video said 225-250 and you shot for closer to 300. You also just piled some lump charcoal in the grill instead of using a chimney. I've got lump and Kingsford but I'm a total noob at my grill, which way should I go?

I mostly use lump charcoal but briquettes are easier to control temp with especially for folks new to charcoal. Your best outcome will be when you use lower temps around 225-250. You can cook higher as I did in this video but I was shooting for a shorter cook time that day. Though you’ll come out with a better finished product when you take your time! Hope this helps!

5 hours cooking sounds about right. I also like the lump charcoal and hickory wood. I use alot of it to tell you the truth.

Thanks! I’ve got an old 504 I’m fixing up. My dad used old international loadstar trucks for his small logging company when I was growing up. He loved them because they were simple to work on and there used to be plenty of them around. May pick one up someday!
