Ingredients: (for 8 buns)
Dough:
cooked purple sweet potato 150g
water 100g
all-purpose flour 250g
Autolyse for one hour,then add
fresh yease 10g (or dry yeast 3g)
water 20g
salt 2g
Filling:
cooked purple sweet potato 300g
water 20g
sesame seeds as decoration
Preheat the oven to 170C/340F
Bake at 150C/300F for 25 minutes, cover with alu foil after five minutes
