In 2015 we quit our lives in the city to buy bare land in the country and build a timber frame home from scratch with our bare hands, debt-free, with no prior experience. You should be using food grade buckets for any food prep. That Home Depot bucket is certainly Not food grade!

Great video. It reminds me of more than 60 years ago when as a boy I tried to make Ginger Beer. I ended up destroying my mums pantry when some of the bottles exploded. Again a fantastic video.

Hope it goes ok with the buckets that held random things in them. Those usually aren't food grade plastic and if things have scraped the side wall then bacteria can lodge itself in those scraps and produce off flavours. A successful brew is usually 70% cleaning and sanitizing.

It's a hydrometer . . . also pectic enzyme or pectolase is used do destroy the pectin from the fruit in the must. Pectin is responsible for some of the off/higher, unwanted, esters that are produced in the fermentation product, and so is best used at the must stage, rather than after the fermentation process has begun. It becomes more of an issue of course if one was to distil the resulting wine; due to it's higher concentration per unit volume. it being among the stuff that you would need to discard if distilling. In wine it's just a bit headachey, but still a poison.

Aaand, you can make fruit leathers, where you make a mush (mash up apples and cinnamon, for example) and they results keep for years. Literally.

Make sure to get away from the Home Depot bucket as soon as possible. 1-2 ferments in and the bucket starts to degrade and you get plastic shards that stick around. It gets an odd taste too since oxygen can permeate (or at least that’s the reason I found online) Those brews are going to be beautiful though!!!

Please use a food grade bucket instead of the home depot one it will be safer. Baby bump is precious..

Your sp. gr. is way off. You have to condition the liquid to the temperature it says on the hydrometer before putting it in the cylinder. If not it doesn't give you an accurate reading. Your liquid for sure was too hot. It's normally 77f, 68f, or 60f. Some of them come with a chart to correct your reading based on what temp your liquid is at and then you calculate it. Either way, you are way off since I didn't see you take a temperature reading either. It was probably still 90 or 100f when you read it this time, in the future it will be room temp which I would guess will be pretty cold in your garage so the 2 readings will really be far off from each other. Basically it was a waste of time.

Glad you guys are back! hope you had a wonderful holiday. I brew mead myself and I love it. Melomels were typically made to hide the off taste of a bad mead ferment. I use Mangrove Jack's mead yeast and it produces a superior product. Brewing at the lowest temperature allowed by the yeast seems to get the best results. I use a Bliechman fermenter for the primary and a glass carboy for the secondary. I have mini fridges that hold five gallon carboys and can keep the temperature within two degrees of perfect. Three weeks on primary, two months on secondary and at least six months in the bottle before drinking. Oh and grog is rum and water.

I have no idea what the difference is between a food grade bucket and a plastic Home Depot bucket but putting warm food in a non food grade bucket may be a terrible thing to do. It could release toxic chemicals into your food. I would hate to see you guys, baby or anyone else getting sick from it. Love watching you guys. Congratulations on your baby to be!!!! :)

Graduated cylinder for testing specific gravity using your hydrometer. We bottled 600 bottles of red and white wine each year. Great for parties or just visiting the neighbors.

Put the honey tub in warm-to-hot water and leave it. It will get runny then you can pour it out easier. You can also do this with pretty much any home brew can kit.

If you purchase sodium metabisulfite in bulk (in powder form usually 1 or 2 pound jars) it's *way* more economical than Camden tablets which are basically the same thing. You can purchase or order it from the same supplier where you bought your other equipment. Use 1 teaspoon per quart of water for sterilization and slightly less than that for sterilizing your must. Wait 8-12 hours for the must to completely sterilize and degas. Use the sterilization time to build up a yeast starter rather than dumping the yeast directly into your must. By using a starter rather than dry yeast your must will have a head start on primary fermentation and will be less likely to spoil on you. I typically used 1 qt. of yeast starter per 7-10 gallons of must. P.S. The device used to measure the specific gravity of your must is called a 'hygrometer'.

Welcome back, I love making mead, my favorite is Methylagin. I use 12 pounds of honey 6 gallons of water cinnamon sticks, vanilla bean and orange zest, slowly heat one gallon of water and all of the ingredients. Then add all of the regular chemicals Per the instructions and the packages per volume. Enjoy Jim

A tip to getting the honey out easier, as well as stirring. Heat the honey up by putting it in the container it came in in a boiling pot of water as to keep the two liquid seperate at all time. Then pour it into your carboy/fermentor container. You can then stir it a lot easier. I have about 10 gallons i have fermented(or attempted) since. Currently have a gallon wild fermented mead going right now.

Regarding your comment of saving mead for years, that depends a lot on how you bottle it. Specifically, intrusion of oxygen through the cap/lid/cork. Beer bottle caps have a life of 1-2 years before spoilage risks increase a lot. Corks last longer. Enjoy your booze!

I brewed mead in buckets the first couple years. I still use plastic for my primary just Big Mouth bubbler now with glass for my secondary ferment after racking. Looks like a good start to a rewarding hobby!

I've been making mead for over 20 years and love it! Since you guys like ginger, you should add some ginger to your mead! Mead is not grog! Grog is generally watered down run or at least traditionally. I have that little cookbook with all the wines, corgels, and meads, good book but a bit over complicated. I use champagne yeast packets to my mix.

You could ask for trades in bottles when you give away your bottled gifts. Being kind of nature oriented, most of your friends will not be tossing the bottles out the bottles you have given them.

Mead is cool stuff. Honey tip: put the gallon jar of honey into a hot water bath for an hour or so before using it. Makes it very liquidty and much easier to use.
