PURPLE SWEET POTATO RECIPE I sweet potato fries I gluten free vegan | plant based | hello green
These purple sweet potato fries are oven baked, vegan and gluten free. This recipe is very healthy since we are baking rather than frying the sweet potatoes. A perfect snack for your favorite TV program or a great side dish to your favorite meal. Serve it with delicious and refreshing parsley sauce that is packed with flavor, compliments the sweetness of the purple potatoes and ideal dip for the crispy fries. Ingredients:
4 Purple Sweet Potatoes
1 Tbsp Thyme
1 Tbsp Salt
½ Tbsp Black Pepper
4 Tbsp Avocado Oil
For the sauce:
¼ Bunch Parsley
1 Garlic Clove
1 Lemon
3 Tbsp Extra Virgin Olive Oil
2 Tbsp Cashews (Optional)
Method:
Wash the purple sweet potatoes thoroughly (no need to peel them, most fiber is in the skin), dry them and cut them into french fries size. The smaller the fries the crispier they’ll turn. Add the fries to a large bowl and season with avocado oil, thyme, salt and black pepper (Hymalayan pink salt works the best). Mix the seasoning with the fries well and place the fires on a baking pan (you need two baking pans for this recipe). Spread the fries over the baking pans by leaving lots of space between the fries so they become crispy while baking. If too close the fries will turn soft so make sure to space them out. Preheat the oven to 400 F and bake the fries for 30 minutes. If you like super crispy fries you can turn them over after 20 minutes of baking and bake for another 10 minutes but the fries are crispy enough even if you don’t turn them over. Total bake time is 30 minutes.
To prepare the sauce, roughly chop the parsley and the garlic, add them to a blender and add the olive oil and freshly squeezed lemon juice. For a ticker sauce you can add some cashews but this is optional. Cashews will make the sauce creamier and will add that earthy flavor that also compliments the purple sweet potato fries. Blend all of the ingredients until the sauce reaches smooth consistency and enjoy it as a wonderful dip for the fries.
