INGREDIENTS -
140g pumpkin puree
520g heavy cream
1 tsp vanilla extract
1 tsp orange zest
7 egg yolks
1 cinnamon stick or 1 tsp powder
100 grams sugar
Method -
1.Mix heavy cream ,cinnamon and zest in pot . Heat on stove then let cool for 25mins
2.Mix egg yolks ,sugar and puree together with a spatula not whisk.A whisk will incorporate too much air.
3.Add cooled cream mixture to purree mix and place in ramekins. Place in pan with water bath and put in oven at 250° preheated over for 1 hr. Check oven in 30 mins. Some oven tend to work different in temperature.
4.Check with tooth mix until it cooked properly then store in fridge for next day to brulee with sugar on top then serve and enjoy.
