I know cocktail community finds using pumpkin as gimmicky, but you went with some awesome variations of the classic and they sound amazing! I tried adding pumpkin to a honey-ginger syrup for a Halloween version of the Penicillin and it tasted amazing.

If you can get fresh pumpkins (the smaller ones, but not the super tiny ones, something in the 20cm range), cut the top off one, put it on a baking sheet and bake it whole until soft, then scoop some out. It doesn't actually matter if it's ground smooth in this application because you're basically infusing it into the syrup and then straining it back out, but you want it to be cooked so flavors are released.

Also I forgot to say it, scoop out the fibrous part in the middle with the seeds in it before you bake it. If you roast those seeds they're delicious eating.

Lovely video, but adding a little bit of vodka to the syrup doesn't really change the shelf life, thats a myth. An ounce of 80 proof vodka in the 12oz of the syrup would only result in an abv of slightly above 2,5%, which is way too little to prevent any mold. Even using two ounces of 80 proof vodka would only result to 5% abv. That's still way too little to change the shelf life and any more than that would really change the taste. The best option for increasing the shelf life of syrups is using a 2:1 syrup, those should last months, even outside the fridge

I definitely DON’T recommend trying to use a coffee filter to strain that syrup lol just tried it and kept either busting it open or just having to give up a lot of syrup to avoid busting. Definitely invest in a nut milk bag if your gonna make things like this. Also pay attention and don’t add three times more pumpkin then described 😅😅😅

Misen is probably the furthest from what I would consider a professional, or even good, chef's knife. Shun, Wustoff, and even Lamson are far better and not that much more depending on what your are looking for.
